The remote Hebridean isle of Islay has an almost otherworldly quality about it. For centuries, this eerily beautiful and beguiling postage stamp of Scotland produced whiskies that elevated some of the world’s most well-known blended malts. In recent years, however, Islay has stepped out from the shadows and become one of the most lauded single malt regions in the world – a position cemented this month when a cask of Ardbeg sold for a record-breaking £16 million.   So just how did this small whisky-producing region become the most collectable name in the world?  Adam Hannett started working as Head Distiller at Bruichladdich, on the southwestern tip of the island, in 2006. He says the difference between Islay, and Islay whisky, then and now is “pretty transformative”. When he joined Bruichladdich, the Victorian distillery was six years into what would become one of the greatest distillery revivals the whisky industry has ever seen.   “Inside the distillery gates, we were at the beginning of our journey,” the Head Distiller tells me. This journey included distilling an organic spirit, running barley experiments and bringing barley-growing back to Islay. The latter, Hannett says, has “changed the landscape of the island completely”. He adds: “Gordon, our Assistant Distillery Manager, talks about how we’ve turned fields golden, which sounds a bit cheesy, but it’s true.”  Journey due east and you’ll find Bowmore – Islay’s oldest and one of its most coveted single malt producers located in the island’s capital. David Turner, who was born and raised on the island, has worked at the distillery for 30 years – for the past 10 as Distillery Manager.   “Thirty years ago we were producing a lot of our spirit for bulk, for blending purposes, and we had a few thousand tourists a year,” he tells me. “We probably had one full-time visitor centre manager and a couple of seasonal tour guides that would come on for the summer.  “I think we’ve now got nine full-time staff in our visitor centre who do tours all year round and we’ve moved away from bulk blended whisky to just being a single malt specialist now.”  During Turner’s career at Bowmore, the distillery has transformed from a lesser-known producer to one of the most collectable names in Scotch whisky. Black Bowmore, Turner says, “put us on the map for being collectable”.  “When we took these samples out the casks, the whisky colour was black,” he says, “the quality was phenomenal.”  This discovery was made in the 1990s, around the same time as the wider whisky world started to take notice of Islay after whisky writer Michael Jackson shone a spotlight on the island’s quality in his pivotal work, Complete Guide to Single Malt Scotch.   As a region, Islay has faced hardship and several distilleries have been temporary or permanent casualties. Port Ellen, one of Scotland’s so-called “Holy Trinity” of lost distilleries, is arguably the most well-known victim, closing its doors after the downturn in 1983. Ardbeg was also shuttered in 1991 and was saved by the grace of God (Glenmorangie) in 1997. Today, the region is booming and the number of producers has reached a healthy nine. This number will increase when Port Ellen is resurrected by owners Diageo imminently – an announcement met with unfettered excitement last year. These closures and shifting paradigms have created a thrilling market for collectors, as whisky enthusiasts search for bottlings from bygone eras. The 1950s through to 1970s is of keen interest as whisky was being produced on a much smaller scale via traditional methods.  Traditionally, Islay was associated with peated whisky. For a time, distillers like Laphroaig, Lagavulin and Ardbeg competed against one another to see who could produce the biggest peat bombs on the market, which divided opinion. Bruichladdich blew all the others out the water when it released Octomore 6.3 in 2015, which registered 258 phenol parts per million (the scale used to determine the peat levels of whisky). For context, prior to that release, the highest peat levels were circa 167 PPM, also from Bruichladdich.   “I think there’s a hugely diverse range of flavour in the whiskies being produced across Islay at the moment,” Bruichladdich’s Hannett tells me. “It makes defining an ‘Islay’ whisky quite challenging as there’s so much variety from one distillery to the next.   “The general public almost expects a heavy smoke, almost medicinal flavour from an Islay whisky but even within our heavily peated Port Charlotte range, we have quite a soft, heathery, barbecue smoke.”    “Islay is famous for its peated whiskies but Bowmore is not all about peated,” Turner adds. “Bowmore sits in the middle of Islay. The north of Islay is very, very lightly peated. The south is very heavily peated. We’re in between the north and the south in peating levels. We see ourselves, and call ourselves, mid-peated, or a perfectly balanced Islay whisky.”  The people of Islay – Ileachs to give them their proper name – are integral to the whisky industry on the Hebridean island. Many of the Master Distillers and Blenders are locals and the vast majority of the production team hails from the island with an average population of 3,000 people. One of the most famous Ileachs is Jim McEwan who started his career at Bowmore, where he later worked as Distillery Manager before he left to lead Bruichladdich’s resurrection in 2000. McEwan came out of retirement to spearhead independent bottler Hunter Laing & Co’s new £12 million Islay distillery, Ardnahoe, saying it was an offer he could not refuse and beyond his wildest dreams.    The distillery, located on a four-acre plot on Islay’s northern coast, between Caol Ila and Bunnahabhain, overlooking the Isle of Jura, became the ninth working distillery on the island when it opened in 2019. McEwan designed the pot stills, mash tun and mucked in with every aspect of production to create a new-make whisky that he says is everything he looks for from a classic Islay: fruit, flower, sweet notes from the mash tun, baked cereal notes, smoky flavour from the peat, and bracken, heather and wild plants from the bog land. McEwan says the spirit he’s produced at Ardnahoe is as good as anything he’s tasted in 56 years.    Islay is at an interesting point in its history. New distilleries are opening, lost names are coming back to life, and many of the old guard are reaching retirement and are being replaced by younger distilling talent. There, arguably, has never been a more interesting time in its whisky-producing history.    Hannett, who is on the younger side, says: “I’m excited to see how distilleries can continue to adapt to support the local community. We’ve got a special thing here, with a booming industry and nine working distilleries.”  Turner picks up the point: “It’s good to see the old distilleries are still thriving. The new ones have got a good future as well but they’ve got a good number of years before they get a good standard core range." He adds: “A good Islay whisky I would say is between 12, 15 to 18 years. So they’ve got a good few years to get to that, never mind becoming collectable.”  Turner has quietly been amassing a collection of his own since the early 1990s. “I was in since the very beginning,” he says. “I was lucky to be in at the right time and I’ve got a big collection. It’s not just quantity or some of the new releases. It’s old and rare and quality I’ve based mine on.”  Initially, Turner collected Bowmore and slowly started adding other Islay and Scotch limited releases to his collection. As interest in whisky grew, the Distillery Manager rejigged his collection to focus on Islay malts – at one point exclusively Bowmore, Laphroaig and Lagavulin. After a period of selling certain bottlings to buy other, more expensive ones, Turner now has an exclusively Bowmore collection. He doesn’t elaborate on this but he does add: “Aye, it’s got smaller but it’s got more quality and rarity attached to it.” One suspects it is quite something to behold.  As for his distillery, Turner says Bowmore has got “good quality stuff maturing” and “some good aged stocks”. “We were family-owned up until 1994 and the family and the directors at the time had good insight. They kept good aged stocks, so we’ve got good 30s, 40s, 50s – 51, 52-year-old whisky – maturing. The name Andrew Rankin might not mean much to the average whisky drinker. But mention him to the whisky world – the one that exists behind the public glare, and is largely reliant on lasting relationships and mutual respect – and there’ll be little doubt who you’re referring to.   Throughout his career, Rankin has worked for two of the biggest names in the industry: Chivas Brothers and Morrison Bowmore. When we speak, on an overcast Monday in early November, he tells me it’s 47 years to the day that he joined the ranks as a trainee blender at Chivas.  It’s hard to imagine a wet-behind-the-ears Rankin embarking on his “old-fashioned proper blending training”. He remembers those days fondly, tasting hundreds of different distillates – including malts and grains from Scotland and the US – from the vast library, and getting stuck in with every aspect of the production process from distillation to the vatting and cask dumping. It wasn’t long before the young Rankin found his passion: casks.   “There was a lot of not-very-good wood filled in the industry way back in the 1970s and ’80s,” he tells me. “Even in those early days, I pushed to get some better quality wood in the system.”   Rankin learned from the old guard at Chivas who’d spent their life in the industry. In the early 1990s, he moved to Morrison Bowmore in a General Manager role, concentrating on blending, inventory management and, most importantly, cask trading. He spent 22 “lovely years” at the company until his position became untenable when Suntory (“in their infinite wisdom”, Rankin says wryly) decided to buy Morrison Bowmore’s owners Beam in 2014.   Rankin says the whole dynamic changed overnight and the decision to move global management of all spirits – including whisky – under American management in Chicago was the final straw for him, Chief Executive Mike Keiller and Finance Director Douglas Crawford, who all walked that same year. Rankin says he “doesn’t want to get into it all” but does say part of his motivation to leave was the fact he didn’t want to work for an American-managed company that late in his career – having already experienced a similar takeover with Chivas and Seagram many years earlier.   Rankin is a loquacious Scotsman. When you land on the right subject, he can talk endlessly with such knowledge and humour that it’s easy to lose track of time. In fact, when a small team from FINE+RARE visited his new distillery project, Ardross, in August, we did just that. One thing he doesn’t talk about, without great coaxing, is his immense success. This includes but is in no way limited to his work on Bowmore Black, the Trilogy releases, and the 50-year-old. He is a humble man, and has quite intentionally stepped back from the limelight, while some of his counterparts have been drawn to it.   Since setting up his own company in 2014, Rankin has not stopped working. Undoubtedly his biggest project has been Ardross, a new distillery in the Scottish Highlands. Rankin was given the mandate (and a healthy budget of £30m) to find a home for the new distillery by Ardross Single Cask Society founder Barth Brosseau. He found the dilapidated 50-acre site, which was formerly a farm, with its own seven-acre loch and moved heaven and earth to turn it into the stunning distillery we see today.   Rankin says the project has, and continues to be, “much much bigger” than he originally anticipated, and what started out as a little tree constantly grows branches all over the place. But, he says, it has been his biggest achievement to date.   The latest unwieldy branch is a second, small-batch distillery that is being built on the Ardross site, destined to become the Creative Suite – exclusively for Single Cask Society Members’ use. Once completed, it will be capable of producing 250 casks a year of almost any style of whisky that a Society Member could desire. When it is up and running, likely by the end of next year, Society members will be able to call Rankin or visit him at the distillery to discuss their requirements. He will advise them on certain elements and Sandy Jamieson – Ardross’s Distillery Manager with near-50 years’ experience, and hands-down one of the most hospitable people you will meet – will get involved in the “nittier grittier side of the distillation”.  “Society members have the flexibility of different malt styles, of different grain stills, of different blend styles, and the multi-cask options that we’ll have available,” Rankin says. “But always without getting to the gimmicky stage,” he adds gravely.   This is a word that comes up a lot in our conversations – “gimmicky”. Rankin is, by his own admission, a traditionalist and has baulked at the changes in the whisky industry over the past 47 years.    “In my mind, a gimmicky type thing that lets you say we were the first in the world to do x only lasts a day and then it’s old news,” he says. “So everything we do falls within traditional methods – but pushing the boundaries a wee bit in terms of the styles of whisky.”  After spending a number of hours with Rankin, you can tell he’s not the type to mince his words – his standards are exacting, and he’s been around the block enough times to know when he’s being sold a pony. For these reasons, and many more, he’s unafraid to tell Brosseau – who he on occasion butts heads with – and Society members what he thinks.      It’s this straight-talking, mixed with an unwavering sense of tradition, that has stood him in such good stead throughout his career. Relationships formed over the past four decades have been vital to getting Ardross off the ground and saved his bacon – and the whisky producers he’s worked for – countless times.   “I always made it my policy to not sit on the end of the phone negotiating prices or volumes never having met the person that’s at the other end,” he tells me. “I’ve made it a policy that we’d go and visit all the major suppliers. We’d have dinner with them. We’d get to know them.”  When Rankin first started visiting Kentucky – a place he has a real fondness for and has undoubtedly influenced elements of the Ardross build – the state was just coming back from a real depression. He got to know a lot of people in the cooperages and distilleries, and many of these relationships last to this day. You sense it is this longevity and being around throughout hardship that has fortified these ties. The same is likely true of Japan. Enviably, Rankin has a relationship with one of the oldest independent cooperages in Japan, from whom he sources a steady amount of the mystical Mizunara cask – something many producers would give their right arm for. As quite a coup, Ardross filled some of its first runs of new-make spirit into Mizunara in 2020.   Rankin is too humble to go into detail but he does say these relationships have proven useful over the years. “If barley is in short supply, which it was not that many years ago,” he says, “because of our relationship, we would always get priority. If casks were in short supply, we’d always get the priority.”   Sadly, this way of working is something Rankin sees diminishing in most industries. “Everything is done via Zoom and telephone and internet now,” he bemoans. “Having listened to some of COP26, the environmentalists will say that’s a good thing, you’re not using air travel, but there has got to be a balance.”  Another change Rankin “isn’t keen on” is “the quest to get something different all the time”. “All the limited releases,” he says downcast. “The best limited release now is the standard edition because [producers] push everything else and don’t push the standard edition,” he only half jokes.  “Make no mistake, Barth and I have had a lot of serious heated discussions on various things like all the different wines and tequila [finishes]. It’s not traditional,” he says impassioned. “Why would we want to put a perfectly good product into a cask that’s had tequila maturing for six months?”   He pauses for what seems like an eternity, and I’m unsure if he wants an answer, before he, mercifully, continues: “I ask the question and I’ll get the response that it’s what the modern market wants. To which I respond: ‘says who?’”  Throughout his career, Rankin says he’s always stuck to the more traditional casks, like Sherry and Port. But he’s quick to say that the market is a minefield, and you need to proceed with caution as producers are often offloading casks for a reason.   “Even Port is one that would be low down of my list of things to use,” he says. “Because historically, Port producers don’t generate a lot of casks. They only generate them when they are clearing a warehouse out. The casks will be sold to people in the whisky industry when there is absolutely no maturation left in them at all, so you’re achieving nothing by finishing in those types of casks.”   Rankin says the only chance you have of producing a decent whisky, or at the very least not ruining the good one you’ve got, is to deal with certain individuals who will give you a cask that’s not spent.   He tells me some horror stories from the Glasgow facility where he warehouses and oversees cask operations. “We see some of the casks come in, and we’ve gotta send it back. They’ll say the Sherry casks are new. They’re not. They are probably the oldest casks that have been lying in that bodega. I have to say to the client, ‘Trust me, you’ll lose half your whisky because it’s not good wood, it’s very porous-looking, the smell inside them is slightly sour and you can’t get rid of that. But, it’s your gamble’.” Unsurprisingly, they heed his advice and make another call pretty sharpish.   He adds: “You’ve just got to know what you’re looking for and be careful. Because you can ruin a perfectly good whisky.”   It’s rare to meet somebody with such candour in or out of the whisky industry. Hand on heart, I can’t think of a person I’d rather entrust to guide me when deciding what to do with my whisky.   Learn more about Ardross or read more Editorial

If you journey to the northernmost prefecture of Japan you will find Hokkaidō. Venture deeper into the Japanese island’s stunning national parks and forests and you’ll find its native quercus crispula – the mystical mizunara. Measuring up to 30 metres in height, with long, curved branches and broad leaves, the Japanese oak tree is undeniably majestic. In recent years, this humble tree, favoured by luxury furniture makers, has become an incredibly highly sought-after commodity in the whisky world for the slightly unusual characteristics of sandalwood, coconut and incense it imparts. It is so desirable, in fact, that a single barrel can easily cost 10 times the amount you’d pay for a standard Sherry cask. If you can get your hands on one at all, that is. Mizunara hasn’t always been as desirable as it is today. In fact, track back 10 to 15 years and very few people had heard of it, let alone deigned to put their beautifully crafted whisky in it. Its popularity neatly coincides with the sudden rise of Japanese whisky and Suntory’s decision to release a whisky that had been aged, albeit fleetingly, in this Japanese oak. What many didn’t realise at the time, and arguably still don’t to this day, is how problematic the mystical mizunara is to cooper, source and use as a maturation vessel. It takes approximately 200 years before a mizunara tree reaches the desired diameter for a cask (70-80cm). It doesn’t grow in a straight line, which makes creating staves a bit of a logistical headache for coopers. It has an extremely high moisture content (mizunara literally translates as water oak), and contains more knots than other woods, which is an issue when trying to make a cask watertight. It is also porous and prone to leakage. It's fair to say that it’s not a natural choice, and historically it wasn’t used in this way. Japanese distillers traditionally used European or American oak to mature their whisky because they were heavily influenced by Scotch traditions. But a shortage of casks during and after World War II forced them to look closer to home, to their native oak tree. Fast forward to today and the number of mizunara-finished whiskies is at an all-time high. As a consequence, mizunara barrels have only become more difficult (and expensive) to source. Andrew Rankin has worked in the whisky industry for 47 years – what he doesn’t know about casks isn’t worth knowing and his connections are enviable. None more so than his relationship with one of the oldest independent cooperages in Japan, from whom he sources a steady supply of mizunara for his new Scottish Highlands distillery Ardross. He describes the Japanese oak as a “fairly recent phenomenon” that was kickstarted by Suntory – a company he knows exceptionally well from his 20-plus years at Morrison Bowmore – where they filled an “absolutely tiny percentage” of Yamazaki into mizunara a decade ago. In the years that have followed, Rankin has been watching the mizunara market closely and is sceptical as to whether there is enough supply to meet demand. “It took me years to persuade Suntory to give us some mizunara casks,” he says. “At that time, I think it was 2010, we got three used mizunara casks and we got three new mizunara casks – and that was it. And it was a one-off. We weren’t getting a regular supply of it.” Even with his connections, Rankin says he doesn’t get a committed volume of mizunara each year because it is dependent on the level of deforestation and the quality of the wood. “We were due to get 20 [barrels] in at the beginning of this year,” he says, “but we still haven’t got them because of selection problems with the wood and shipping problems.” He’s hopeful they’ll arrive before the year is out, but there’s no guarantee. From the people I have spoken to, this lengthy wait is par for the course. East Asia Whisky Company’s Christian Leusder says it takes “approximately three years before you receive a good-quality mizunara barrel”. When you’ve parted with a staggering £8,000 per cask – five times the cost of a standard European or American oak barrel – it can be galling when other producers punt for a mediocre cask, which is only partly made from mizunara or is made from multiple trees, and sell their whisky for a similar price. These, arguably, poorer imitations can be with the buyer within a month or two because they take far less time to cooper and ship. Leusder believes the “massive” difference in cask pricing and considerable delay is worth it to produce something that isn’t just “bandwagon [and] off-the-rack”. Another bone of contention regarding mizunara is the length of time the whisky has spent in barrel, and whether the cask is fully or only partly made from the Japanese oak. Suntory UK Brand Ambassador James Bowker says the Japanese whisky behemoth is “lucky” to have a “relatively consistent, quality supply chain” that has been established over many years. These relationships enable them to fully age whiskies in single casks rather than cask transferring or finishing. “You’ll see this practice across our portfolio where we use mizunara,” he says. “It gives a more rounded, complex, tertiary profile rather than a simple hit of the primary cask notes.” However, Bowker is quick to acknowledge this expensive process which requires a “significant” time investment is not always possible – financially or otherwise – for some producers. Rankin says he really doesn’t know where all these producers are sourcing mizunara casks from because they are, naturally, far more scarce today than they were a decade ago. He is also sceptical about how long some of these whiskies have spent in mizunara and believes it takes at least five years to get any influence from the wood. “At the moment, you could put your whisky in a mizunara cask, roll it about on the floor, and say it is mizunara-cask-finished,” the Master Blender says. “And you probably know, and I probably know, that it is going on.” The people who don’t know, Rankin says, are the end consumers because producers are not currently required to be transparent about this on the label. East Asia Whisky Company’s Leusder picks up the point. “If you look at what Chivas Regal are doing, they are producing a lot of mizunara single malt whiskies which are just finishes and they don’t actually have an age statement so you don’t know how long they’ve been in there,” he says. “And I personally can’t really taste the mizunara out of it.” He continues: “Finishes can be gimmicky. They can go wrong. And they do not always yield the best product.” This is one of the reasons East Asia Whisky Company dips their toe in the mizunara pool but has no intention of fully submerging its feet. Its current Macallan mizunara series stops after the third release. A mizunara-finished Springbank and Bowmore release will follow, and then Leusder says the team might try and get their hands on a younger vintage and decide to age it in mizunara until the 40-to 50-year mark, when it will no longer be a finish. Dr Bill Lumsden, the genius behind Glenmorangie and Ardbeg for the past 26 years, has pioneered experimentation on every aspect of whisky production. It is telling that he has never released a product with mizunara oak in it. He says it is the taste profile, rather than sourcing and porosity, that puts him off the Japanese oak. “If I was to take Glenmorangie new-make spirit – and I’m neither confirming nor denying that I have done this – and mature it in a new heavily-toasted mizunara oak cask for 12 years, at the end of the day, I would have something that would probably taste a little bit bizarre,” he says. Lumsden says he always recalls doing a tasting in conjunction with The Glenlivet Master Distiller Alan Winchester and Suntory Chief Blender Shinji Fukuyo in London when Fukuyo presented a fully mizunara-matured whisky. Lumsden struggles to remember if it was Yamazaki but remembers the taste profile with crystal-clear clarity. He describes it in just two words: “bewilderingly strange”. Coming from a man who invented the Russian-oak matured Ardbeg Kelpie, which he says has elements of “the smell of burning rubber when a car has screeched away”, this is quite the review. Casting an eye to the future, there is little doubt producers will continue to release mizunara-finished whiskies – certainly in the short to mid term. Leusder says he thinks it will always be popular simply because it’s so rare, but predicts there will be a larger and widening gap between high and low quality. “There will be less and less of the high and more and more of the low,” he says, “and the market will be more and more confused as to which is which.” When pushed, Suntory’s Bowker says he absolutely thinks the trend will continue and other categories will start using mizunara. But, he adds with trepidation, that he hopes producers will “respect this special wood and ensure that consumers get to experience it at its best rather than being tempted by more affordable shortcuts as you so often see in this industry”. For the time being, at least, it seems like the mystical mizunara is going to continue to enchant producers and drinkers alike. And, unless things drastically change, the onus will be on the whisky drinker to watch out for the sorcery and find the magical liquid that undoubtedly exists. The spirits market is booming. In October 2019, a bottle of 1926 Macallan FINE+RARE 60-Year Old became the most expensive bottle (of either wine or spirits) ever sold at auction in the world, going for £1.5 million – £300,000 more than the same whisky had sold for a year before.  That record may not have been broken yet, but it’s likely only a matter of time. There was a 33.37% increase in the volume of single malt Scotch whisky sold at auction in 2019, with 143,895 bottles sold, worth close to £58 million – a 41.54% increase on 2018. Over the last 10 years, rare whisky has outperformed every other alternative luxury asset, with 353% growth to 2020 Q2. “The rare whisky market has performed phenomenally well over the last decade, outperforming many other categories. We’ve seen growing demand in premium whisky from clients globally,” says Craig Norton, our Managing Director for the UK and Ireland. In five years, we’ve seen the number of spirits buyers rise by 601%, with spirits sales in the same timeframe growing by 698%.  It’s an exciting time for whisky, with a growing international audience as Scotch whisky exports rise (105% in the last 10 years), especially in developing markets like China (up 323% in 10 years). There are also an increasing number of younger consumers diving into the category nose-first; Sotheby’s first online spirits auction last year saw 42% of buyers aged under 40.  The market has so far been dominated by a handful of the biggest names in single malt Scotch, with The Macallan representing an astonishing 40% of the market by value; however
Japanese whisky isn’t far behind. A bottle of 55-year-old Yamazaki sold for HK$6.2 million (US$795,000) in August last year, setting a new record for the category.  The now-closed Karuizawa has become a cult name among collectors, and had something of a halo effect, as our Head of Spirits David Walters said, “Japanese whisky is still going crazy. We sold the Karuizawa Pearl Geisha 37 Year Old (56.9%) pre-release for £12,500 in bond; just a year later it was going for £24,800. The most expensive single bottle of whisky we’ve sold was a Yamazaki 50-year-old (2011 release), for £170,000.” The last two to three years has, however, seen a shift, with a new focus and interest on not buying just bottles but whole barrels or casks. “The ability to personalise or customise single cask bottling has proven extremely appealing to clients,” Norton says, “However, it’s not simple. Barriers can be a lack of understanding of value, the process of maturation or
reselling, or gaining access to the market.”  “The challenge can be guaranteeing provenance,” explains Walters. “Our preference is always to work directly with the distillery.” The IWSR estimates the value of the Scotch whisky cask market at $40 million – and forecasts a trend for cask sales in other categories, such as Bourbon, rum and other US whiskey. While occasionally we see more mature casks (such as a mature Macallan Sherry butt we sold last year, for £600,000), it is more common to see casks as futures, much like en primeur.  Given the long-term timeframe for producing fine whisky, with the first product often not released for five or 10 years, cask sales have fast become a way for the rising number of new distilleries to build revenue in their early years. It is rare for casks to be sold after the first year of production, however, making them a once-in-a-lifetime opportunity to get in on a new distillery – one that may just be the next big thing. It’s this excitement, Walters says, that should attract buyers who are also in it for the journey. Naturally, “founders’ casks” – as they are known – are finite in supply, adding to their appeal for collectors. The spirits market remains dominated by single malt Scotch – with Brora, Karuizawa, Dalmore, Bowmore and Springbank amongst the most collected names – but consumers are branching out. “We’re beginning to see collectors diversify their portfolios,” says Walters, “discovering premium and collectable rums.” He highlights the popularity of Caroni – a Trinidad distillery, no longer in production, that has parallels with Karuizawa – and Hampden, in particular. Fortunately, Covid seems to be having little impact on sales. Even in the last year, the
market has seen 12% growth; as Knight Frank reports, “Anecdotally, drinkable investment classes have always down well in a downturn, perhaps as their owners have looked to drown their sorrows.” In fact, IWSR data shows that “between 2008 and 2012, global prestige-plus
spirits (generally $100+) grew 82% in volume, and almost 230% in value, [reinforcing]

There are myriad fascinating twists and turns in Scotch whisky’s long and storied past. From dizzying boom times to disastrous downturns, the distilling landscape – and the major players within it – has been redrawn countless times. 
There's one era, however, that is legendary – whisky's "golden age". Between the 1950s and '80s, some of the industry's most nuanced single malts were crafted. These are now widely regarded as the greatest ever released, which is reflected in the eyewatering secondary market prices – should they ever appear on the auction block. 
These perfectly imperfect, characterful and wonderfully unique liquids, produced at distilleries that no longer exist, or exist in a very different way today, will never be bottled again – making them real unicorns for whisky collectors. 
To understand what makes them so special, it is important to first appreciate just how little liquid exists from this time. The single malt whisky market was unfathomably small before and during this period and entirely dwarfed by blends. A mere fraction of a distiller’s finest liquid would be bottled as a single malt. These minuscule quantities were also made via practices that are now lost in the annals of history, making them more desirable for collectors. 
For context, Scotch whisky was largely made as it always had been until the 1950s, drawing on traditional methods that had been passed down for centuries. Distillers would use their sight, smell and taste to determine when a liquid was ready to cask, and later, bottle. Whisky-making took mastery and patience – something producers could ill afford when demands on the industry intensified and there was a concerted push to produce more for less during the 1970s. While many producers made these changes around the same time, they didn’t all happen at once, creating a wonderfully varied time capsule of whiskies. 
The 1960s – when some of these great bottlings were produced – was sandwiched in between two vastly different decades. Production in the ‘50s was steady but small. By the 1970s, however, distillers – both large and small – were forced to increase their output by almost double, and names that had fallen silent were reawakened once more as global demand for Scotch whisky grew. 
Sadly, by the mid-1970s, the tide started to turn. The bountiful supply of whisky was not met by demand, resulting in a devastating whisky loch in the 1980s and some of the most difficult years the Scotch whisky industry has ever endured. Swathes of distilleries were forced to close, including the now-legendary Port Ellen and Brora – both of which shut their doors in 1983. This depression continued well into the 1990s with a further 20 casualties (of these, only three ever reopened), before the pendulum finally swung back in the early 2000s when the seemingly unquenchable thirst for single malt whiskies, that is still in full force today, began. 
From the 1950s onwards, holders of the increasingly frayed purse strings sought to reduce inefficiencies in the traditional, labour-intensive practice of whisky-making – which defined the golden age. With the introduction of modern, more mechanised, safer processes, it was a new dawn for Scotch whisky.  During this period in history, every single stage of whisky production was “streamlined”. The money men closed floor maltings, introduced distillers’ yeast, reduced fermentation times, installed semi-lauter tuns, made the switch to indirect-fired stills, replaced worm tubs with shell-and-tube condensers, and introduced ex-Bourbon barrels. By the end of the 1970s, you could almost count on one hand the number of distillers who retained traditional methods. 
It’s important to remember that tweaking one of these processes can alter the entire flavour profile of a whisky – just ask Glenfarclas who reverted back to direct-firing their stills after their new-make spirit lost its characteristically heavy and oily profile during their ill-fated flirtation with steam in 1981. And yet, in many instances, producers permanently changed many of these processes. Traditional practices and know-how that varied slightly at every distillery began to be outsourced as they turned to professional maltsters and installed modern, industrial-scale equipment that increased efficiencies and consistency but in some cases compromised the craft and character of the final spirit profile. 
“Every distillery has its own story and evolution of style,” whisky authority Serge Valentin explains, “their own ups and its downs.” 
Valentin was ahead of his time when he started collecting single malt Scotch, almost exclusively from Old Clynelish and Brora. He couldn’t possibly have predicted what his passion project of buying as many different bottlings as he could “simply because they were [his] favourites”  would become. 
Both Clynelish and Brora – as it would be known – produced heavily peated malt during the late 1960s and early ’70s. Bottlings from this time until 1983, when Brora became a victim of the whisky loch and fell silent, have become highly collectable in recent years. Old Clynelish bottlings, (Valentin’s favourites), which are robustly distinctive with aromas of scented wax and heather, are astonishingly rare and modern collectors clamber over one another to get their hands on these golden-age gems for many times the price Valentin would have paid. 
Stephen Rankin has been fortunate to sample whiskies from one of the most remarkable single malt libraries in the world at Gordon & MacPhail. His team is able to pull out liquids from what he calls “pre-evolutions within distilleries” thanks to his family’s foresight to buy barrels from cash-strapped producers who were selling their stocks for survival. The Elgin-based independent bottler had the luxury and fortitude to bide their time and store casks that would otherwise have been bottled young or blended. He has a particular affection for single malts from what was Milton Distillery, known since 1951 as Strathisla, which he describes as a “great example of a whisky that has the flavours of this past era.” 
Independent bottlers like Gordon & MacPhail played a vital role in bringing many of these now-legendary whiskies into the world. One man in particular, Silvano Samaroli, was responsible for bottling single malts that are now widely regarded as some of the greatest ever released.  
Rome-based Samaroli released his first Scotch whisky series in 1968 in the form of the now-iconic, dumpy Cadenhead bottlings – making him the first independent Scotch whisky bottler outside the United Kingdom. Today, Samaroli’s Bowmore, Glen Garioch, and  Springbank releases are held in especially high regard and his  Laphroaig single malts from 1967 and 1970 are in a league of their own. 
“The late 1960s to the ’80s is definitely one of the most remarkable periods,” Samaroli’s Daniele Liberati says, “largely due to the appearance of certain expressions for the first time.”  
“We started to propose different bottlings, moving away from the classic blends and official distillery releases,” Liberati adds. These included single-cask expressions, numbered bottlings and cask-strength releases, all of which are commonplace today but were revolutionary at the time.
 
In recent years, a handful of new distillers have turned to old whisky-making practices in an attempt to recapture some of its magic. Fledgling Speyside distiller Dunphail, for instance, has faithfully – and at great cost – installed traditional floor maltings, direct-fired stills and wooden, open washbacks where fermentation times are considerably longer than the industry average, to produce a fruit-forward, oily, medium-bodied Speyside whisky. Today, however, these traditional methods are always adopted in conjunction with modern practices in order to achieve all the desirable characteristics of yore in a more efficient way.   While there is the temptation to look back on this era with a rose-tinted view, as there are undeniably some exceptional bottlings from this time, it is wrong to believe that all whisky produced in the golden age was of the same standard. Whisky-making 40 to 50 years ago was imperfect, there was very little consistency in quality and for one good cask, a distiller would likely have 10 or 20 bad ones that never saw the light of day.  It’s also important to appreciate that many of these modernisations were vital to guarantee the safety of distillery workers as several stages in production were unstable. These advancements have also resulted in unprecedented consistency. While nuance and singularity might have been sacrificed, it’s now incredibly hard to find a bad dram.   As times evolve – as they inevitably do – it’s highly unlikely whisky from Scotland’s golden age will ever not be considered precious.    Browse all Scotch whisky or read more Editorial

When people say they’ve put their blood, sweat and tears into something, more often than not, it’s a figure of speech. This is not the case for Bimber Distillery founder Dariusz Plazewski, who has put everything into the build of his dream Speyside distillery, Dunphail. The day before we speak, Plazewski was on the roof of one of his new distillery buildings, mucking in and making sure the mammoth project that was a lifetime in the making stays on track.   The Polish-born Plazewski is a third-generation distiller – or more accurately, moonshiner – who emigrated to London 20 years ago. After observing the English craft distilling boom from afar, the trained architect seized the opportunity to put his family’s legacy and knowhow to good use and set about building Bimber, a single malt whisky distillery based in West London. Bimber’s inaugural bottling, The First, sold out within three hours of release in 2019 – and demand has far outstripped supply ever since.    Fast forward three years and Plazewski is mere months away from realising his dream of producing a single malt Scotch whisky. But it hasn’t been easy.   “There are lots of challenges,” he tells me matter-of-factly. When we catch up, after two aborted attempts, the Master Distiller sounds ever-so-slightly weary – and it’s not hard to fathom why. Today, he is speaking from London, where he’s been “sorting out a few things” at Bimber. He’s boarding a flight back to Scotland in a couple of days and then he’s taking a much-needed holiday – where he confesses he will be on email constantly.   Rest is not in his nature. (Plazewski has been pinballing from one project to the next for decades. By the end of 2022, he says he will have “given up” his other business and solely focus on spirits.) Nor is adhering to the status quo.    Since founding Bimber in 2015, the Master Distiller has prided himself on being a bit of a renegade. Where others have embraced modern whisky-making practices, Plazewski has been staunchly traditional in his approach – and it has served him exceedingly well. “Whisky was always my passion and when I found out that there was a craft movement of whisky and gin distilling, I just started researching,” he tells me. “It took me a long time but I wanted to do something different. I wanted to always do something which was a bit old-fashioned.”  Plazewski’s father and grandfather before him (illegally) made wine, spirits and beer in his native Poland – Bimber translates as “moonshine” in Polish – and Plazewski was an eager protégé with a natural talent from a young age. I refrain from asking how young.   “The good thing is that I understand all the production, all the process, all the fermentation, and how to make alcohol,” he tells me. “Not only whisky but how to make any alcohol really. Sense of smell, touch, and all this just naturally comes to me.”   Plazewski says his fate was sealed the moment he travelled to Scotland and fell in love with Speyside single malts. Dunphail was always going to happen – he just didn’t know when. Starting his (legal) distilling career with Bimber was a shrewd decision. English whisky was then a relative unknown, so Plazewski used this scene as his sandbox to prove to himself and others that traditional whisky production should not be consigned to the history books.   Bimber was, and for the time being still is, a small-scale traditional whisky-making operation. Local barley is grown on a single farm in neighbouring Hampshire. It is floor-malted at Britain’s oldest maltster, Warminster Maltings, and hand-mashed. The two copper pot stills are direct-fired (with a flame, as the name suggests, rather than the more modern and efficient method of steam) and fermentation times are twice the industry average at seven days.  These practices are astoundingly rare in today’s modern whisky world. The majority of producers abandoned floor maltings (the method of malting grain by hand on large malting floors) in favour of industrial malting processes and did away with direct-firing stills (in favour of steam) decades ago, deeming them inefficient and costly. While it is possible to find distillers who adopt some of these techniques – notable examples being Laphroaig, Glenfarclas and Bowmore – it is incredibly rare to find a producer who is able or willing to apply all these labour-intensive and budget-zapping practices.   “I will never be a distiller without floor maltings,” he says physically baulking at the idea of producing whisky any other way. “Never. No. For me, it is crucial,” he adds.    With Dunphail, Plazewski is going one step further than Bimber and building his own traditional floor maltings on-site. This will put Dunphail in a highly exclusive group, and the move has received mixed responses from Plazewski’s peers.   “For me it is very important,” Plazewski says. “I know many people said, wow are you crazy because this is hard work, this is lots of involvement, why are you doing it?”  I can’t help asking him the same. To which he says: “Because nobody is doing this anymore and I want to continue this craft, I want people to see how the whisky was made before. I think it is going to be good fun and I think this is going to be a great feature for our distillery.”  In addition to floor maltings, Dunphail’s stills will also be direct-fired – Glenmorangie was the first to install steam-heated stills in 1887 and countless others followed until only a handful of direct-fired producers remained. Plazewski is the first to acknowledge the practice of heating stills in this traditional way is far less efficient and costly but for him it was non-negotiable and vital to produce the highest-quality Speyside whisky possible – fruit-forward, oily and medium-bodied. He is also in the minority sourcing Dunphail’s barley and peat locally. There are undoubtedly easier routes to produce whisky but the mere suggestion is sacrilege to Plazewski.  Steadfast on his goal, Plazewski set about finding the perfect location to produce traditional single malt Scotch whisky. After years of searching, he settled on a location in the heart of Speyside – a typically renegade move as the majority of new distilleries have been built outside this iconic region. He explains: “The location was really difficult and challenging as well to be honest.”  “I love Speyside – it’s my favourite part in Scotland. First of all, it is a great area because it has got microclimate, so it’s not too cold there and it’s not too rainy. And it’s pretty sunny.” Additionally, he says: “Speyside whiskies are my favourite.”  When asked if he feels the weight of this tradition or pressure to produce a stand-out Speyside whisky in one of the most densely populated whisky-making regions in the world, he says not.   “We are tiny. We’re not going to be competing with the big, established brands. Most of the new distilleries are not built in Speyside, they are mostly built in Fife area. And not many are really going the route we are with the floor maltings and old-fashioned techniques we are trying to apply.”  In addition to the many challenges that come with building a distillery to a blueprint that no longer exists, Plazewski has embattled with supply chain issues following Brexit, Covid and now the war in Ukraine. It’s a minor miracle – and a testament to the tenacity of Plazewski – that the Dunphail build is on schedule and production is set to begin, as planned, at the end of the year.   When asked how he feels, Plazewski pauses for a moment, takes a short intake of breath and hurriedly says: “It’s amazing. It’s hard work. I need a break. That’s why I need this holiday because it’s not only physical work, it’s the mental as well – planning everything.”  He pauses again. “It’s been a stressful and challenging time. But we are on schedule, we’ve planned this well.”  After Dunphail is up and running, and Plazewski has trained his dream team to the standard of Bimber, you wonder what’s next. You sense he won’t just stop after realising his Scottish dream, and that there will be a new North Star.    When asked, he responds to the question with a wry smile, indicating this is not the first time it has been posed to him by others, or even himself. “I would say yes, I’m done after this, but people I know and people around me are saying to me, you are never going to stop, you’re going to find something else.  “But I would say I think I’ve done my dream and when this [distillery] is going to be open, I’m thinking to really concentrate and not do anything more. I don’t think I will put too much pressure on myself and my family again.” A seed of doubt creeps in and then he says resolutely: “No, this is it, it’s going to be my dream, it’s going to be super exciting and I’m not going to go for anything else. I’m just going to enjoy the time and share the drams.” We’ll ask him again in five years’ time.   For the time being, at least, Plazewski (and the wider whisky world) is satiated with turning modern whisky-making on its head and bringing fiercely traditional practices back to one of the oldest and most prestigious whisky regions in the world.   Browse all Scotch whisky or read more Editorial

Ardross is a new Scotch whisky distillery. You’d be forgiven for rolling your eyes about now. Over the past few years there’s been a spate of new distillery openings across the bucolic Scottish landscape and each espouses to be different from the last. Many have an impressive roster of whisky talent at the stills and little expense has been spared on the distillery itself and surrounding architecture. This is something Ardross Single Cask Society founder Barthélémy Brosseau is all too aware of. “I wouldn’t want us to be completely perceived as normal,” he says. “What I mean by that is that we have a great building, great location, great people, great quality spirit but everybody is claiming more or less the same.” As the name may suggest, Barthélémy – or Barth as he introduces himself – Brosseau was born in Bordeaux and is a very atypical Scotch whisky distillery founder. “You don’t see me wearing a suit and speaking very gravely about the Scotch whisky tradition with a Scottish accent, and there is a reason behind this,” the 32-year-old adds. As he is quick to point out, with a smile that rarely leaves his face during our one-hour call, when it comes to the whisky, he takes a giant step back. “Who am I as a Frenchman to tell them how to produce Scotch whisky?” This side of the business is very much driven by distilling legend Andrew Rankin of Bowmore fame. When we speak, the Ardross team is preparing to officially launch its Single Cask Society. A website is in development with an ever-nearing launch date (the designers require a “bit of a kick”), the existing 49 members are regularly in contact with Brosseau (he has most of them on WhatsApp), and he’s not getting quite as much sleep as he might like after the birth of his second daughter. With all these plates spinning, you’d forgive him for being a little flustered. Instead, he is cool personified. He seamlessly weaves the conversation from topics including, but by no means limited to, philosophy, travel and literature (Leo Tolstoy’s War & Peace is among his favourites). It is soon apparent why Brosseau is the butterfly in the company logo. With his tendency to flit from one subject area to the next and, to take his more philosophical approach, his current emergence from a chrysalis of sorts into the Scotch whisky world. Conversely, Rankin, with his near 50-year experience, is the steadfast, knowledgeable other animal in the logo. “Don’t tell Andrew he is the tortoise,” the Frenchman says with that smile. This symbiotic relationship in many ways is an unlikely one, but it’s key to Ardross’s current and future success. “Without Andrew, we would not be where we are today,” Brosseau says. “It would be an absolute mistake for me to say that I am driving this. Andrew is driving Ardross as a distillery and it is thanks to Andrew and his connections in Jerez, in Japan, in the US that we are where we are today. “I have all these crazy ideas and he is the wise guy who has the years and the knowledge and the erudition. And that is why it is interesting – sometimes we are completely at odds. And that’s normal. And from this friction, I think, that creativity ensues.” Ardross is the Scotch whisky arm of Greenwood Spirits Ltd, which is owned by Vevil International who boast London’s The Ned and The Wolseley in their impressive portfolio. Part of their modus operandi is faithfully restoring and renovating Grade 1 and 2 listed buildings and Ardross was no different. After seeing the opportunities that lay within the Scotch whisky sector, the team quickly recognised the need to partner with an industry icon for the project to succeed. After meeting Rankin, the team gave him a mandate to find the Scotch whisky with a big vision a new home. Rankin describes finding the beautiful dilapidated farm called Ardross as serendipitous. He recalls seeing the six- to- seven acre Loch Dubh and snow-covered pine trees, and falling in love right away. The 50-acre site with 19th century farmhouse buildings has since been restored brick by brick at the cost of £30 million and a new distillery built to produce a traditional, quality single malt with a slightly sweeter profile. Although expectations were high after such an investment and the assembly of a production team with a combined experience of over 150 years, few could scarcely have imagined the quality of the spirit after one run. Rankin says it was a “Eureka moment” when they realised the new-make spirit was 95% of the way there – this process typically takes two to three months. The reason for this success right off the bat? Extremely long fermentation times of 121 hours (compared to the industry standard of 60), one of the best, if not the best, production teams in the business, and a relentless pursuit of quality, according to Brosseau. The only thing left to create the Ardross single malt they’d all envisaged was the wood and time itself. For this, Rankin drew on his industry ties and sourced the highest-quality wood from Jerez, Kentucky and Japan. Even for seasoned professionals with decades upon decades of whisky distilling experience under their belts, the chance to work at a new distillery from day one represents a career first. Despite all their achievements, of which there are many in the case of this team, to a certain extent they have been following somebody else’s blueprint and colouring within the lines. Working at a distillery like Ardross, with all its financial backing, represents an opportunity for this illustrious team to create their own blueprint in a way that only 150 or so others ever have. And Ardross, arguably more than most, has the flexibility to dictate what this framework should look like. “We have the luxury of thinking about the future almost in generational terms,” Brosseau says. “We are insulated from the vagaries of short-termism.” Brosseau says the decision was made early on to remain an independent distiller and not team up with the “big boys” for investment or distribution deals. He doesn’t rule this out in the future but says this approach has given the team an opportunity to learn and get their own scars and will make their growth and achievements that much sweeter because they have “done it all themselves from the beginning”. In addition to the distillery, Ardross also owns its own bottling line and warehouse, so they’re not dependent on others. Where other distilleries might be burdened with lofty marketing and distribution costs, and fielding shareholders’ dividends demands, Brosseau says Ardross is “resolutely adopting a different stance”, will not rush to produce a non-age-statement and is under no pressure whatsoever to bottle whisky until the team is good and ready. “For us, Scotch whisky is about time. It is about the long term,” he adds. “The idea is that when you are entering Ardross as a member, you are with us for the long-term and the value proposition unfolds over time. “If you are in a rush and you want to buy your cask and sell the next day, we are not for you. And we are completely honest about it. Go elsewhere basically.” The French charm quickly returns and he says with a smile: “I mean, you will always be welcome of course – but what I am saying is you won’t potentially be happy.” While he is tightlipped about how this value proposition might unfold, Brosseau teases it won’t be via “necessarily classical routes”. “We are not putting everything in front of you all at one time,” he explains. “The idea is to make you discover, or enter our world, almost sequentially. It’s frustrating I think for people sometimes because we live in a world where everything is available straight away – one click and you have everything you want. “And we are quite contrarian in that regard. We are not building right now to enjoy the fruits right away. The idea is to build value and the ripeness of the fruits come over time.” For this reason, and many others, Brosseau says Ardross is “very reasonably priced”.  “You have lots of people today who are selling whisky casks that they don’t really own,” he adds. The Frenchman describes the cask investment trade as a “complicated one” and is very gallant in not wanting to discuss other schemes that are slightly less above-board. Instead, he says: “We are not trying to fool anyone. We know who we are and we know what we are doing quality-wise. “We’re not pretending to be Macallan or Dalmore or whomever. We have a world-class quality team with world-class expertise, among the best in the industry.
