The Defaix family has a long history in the Chablis region, having first planted vines in 1610. Etienne-Paul Defaix was the first to start making wine in the 18th century and Daniel-Etienne is the 14th generation of his family to continue the tradition.
Daniel-Etienne Defaix crafts unique unoaked Chablis that is some of the region’s most collected. His age-worthy wines – pure expressions of Chardonnay on Kimmeridgian soils – are released only when mature.
