The Reynaud wines are the stuff of legend. Utter “Rayas” to a certain crowd and they will swoon. The singular style of this iconic Châteauneuf-du-Pape estate – pale, hauntingly aromatic, almost Burgundian in texture and incredibly long-lived – has a fervent following, a clan of Reynaud obsessives keen to seek out everything that Emmanuel Reynaud touched.  The property’s rustic charm – a far cry from the grandiose buildings of many famous estates – combined with the family’s inclination to shy away from their fame, happier quietly farming their vines, has only fanned the flames. Tucked away in the northern reaches of Châteauneuf-du-Pape, Ch. Rayas and its owners are elusive – only making them more sought-after.   There is no shortage of praise for these rare and special wines – whose appeal, given the Reynaud’s minimal-intervention approach, broaches the worlds of fine and natural wine. William Kelley is a loyalist, and is one of several to note how well the property performs in “off-vintages” – where the property’s distinctive profile shines through, above and beyond the vintage and region, revealing their “captivating perfume, sensual textures and eternal youthfulness”. Robert Parker described the 1990 Rayas as “one of the greatest young red wines I have ever tasted”. For Nicolas Grainacher (Vinous), “The substance, finesse and intensity packed into these wines make it hard not to fall in love with them.” Neal Martin (Vinous) perhaps put it most concisely: “God invented wine to drink wines like this.”    The history of the Reynaud empire  In 1880, Albert Reynaud, a notary from Avignon, lost his hearing aged just 45. No longer able to work as a lawyer, he bought an estate in Châteauneuf-du-Pape, in an area called Rayas, where he saw out his days farming vines, apricots and olives. In 1910, his son Louis Reynaud took over running the estate. Louis had studied agriculture in Angers and was particularly interested in viticulture. He uprooted trees to plant new vineyards and bottled the property’s first wine in 1920 – using the name “Rayas”, the name of the forest on their parcel of land. It was the beginning of Rayas as we know it today.  Louis famously added the wording “Premier Grand Cru” to the Rayas labels, a self-pronounced classification of the wine – and notoriously defying the appellation rules (introduced in 1936). Building the property’s reputation and sales, he started expanding the business. Between 1935 and 1938 he bought Ch. des Tours in Vacqueyras, entrusting his son Bertrand with the larger 58-hectare property northeast of Châteauneuf-du-Pape, not far from the town of Orange. Around the same time, he built a new cellar and winery at Rayas, bringing the buildings within the appellation’s boundaries. After the Second World War in 1945, Louis purchased Ch. de Fonsalette, an estate further north of Orange, in Lagarde-Paréol – and, with that, the full suite of Reynaud properties was in place.  By the time Louis passed away in 1978, the Reynaud wines were some of the Rhône’s most famous.  
After his death, his youngest son Jacques took over Rayas and Fonsalette, while Bertrand continued to run Ch. des Tours. With the shift in ownership at Rayas and Fonsalette, quality dipped a little – but soon Jacques was making wines that lived up to the Reynaud name.  The old vines at Rayas, planted on sandy soils, facing north/northeast, surrounded by pine forest, produce wines of exceptional elegance and aromatic finesse, wines with haunting perfume, pale colour and almost Pinot-like delicacy, yet phenomenal persistence and ageability.   Jacques was renowned for being eccentric. A recluse, happiest in the vines and never keen to welcome visitors, he was rumoured to, on occasion, lie in a ditch to avoid journalists or other members of the trade. His aversion to the limelight surely only added to the wines’ allure. He died rather suddenly in 1997, while shoe shopping in Courthézon. Having no children of his own, his nephew Emmanuel – Bertrand’s son, who had been running Ch. des Tours since 1989 – inherited both Rayas and Fonsalette, taking the reins across all three properties.  The transition between Jacques and Emmanuel wasn’t seamless, as Emmanuel renovated the estate and replanted parts of the site, but by the early 2000s quality was once more living up to the Reynaud name. The style has shifted between generations, and while Jacques’s wines were more structured and solid, Emmanuel favoured more sensual, perfumed expressions. Over the last two decades, little has changed across the Reynaud properties – the wines’ mythical status only confirmed with each release. The new generation – Emmanuel’s sons Louis Damien and Benoît – are now continuing the family’s legacy.    The Reynaud philosophy  The approach at Reynaud is old-school – here, tradition reigns. Modern monoculture is not the method – with various crops across the estates, and biodiversity nurtured with swathes of woodland. The vines – all bush vined, many with significant age – are farmed in exactly the way as they’ve always been, organically with minimal inputs, ploughed by horse.  The fruit is all hand-harvested, whole-bunch fermented with indigenous yeast in cement tanks. Since Emmanuel took over, parcels have all been vinified separately. Macerations are gentle, generally under two weeks with a single pump-over a day. Ageing is in large, old oak, with no new wood used anywhere across the properties – indeed the youngest demi-muid or foudre at the estate may well be 30 years in age. Sulphur additions are minimal, with only a small amount at fermentation and a final addition at bottling, with the wines bottled unfined and unfiltered. The method is simplicity at its finest, focused on expressing each site – and the results speak for themselves. The wineries are rustic farm buildings, offering only the basic requirements, with no modern technology employed – and, given the wines produced, not needed.  Grenache is the core of all the Reynaud wines – the grape that thrives in their terroir and is the magic behind Rayas. Beyond Rayas, Cinsault is used to bring elegance and suppleness, while Syrah was long avoided – used only at Ch. de Fonsalette. Louis Reynaud believed the variety belonged in the Northern Rhône, and other than the small portion that made it into the Côtes du Rhône, the rest of the Syrah was sold off in bulk under his reign (often to local restaurants, who used it in their sauces). The Côtes du Rhône Syrah cuvée only introduced under Jacques Reynaud’s tenure, at first sold to the restaurants who had seen its quality in their sauces. There is no Mourvèdre at any of the estates, as Emmanuel Reynaud believed that their soils are too dry for the grape.  The Reynaud wines and estates  The Reynaud family comprises three distinct estates – Rayas, Fonsalette and Ch. des Tours, although Fonsalette doesn’t have its own winery.   Ch. Rayas  Rayas is the original Reynaud estate, purchased in 1880, and takes its name from the climat. In the northern reaches of Châteauneuf-du-Pape lie the 12 hectares of vines, surrounded by 11 hectares of forest. Forget the region’s stereotypical galets roulés or pudding stones, known for their ability to hold heat, Rayas sits on red, iron-rich, sandy soils, over richer clay. The soils are poor and the bush vines planted at low density, with a mere 2,500 vines per hectare – yielding just 10 to 20hl/ha. Significant replanting took place in the 1980s, meaning the vines now average 40 years in age, although there are still some survivors from the 1940s.  The site’s northern exposition combines with the influence of the wooded areas, offering shade and humidity, making for an extended growing season and preserving freshness in the wines. The Reynauds are among the last to harvest, often only picking in October/November, as much as two months after their neighbours. The resulting wines, however, do not speak of intense ripeness – but are all about elegance and finesse.  While Châteauneuf permits 13 red varieties, at Rayas you’ll find only Grenache Noir, with two hectares dedicated to white grapes – Grenache Blanc and Clairette. The Grenache vineyards can be divided into three section: Le Levant, Le Coeur and Le Couchant, each taking its name from its exposure to the sun – respectively as it rises, at its peak and as it sets. Writing for The World of Fine Wine, William Kelley describes the three components of the vineyard thus: “Le Levant is the most floral and ethereal, contributing the wine’s spine; Le Coeur is the most complete, contributing Rayas’s skeleton; and Le Couchant, with its richer, more compote-like fruit tones, brings the fat.”  The fruit is all hand-picked. The Grenache is kept on its stems, the whole bunches crushed before a gentle maceration for maximum two weeks (one pumpover a day) and indigenous-yeast fermentation. The wine is pressed off and aged in old foudre for a little under two years.  The delicacy and finesse of the resulting wine is reminiscent of top Burgundy. Pale in colour, Rayas is deeply aromatic, with haunting floral notes and an ethereal, silken texture that balances the wine’s earthy, savoury intensity. Between 1,200 and 1,500 cases of the flagship Châteauneuf-du-Pape are produced each year. The wines age beautifully and Emmanuel himself recommended waiting 20-25 years before opening a bottle of Rayas to fully experience its evolution.  The white grapes are planted across three parcels in Le Levant, comprising two hectares. The Grenache Blanc was planted in the 1940s, ’50s and ’95, with the Clairette planted in 1986. Fermented in old (80 to 100 years old) foudre, purchased second-hand by Louis Reynaud (Emmanuel’s grandfather), Rayas Blanc is a 50:50 blend of Grenache Blanc and Clairette, aged in old oak for around 11 months. The wine is made in extremely limited volumes, with only 400 or so cases produced each vintage. Rich yet poised, this rare white is immensely fragrant with notes of almond and white flowers, intensely mineral and textured, and can age for at least a decade.  Pignan is sometimes considered a “second wine” at Rayas, but it in fact comes from it own, specific site on the estate, a single two-hectare block surrounded by pine trees on the northern edge of the property with less sandy soils. Also pure Grenache, made in exactly the same way at Rayas, it offers a more immediate and approachable expression of the Rayas style, yet similar perfume, purity and structure – and is still capable of extended ageing. It can, on occasion – and especially in cooler vintages, rival its older sibling, Rayas. Around 650 cases are produced each year.  The Rayas wines are all only released when entering their drinking window, with the reds often only emerging from the estate over a decade after the harvest.  Ch. de Fonsalette  The “latest” addition to the Reynaud galaxy, Ch. de Fonsalette was purchased by Louis Reynaud in 1945. The property is large, covering 120 hectares in total, but with 12 hectares of vines in amongst woodland, farmland and olive groves, north of Orange in Lagarde-Paréol. Today it sits largely within the Côtes du Rhône Villages Massif d’Uchaux appellation (established in 2005), however the wines are all labelled just as Côtes du Rhône. Further north, the microclimate is cooler than at Rayas, and stylistically the wines are more restrained than those of Ch. des Tours, for example, but not as ethereal as those of Rayas.  The soils here are very different to those at Rayas with gravel, sand and red pudding stones. The vineyards are planted to Grenache, Cinsault and Syrah for red grapes, and Grenache Blanc, Clairette and Marsanne for whites. The vines are generally old, with the oldest planted in 1929.  The philosophy in the vineyard and winery is exactly the same as at Rayas – and, as the property doesn’t have a winery of its own, the wines are even made at Rayas. The reds are whole-bunch fermented, with a maximum two-week maceration and one pump-over a day. The wines are aged in a combination of enamel-lined tanks and large, old oak, bottled around a year or so later.   There are three wines in the range at Ch. de Fonsalette. The Côtes du Rhône Rouge is a blend of 50% Grenache, 35% Cinsault and 15% Syrah, the notably high percentage of Cinsault giving the wine particular lift and aromatic finesse – a wine that whispers and draws you in. There is a second red, a Côtes du Rhône Syrah which is 100% Syrah – a structured, dark-fruited wine that offers restrained power and quiet depth. Under Louis Reynaud, this was sold off in bulk, only first bottled under Jacques Reynaud (from 1978) and sold locally, largely to restaurants, before being offered more widely under Emmanuel. The Côtes du Rhône Blanc is a blend of 80% Grenache Blanc, 10% Clairette and 10% Marsanne, producing a textural and complex white with notes of stone fruit and herbs, and a saline undertow.  La Pialade  This wine is a slight anomaly in the Reynaud line-up. Only made in certain vintages, La Pialade Côtes du Rhône is vinified and aged at Rayas, made with declassified parcels from either Rayas or Ch. de Fonsalette. The blend is typically 85% Grenache, 15% Cinsault and 5% Syrah. Produced in tiny volumes, and even rarer given it isn’t made every year, it is often described as an “everyday Rayas” – more open in style, but can match Rayas for its subtlety and delicacy, even if it does not have the same depth.  Ch. des Tours   Purchased by Louis Reynaud in the late 1930s, Ch. des Tours was Emmanuel Reynaud’s home estate – having taken over running the property from his father Bertrand in 1989. As it was entrusted to Bertrand from the beginning, and never managed by Jacques Reynaud, the estate has always stood apart from Ch. Rayas and Ch. de Fonsalette – however all three have fallen under Emmanuel since 1997. Benoît – Emmanuel’s son, who studied oenology in Switzerland – has recently taken the lead at Ch. des Tours, having worked closely alongside his father.  The property gets its name from the towers or tours that frame the château building. Located in Vacqueyras, not far from Orange and northeast of Châteauneuf, it covers 40 hectares, with grains and olives as well as grapes. As it was long run separately, the property has its own winery.  Although the Reynaud philosophy runs through all three estates, the wines at Ch. des Tours are stylistically distinctive, offering more structure, muscle and intensity versus the more subtle, high-toned, perfumed style of Rayas and Fonsalette. The winemaking is largely similar to at Rayas and Fonsalette, with fermentation is concrete and maturation in old oak. Although the red grapes are mostly whole-bunch fermented, this is the only property where small portions are destemmed. The range is more complex at Ch. des Tours with a selection of wines bottled under Ch. des Tours, some under Domaine des Tours and a rosé made under the Parisy label.  There are five wines under the Ch. des Tours label:  Vacqueyras: A blend of 80% Grenache and 20% Syrah, this is a structured and powerful wine made exclusively from the oldest vines on the estate.  Côtes du Rhône Rouge: A blend of 65% Grenache, 20% Syrah and 15% Cinsault, this is a supple, juicy red packed with fruit and spice.   Côtes du Rhône Rouge Grande Réserve: Only made in specific vintages, this is effectively the Vacqueyras declassified when there isn’t sufficient colour – made in 2002, 2014 and 2015.  Côtes du Rhône Blanc: Made in very limited volumes, this white is 100% Grenache Blanc – a floral, textural wine that is worth seeking out.  Côtes du Rhône Blanc Grande Réserve: Only made in certain vintages, this is not a declassified bottling (like its red sibling), but a special bottling of the property’s best Clairette and Grenache Blanc. The 50% Grenache Blanc, 50% Clairette wine was produced in 2003, 2014 and 2015.  The Domaine des Tours label is all sourced from Ch. des Tours however is a slightly separate project, generally offering more accessible wines, almost all labelled as IGP or Vin de Pays. There are four wines under the label:  Vin de Pays de Vaucluse Rouge: This is a deeply expressive field blend of Grenache, Counoise, Syrah, Cinsault, Merlot and a host of other varieties.  Vin de Pays de Vaucluse Merlot: This 100% Merlot comes from the richest, clay soils on the property, producing amore opulent and exuberant wine.  Vin de Pays de Vaucluse Merlot-Syrah: A blend of Merlot and Syrah, which shifts according to the vintage, is a concentrated wine that combines the generosity of Merlot with the spice of Syrah.  Vin de Pays de Vaucluse Clairette: This 100% Clairette is pure and fresh, driven by minerality.  Under its own label is Les Tours Grenache Blanc – a rich, ripe and generous 100% Grenache Blanc full of stone fruit, bottled under the Vaucluse appellation. The last wine from Ch. des Tours is the Parisy rosé, a dry, delicate Grenache/Cinsault Vin de Table designed for everyday drinking. The labels themselves don’t detail the vintage, with this information only visible on the cardboard case.  Which Reynaud wines are made where? Ch. Everything you need to know about Rayas

While the 100-point-scoring Pomerol Ch. L’Eglise-Clinet is the jewel in the Durantou crown, the family works with three other estates – Les Cruzelles, Saintayme and Montlandrie, in the Côtes de Castillon. The family bought the 28 hectares of this latter property in 2009. It perches at 86 metres’ altitude (a relatively lofty height for this part of the world), on the same limestone terrace as the heart of Saint-Emilion, which re-emerges here, next to the town of Castillon-la-Bataille. And it’s this limestone which defines the site – bringing incredible freshness to the wines it produces. The Castillon property has been totally replanted, and not just to vines, but with olives, oak trees and truffles, as well as vines, and space for beehives too. They’ve got a well and solar panels on the winery, meaning they are totally off-grid and self-sufficient – Noëmie Durantou Reilhac (who took over after her father Denis passed away) tells us how her father used to joke that if anything happened, Montlandrie is where they would go – their arc for the apocalypse. As it has been planted entirely by the Durantous, the vine spacing is very specific – 6,172 vines per hectare, a number based on the golden ratio, with vines planted 1.62 x 1m, as dreamt up by the late Denis. The vineyards are also still babies – with an average age of just 10 years, and the youngest fledgling vines planted this year, all with massal selections from Eglise-Clinet. This wild and spacious property is a total contrast to Eglise-Clinet, which has been in the Durantou family since the 18th century. Their Pomerol estate takes its name from the church that was once nearby, the cemetery of which has survived (with a new church built in the heart of the village, visible across the brow of the hill). The vineyards were leased for many years, and it was only under Denis Durantou that the family reclaimed them, in 1982. The oldest vineyard plots date back to 1905 – century-old field blends that even have a handful of Malbec vines scattered in amongst them. They have a mere 4.5 hectares, divided in parcels around the château, all on soils that are a combination of the region’s famous blue clay and ferruginous sandstone. Here in the heart of Pomerol, there’s no space for an olive grove or other crops – the tiny plots are far too precious for such folly. Tasting the wine from these two addresses in two utterly different vintages – 2013 and 2018 – shines a light on the sites, the style and the winemaking. The 2013 vintage is not fashionable among collectors – the rainy year led to immense disease pressure and made it challenging to ripen fruit. But, as Durantou Reilhac told us, what you do with the fruit you pick is much more important than the vintage itself. A cooler, off-vintage, the 2013s are rarely wines that earn high scores (or demand), yet these are the years that are most revealing, and often insider choices. By contrast, 2018 is remembered as a warm year – the first of the trilogy of excellent vintages (along with 2019 and ’20). The reality, however, was an incredibly wet start to the season, with rain throughout May and June, the weather only becoming hot and dry from mid-July – and saving the season. The resulting wines are blockbusters – bold, rich and ripe, and some that are perhaps overly so. The 2013s both showed a more herbaceous freshness, with redder fruit, slightly more austere tannins and lighter body – yet both Montlandrie and Eglise-Clinet were moreish. They are wines that I would consider the perfect “luncheon Claret”, with just a hint of savoury leather and sousbois creeping into their profile, both gasping for food. Both really benefited from additional air, relaxing their structure a little and making them more approachable. Unsurprisingly, the 2018s were different beasts. “The more I taste [the 2018 vintage], the more I love it,” Durantou Reilhac said. And with these wines, it was easy to see why. Especially for Montlandrie, whose vines were that much older by this vintage, the wine showed a vibrancy and dark perfume that Durantou Reilhac described beautifully as “baroque”. The 2018 Eglise-Clinet effortlessly stole the show at the tasting, a wine that is yet to reveal itself fully, but already offers so much. The wine is dense, compact, with an angularity to the frame around tightly packed, pure and seamless fruit, gradually revealing delicate florals. “You can feel the potential of full bloom,” Durantou Reilhac said, comparing the wine to a flower just starting to unfurl its petals.  For Durantou Reilhac, the key to producing wines like this is the harvest date. “If you look and you wait, you don’t control anything anymore,” she explains – and this was a particular danger in 2013, with some waiting too long. Ultimately, the goal is to craft wines that echo the perfect peach, plucked fresh from the tree – juicy and sweet, yet vibrant and mouth-watering – a pure expression of the very freshest fruit. To do that, they opt for gentle extraction, lower fermentation temperatures and shorter maceration times, as well as careful use of oak – with the aim “to enhance in a tactile way”, rather than add aromatics. For the 2018s, for example, one might assume they would have used a higher portion of new oak, with the concentrated fruit able to handle more – but in fact they used less. “The structure was already so powerful,” Durantou Reilhac tells us, and they didn’t want to “overbuild” the wine with more, “It would have crashed against the fruit.” New oak can help bring acidity and freshness, while one or two-year-old oak can “tire” the wine, she finds. The key, however, is to find the balance between the acidity and tannin: “A great wine makes you accept its acidity, thanks to its tannins,” she explains. It's unfair in many ways to put the much more modest Montlandrie alongside Eglise-Clinet, but the wines are so different, and Montlandrie already shows such potential – only reinforced by tasting recent vintages en primeur (with the 2022 a particular highlight of the vintage). Montlandrie offers a much more linear, direct and fresh style – much closer, unsurprisingly given its limestone, to Saint-Emilion than Pomerol. Eglise-Clinet, however, is plusher, denser, yet not at all over the top – managing to be both immensely concentrated and structured, yet elegant and contained. They are totally different sites, two totally different expressions of the Durantou style – but it’s perhaps the restraint, freshness and purity of fruit that connects the two. The thread of perfume and precision runs throughout, wines that – even in vintages as big and bold as 2018 – you simply want to drink. Think of a cocktail. Is vermouth in it? If you’re thinking of a classic cocktail, there’s every chance it is. The Martini, Negroni, Manhattan – I could go on. And on. For whatever reason, vermouth has not always received the recognition it deserves for propping up so many exquisite mixed drinks. In fact, I’d hazard that a fair amount of cocktail lovers don’t know vermouth is in their glass at all, or, if they do, their knowledge of the liquid might be a little patchy. When it comes to vermouth, there are a few things you need to know. Vermouth is an aromatised wine which hails from Torino, Italy. It is generally accepted that vermouth – as we know it, not the kind prescribed by Hippocrates in 400BC for ailments – was invented in the 16th century. In 2019, a Geographical Indication was introduced to protect the style and quality of vermouth from its birthplace, Turin. Under these regulations, vermouth must be made with at least one Italian wine, wormwood must be the predominant flavour and the wormwood used must be grown in Piedmont. The final liquid must also be between 16% and 22% alcohol in order for it to be labelled “Vermouth di Torino”. The two most common styles of vermouth are sweet and dry. The former is red in colour and as such is often called Rosso. This is the style used in your Manhattan and Negroni. Dry vermouth is white (Bianco) in colour and will be used in your classic Martini. Four classic Vermouth-based cocktails The Negroni It might be hard to believe given the Negroni’s current notoriety, but this simple serve of equal parts vermouth, Campari and gin was incredibly slow to catch on. As is often true in cocktail lore, there are a couple of people credited with its invention. The most widely accepted is a Count named Camillo Negroni who asked a bartender at Caffè Casoni in Florence to make his Americano cocktail a touch stronger. They duly obliged and switched the soda water for gin. This is believed to have taken place in 1919. A smaller camp credits a man named General Pascal Oliver Comte de Negroni with the invention of the cocktail in Senegal between 1855 and 1865. Setting aside the inventor for the moment, the Negroni, unrefutably, became de rigueur in the early 20th century – requested across Europe and favoured for its bitterness and alcoholic strength. Orson Welles was a very high-profile fan, famously quoted in 1947 for saying: “The bitters are excellent for your liver, the gin is bad for you. They balance each other.” In the years that followed, the Negroni’s popularity waned when appetites became more saccharine in nature. In the early 2000s, things shifted again as the Negroni began to appear on cocktail menus at some of the best bars in the world. It wasn’t long before the recipe featured in cocktail books and drinks sections of influential titles, such as The New York Times. Fast forward to today and the Negroni is regularly named the most popular cocktail by patrons and bartenders alike. There are countless riffs on the original recipe and an entire week is dedicated to celebrating it. How to make a Negroni 30ml sweet vermouth 30ml Campari 30ml gin Ice Slice of orange (garnish) Pour all ingredients into a glass with ice and stir well. Add garnish. The Manhattan The Manhattan has assumed many guises over the years, making its exact origin a hotly contested subject. Some believe Sir Winston Churchill’s mother was served the first Manhattan cocktail at the eponymous club in New York in the early 1880s. Others question the validity of this claim as she was likely in the UK, pregnant with the future Prime Minister, around this time. Some believe a New York bartender by the name of Black invented the recipe at the Hoffman House. The earliest known record of the Manhattan, in which this name and the recognised recipe, appear is in The Sunday Morning Herald in September 1882. Unhelpfully, some referred to a very similar recipe as a Jockey Club or Turf Club Cocktail. The classic recipe consists of Rye or Bourbon, sweet vermouth and bitters. During Prohibition, it was not uncommon for people to use a different whiskey as the base ingredient. If you substitute American whiskey for Scotch whisky, you have a Rob Roy cocktail. Strain into coupe or Martini glass and garnish. The Americano The Americano recipe was invented at Gaspare Campari's bar in Milan in the 1860s. The cocktail of equal parts Campari, vermouth and soda water, was originally named “Milano-Torino” after the principle ingredients’ home towns of Milan and Torino respectively. The simple serve was renamed in honour of its growing fanbase: American tourists. The Negroni recipe was based on the Americano and contains two of the three main ingredients – with the soda water switched for gin. While many associate James Bond with the Vesper cocktail or a Martini – shaken, not stirred – the first cocktail associated with 007 in Ian Fleming’s work was actually an Americano in Casino Royale. It is later written, in A View To Kill, “Bond always had the same thing – an Americano”. Andrew Jefford isn’t like other wine writers. Browse his Instagram account and you’ll find not a bottle in sight. Check his Twitter and you’ll find a steady, quiet stream of haiku – or, as he prefers to describe them, “short texts”. These feeds are – like Jefford –gently honest; absent of ego, flash and fanfare. His prose is poised and purposeful, each word carefully considered yet never weighed down by pointed effort. He is a rarity in the world of wine: a writer whose (main) topic happens to be wine.  “I was always a huge reader. It always meant more to me than anything else,” Jefford tells me, thinking back to his childhood. But wine was omnipresent. As the son of a priest, it was a part of family life, consumed “on high days and holidays”.   “I remember first tasting Champagne with my brother, at the age of 10 or 11,” he says. “It was the first tasting note we agreed on: it tasted like vomit. Things got better from then on, happily.” The slight, wiry wine writer smiles, seeming almost sheepish about the wines that he’s since enjoyed.  Aged 16, Jefford decided to start making wine – brewing up grape juice concentrate and whatever else he could find– to supplement supplies at Sunday lunch. The transformative effects of fermentation hooked him – but it was the concept of terroir that reeled him fully in.  He was working at a local hospital, but after his shift – armed with The Penguin Book of Wines and André Simon’s A Wine Primer – he’d venture out to browse the shelves of “French Wine Farmers”, a wine shop in Norwich. He vividly recalls taking home a bottle of Chianti and being struck by the magic of travelling through a glass. “That’s full of wine. And every drop in there came from a vine in Tuscany. I’m drinking Tuscany!” he recalls thinking.“ And I’ve still not got over that. It’s amazing.”  Wine took a back seat when he set off to study English at the University of Reading, before embarking on both a Masters and PhD. The lure of words led him into publishing – a background which, along with his academic approach, defines his writing today. He spent four years “editing mediocre copy into something readable” – but eventually had had enough, and leapt at the chance to write a book on Port.  From there, he wrote articles for Margaret Rand in Wine Magazine, then Decanter, where he’s now a Contributing Editor and his monthly column is the stuff of legend. He was, for a number of years,The Evening Standard’s drinks writer, penned features for The Financial Times and is a regular in The World of Fine Wine. He’s authored several books – including the deservedly totemic The New France. Published in 2002, it looked beyond Burgundy and Bordeaux, shining a light on the nation’s varied wine scene at a moment when it was going through a revolution. If that wasn’t enough, he’s dabbled in radio, presenting for BBC Radio Three and Four.   While wine might be his mainstay, he’s written extensively on whisky and other spirits (including his respected book on Islay, Peat Smoke and Spirit), as well as travel and perfume. But writing, rather than any particular topic, is his real trade. His editorial experience has been key: his prose is intelligent, considered and a masterclass in eloquent economy – something that he finds all too often lacking elsewhere.   Two of Jefford's most famous books: The New France (2002) and Peat Smoke and Spirit (2004) “One of the problems is that a lot of [wine writing] is online, so there aren’t space constraints,” he decries. “[Wine writing] tends to attract quite large egos. They do write three times more than they need to – because they think it’s all wonderful.” It’s perhaps the lack of ego in Jefford’s writing that sets it apart. He seems to approach any topic unbiased and open – still with the wide-eyed joy of that first bottle of Chianti. Wine remains, to him, “dead exciting”.   “It’s a great shame that fairly early on the rest of the journalistic world decided that wine was a ghetto,” Jefford laments. “It embraced wine with gusto initially – probably in the 1990s – then it all got very boring once we passed 2000 and they just asked everybody to offer recommendations and that’s it. Newspapers are no longer a great school for wine writing in the way that they once were.” It is an industry, he feels, sorely in need of imagination. “There’s such a weight of detail to communicate that people never get their head above the waves of the detail.” And that detail, the intricacies of wine – or “its enormous apparatus of geekdom” – are the challenge. He hopes that his latest book, Drinking with the Valkyries – a collection of his work from the last 15 years, “could climb out of the wine ghetto – to anybody who enjoys language, enjoys storytelling, enjoys the interrelation of place and flavour that wine can offer”.  But, by his own admission, wine is “never going to be a mass market popular subject”. While the industry was long obsessed with finding its own “Jamie Oliver” – someone to bring wine to the masses, food is an essential part of life – “whereas wine need be a part of nobody’s life”.   Wine has, undoubtedly, come a long way – “vastly democratised” – but he worries about the “top end of things”, where wine has become so exclusive as to be “almost a plutocracy”. Wine criticism, for him, is intricately linked to the category’s self-imposed segregation, with “its relentless focus on points, excellence and things being better than other things – hierarchy, rather than difference”.  He’s long been vocal about scoring, feeling like Hugh Johnson that – although they may be of practical use to consumers, who undoubtedly want them – they are “philosophically untenable” and “disempowering”.  “You’re being misled to some extent if you think the 96-point wine is always better than the 94-point wine. It’s miles more complicated than that,” says Jefford, who scores wines reluctantly.“ And very often the 89-point wine can be better than either the 96- or 94-point wine.” His advice to wine drinkers is simple: “Trust your palate.”  Despite his impressive resume and effortless intellect, Jefford’s modesty shines through in our conversation – as we dash from the dangers of climate change (“Misery throughout the Third World – but the Bordelais and Bourguignons are raking it in”) to a fascinating co-fermented 15-variety blend from a Lirac estate (Ch. de Montfaucon’s Vin de Mr le Baron). And while the 66-year-old might be softly pensive in the written – and spoken – word, there’s such energy to the man himself.  He’s invariably described as a wine thinker, a philosopher-cum-writer, as well as – of course – a poet; but it’s impossible to pigeon-hole Jefford, his ideas, or his voice.  Andrew Jefford’s book Drinking with the Valkyries, published by Académie du Vin Library, is out now.

Le Pin doesn’t really do events. I guess it doesn’t need to. This tiny 2.7-hectare property produces on average 600 cases each year and the wines are instantly snapped up on release by collectors lucky enough to be privy to the merchants’ miniscule supply.  But FINE+RARE, after much searching, collated an extraordinary collection of Le Pin bottlings (some coming from Thienpont’s own personal cellar) right back to the inaugural 1979 vintage. The tasting consisted of 12 vintages of Le Pin, as well as three vintages from L’If, Thienpont’s relatively new project in neighbouring Saint-Emilion. We also persuaded Thienpont to come to London and share Le Pin’s fascinating story from the beginning. The setting was perfect for such an intimate event. With just a handful of guests alongside Jacques Thienpont and Diana Berrouet Garcia (MD of Domaines Jacques Thienpont), the dinner took place in Claridges’ L’Epicerie restaurant. L’Epicerie, which seats just 14 guests, is set within Claridges’ hallowed kitchens. It meant the guests could watch the chefs at work and discuss with them why they paired certain dishes with certain vintages. In hindsight, it was amazing just how versatile the Le Pin wines turned out to be. The younger vintages paired beautifully with poached lobster, fois gras terrine, black truffle and artichoke. The older vintages worked just as well with beef fillet and aged cheeses. But, however well the food worked, everyone was there to taste Le Pin.  Le Pin needs little introduction. The youngest of all the Right Bank icons, it became an almost overnight success thanks to the critical acclaim of the property’s fourth vintage in 1982. Combined with its tiny production levels and an ever-expanding collectors’ market, Le Pin became the ultimate wine collectable – and the market price of this tiny estate quickly rose to stratospheric levels.   Such are its size and popularity that it is rare to taste one bottle of Le Pin, let alone 12 vintages back-to-back. I’ve been lucky enough to taste the wine en primeur over the years, so I had some idea of what to expect, but it’s only at maturity that this extraordinary wine’s vivid personality really comes to life.  The elusive address has humble beginnings. From the 1920s to the late 1970s, the land was owned by the Loubie family. During this time, the wine was made by a contract-winemaker based in Lalande de Pomerol and was sold with little fanfare.  In 1979, Jacques Thienpont jumped at the chance to purchase the property when it came up sale, privy to the extraordinary terroir of the site, located next to his uncle Gérard’s esteemed Pomerol estate Vieux Château Certan. Thienpont named his new acquisition after a single pine tree that shaded the property. Over the years, he gradually expanded the vineyard to 2.7 hectares by purchasing slivers of land from adjacent producers.   It’s hard to imagine that a wine of such prestige came from what was – in the early days – a very basic operation. The project and space were so small that there was little flexibility when it came to vinification. Everything was done by hand and malolactic fermentation took place in barrel because Thienpont had nowhere else to store the wines (although this eventually set the trend for modern winemaking). In time, the Belgian vigneron made improvements in the winery and vineyard, including replanting a significant part of the land with new Merlot clones and re-trellising the vines. Now, 40 years later, Thienpont is as hands-on as ever, insisting he is involved in every stage of winemaking.   Wine experts consider Le Pin’s key advantage to be its unique terroir and soil composition. With sandy gravel topsoil on a pocket of gravel which runs five to 10 metres deep, the vineyard has perfect drainage. As it’s south-facing, it is a warmer site and that gives the vineyard great benefits, particularly in poorer, cooler vintages. It is notably different from surrounding vineyards. The vineyard contains a high proportion of iron oxide, aka “crasse de fer”, which Jacques Thienpont attributes to the soil’s fantastic drainage and feels helps Le Pin perform well in wetter vintages.   There are a few odd Cabernet Franc vines in the vineyard at Le Pin, but the wine is 100% Merlot. A significant portion (40%) of the vineyards were replanted in the late 1970s, and replanting has continued under Thienpont’s ownership. In fine wine terms the average age of the vineyards is relatively young. The fact that Le Pin can already produce such incredible wines suggests the future looks bright for the property.  The property produces low volumes but with great consistency, with the wine always expressing a beautiful integration of tannins, wonderful depth and detail. It also ages beautifully, as this stunning line-up showcased so well. Tasting a younger vintage (2018) earlier in the day, it became apparent how versatile Le Pin is. Despite its youth, the 2018 is drinking beautifully right now. Berrouet Garcia believes it is one of Le Pin’s trump cards – it just performs so well at any time, in its youth, at full maturity and any time in between, such is its openness and versatility.  With a couple years in bottle, the 2018 really expresses a signature trait of Le Pin, a trait that through the tasting is so distinctive and emanates from almost every vintage – a trademark tannin texture and mouthfeel. The best way I can explain it is as if the tannins are totally spherical in the mouth. There are no edges, you can feel they are there by their density on the palate. They are the “dark matter” equivalent of tannin – they are there but you just can’t feel them.  Before the Le Pin vertical, guests were introduced to Jacques Thienpont’s Saint-Emilion estate, L’If. Thienpont’s first vintage from this young estate was 2010 and the wines are the perfect antithesis to Le Pin. Whereas Le Pin is voluptuous and opulent, L’If is stricter, more linear and has amazing energy. Thienpont has fallen in love with the limestone soils of Saint-Emilion. While still similar in climate to Pomerol (warm and sunny) the limestone soils in Saint-Emilion keep freshness in the wine and importantly, in winemaking terms, the pH low.  Whereas Le Pin’s opulent levels of ripeness and high pH (due to the soils) can sometimes have problems with fermentations getting stuck (so much so from 2015 onwards that Le Pin has been fermented using a special commercial yeast that avoids this problem), L’If’s limestone soils mean they can push ripeness levels and never lose freshness. Like Le Pin, tasting through the vintages of L’If there is a strong character trait across the vintages – a vibrant energy that is just so expansive on the palate. The 2015, 2013 and 2012 all express distinct vintage traits too, the 2015 the most powerful, the 2013 lighter but beautifully clean and vertical, while the 2012 is soft and juicy with lovely floral delicacy.  Le Pin’s roundness and silk-like texture is such a lovely contrast to L’If and tasting them side by side only accentuates how different in style these two wines from Jacques Thienpont are.  The vertical of Le Pin starts with two legendary vintages – the 2010 and 2009. Strangely, the 2009 throws a lot of sediment, something not found in the other wines. It is hugely concentrated and opulent. Pushing the levels of ripeness, there is a touch of VA, but it doesn’t diminish the wine at all. Despite the richness and ripeness, it is very much on the red fruit spectrum– but the 2010 was even better. It has an electricity to it that adds another level of excitement to the dense, rich fruit and smoky tones. This electric energy was also present in my wine of the night – the 2001. This wine is so elegant and refined, and is in its perfect drinking window today, the light tertiary notes complement the exquisitely pure, fresh fruit. But it’s the clenched tautness to the wine and that extra burst of energy that makes it so special and surpasses even the hugely anticipated 2000. This too has the tension, the sinewy tannins, the textbook spherical mouthfeel but the tertiary development is more advanced than the 2001.  The 2008 was also a highlight for me. It had all the classic Pomerol hallmarks, the irony-minerality and opulent fruit. It was also impressively structured while remaining heavenly soft. It was perhaps the vintage that showed off this contrast best, but it was a trait running throughout. The 2007 was lighter, earthier even with a touch of menthol and shorter on the palate but still delightful. The 2006 for me also outshone the “better” vintage of 2005. The density of the 2006 is just so impressive. If anything, the 2005 tasted the least like Le Pin. It had an almost Cabernet-esque feel, more structured, more extracted and, in that sense, felt like the odd one out in the tasting.  The 1996 was fully developed with lovely tertiary notes and dried fruit flavours. But the spherical mouthfeel clearly synonymous with Le Pin was very much intact and there was still plenty of tension and a very long finish. The 1990 was a revelation, so light on its feet – almost Pinot Noir-like in its daintiness and purity. It had a lovely freshness still, despite the concentration from this warm vintage. Again, it is still spherical in character, with lovely mature Claret flavours.  The 1983 was slightly unclean on corking, perhaps unsurprisingly, but this blew off in the glass. It was fully mature, dominated by tertiary flavours, but the tannins interestingly were less dried out than the 1996. Finally, the inaugural 1979 vintage. Amazingly, this first vintage already has the Le Pin DNA on the palate. The spherical mouthfeel was there. It is a remarkably clean bottle considering the age. It tasted more youthful than the 1983 alongside and still had fresh fruit characters and more tertiary notes. The spherical tannins are beautifully integrated. What a wine and what condition! It’s quite incredible.  There were clear takeaways from the tasting. Firstly, Le Pin’s consistency was self-evident, performing year-in, year-out. Secondly, the DNA of Le Pin was distinct throughout the flight (bar the 2005) both in youth and at full maturity. Also, it is clear that its character, its distinctness exists right back to its humble beginnings. Le Pin is a special wine, a rare treat, but not just a wine for the well-initiated. Truffles: small, gnarly things. Equally ugly and alluring. Pungently intoxicating. Deliciously rare – and undeniably expensive. Alexandre Dumas described truffle as “the holy of holies”. Rossini called it “the Mozart of mushrooms”. Jean Anthelme Brillat-Savarin said just the name “awakens erotic and gastronomic ideas”. There’s something magical about the way these funghi lie just out of sight. The elusive treasures lurk beneath an otherwise unassuming forest floor, found only with the help of a specially trained hound. Once unearthed, however, they become the centrepiece to the world’s most expensive dishes, prized by Michelin-starred chefs and gourmands alike. They aren’t just another ingredient, however, there’s theatre to their presentation: the stage set in the kitchen, then served with a flourish tableside. For Rowan Jacobsen, author of the recently published Truffle Hound, one sniff was enough to keep him on the trail for three years. The Vermont-based writer was in Barolo in 2018 and on his way to the table, when he passed a giant white truffle under a glass cloche. Instinctively he lifted the dome: “I didn’t even make it to the table. Such a crazy smell. I was destroyed at the luncheon – I kept thinking about the truffle,” he tells me. That one flare of the nostrils had him hooked, and he’s been following truffle hunters around Europe ever since. His book follows his adventures – discovering “dreamers, schemers, and some extraordinary dogs” along the way. Piedmont is considered the home of the truffle – with the annual fair in Alba (running from October to December) the epicentre of the trade. White truffles (tuber magnatum), as found in Alba, are the crème de la crème of the truffle world – distinctly seasonal, flourishing in the autumn and winter. This brief window of opportunity is key to their appeal. As Donald Edwards, Head Sommelier at La Trompette, says, “What else can you have where the stopwatch of deliciousness is literally ticking by the table?” Of course, not all truffles are created equal. Black truffles are a third or a quarter of the price of white truffles and offer a very different aroma. Jacobsen describes “more pungent, more overwhelming” and “invigorating” scent of white truffle as “garlic, salami, almost gasoline” versus the “comforting, soothing, round” notes of “cured olives, cocoa and hazelnut” that he associates with black truffles. And while there is only one white truffle, there are two types of black truffle: the black winter truffle (or Périgord, tuber melanosporum, now mostly grown in Spain) and the black summer truffle (tuber aestivum, sometimes known as the Burgundy truffle but found all over northern Europe, including southern England). The latter, more widespread breed is not nearly as intense as its winter sibling, meaning more is needed for the same impact. One reason that white truffles carry such a premium is also that they have – so far – proven impervious to cultivation (although scientists in France have recently claimed to have cracked this). The truffle hunters, or trifulau, in Piedmont are therefore unsurprisingly secretive about where they find their treasure. Often speaking only a local dialect, these foragers roam the woods – often under the cover of darkness in search of “white gold”. Their dog will sniff their way to the right spot, pawing the ground and patiently waiting for their master to dig up their bounty. “It’s a billion-dollar industry totally dependent on dogs’ noses,” Jacobsen says, laughing at the absurdity. While the hunters might avoid the limelight, it’s not the case when it comes to their dogs, Jacobsen tells me. The canine connection is taken to the next level when you also depend on a four-legged friend for your livelihood. While pigs were the original snouts charged with sniffing out truffles, hunters switched to dogs in the 17th and 18th centuries. Lagotto Romagnolo is the “traditional” truffle-hunting breed (and comes with an associated premium, given their potential return), but today almost any dog is used. They simply need to be trained and have the right nose for the job. “Good ones are amazing,” Jacobsen tells me. “They can find a truffle 50 yards away in the forest and they just know it’s there.” Trifulau Luigi Rosso has been – along with his dog Danko (aged seven) – sniffing out the good stuff for 30 years. While it might look easy, he says that it’s incredibly difficult and can be dangerous for both hunters and their dogs, traipsing through forests in the dark. It is, however, all worth it for him. “The tranquillity that is in the air while you go for the truffles. The moon, the silence and only the sound of your footsteps on the damp leaves, then the joy of your dog when it finds one…” he tells me. The unique scent of truffle is what drives connoisseurs to seek them out – bidding on the finest examples for extortionate sums. “I feel like they've evolved to hit some deep pleasure receptors in our brains. When they're good you just want to luxuriate in them,” Edwards says. William Lowe MW – the man behind Cambridge Distillery – set about capturing the elusive flavours of truffle in his quest to create a digestif-style gin. The idea was born when looking at the digestif trolley in a Michelin-starred restaurant – and a sommelier who was scornful at the idea of a gin worthy of joining its ranks of fine Cognac and single malt whisky. “If you look at those rare and mature examples, you’ll see that the oxidative maturation process creates these beautiful earthy aromatic profiles sometimes referred to as ‘forest floor’. We wanted to achieve this profile through distillation rather than maturation, and truffles gave us the perfect route to do so,” Lowe says. “It took me a very, very long time. Because truffles are hard to deal with. They are packed full of volatiles, which is to say that truffles smell more than they taste,” the Master Distiller explains. “If you think it through – every time you open a door to a restaurant that is serving truffles, bang you get it straight away. But if you look at the food they serve truffles on and it’s always almost neutral dishes: creamy pasta, mushroom risotto. It’s never on super flavoursome dishes because if it is, you can’t taste the truffle anymore.” The challenge, however, was capturing something that doesn’t want to be caught, and finding the right level of truffle. “With truffle, chefs will normally do one of two things: either they’ll know you know it’s expensive so they’ll use loads of it so you can’t taste anything else for the rest of the meal – or they’ll do the opposite. They know that you know it’s expensive so they use so little that it’s the Emperor’s new clothes – you sort of have to search for it. It takes a genuinely skilled chef to use truffle well. And using it well is when you get all of that amazing aroma but you can still taste the other things.” This was what Lowe was aiming for – but it wasn’t easy. He spent months refining the distillation technique for truffle, but the flavour was only “ok”. He went back to the drawing board and decided that the problem was the truffle he was using – black wouldn’t cut it. “We went straight to Piemonte – white truffles from Alba. Gram for gram, worth more than gold […] and it came out and tasted a lot better than gold does so that’s an easy trade,” says Lowe. For trifulau Rosso, you need at least 10 grams on a dish (whereas, he says dismissively, restaurants will often only use a measly five) – with homemade tagliarini top of his list, although he also suggests trying it on panna cotta. He considers Pelaverga – a rare red variety that’s native to Piedmont – the classic pairing, but otherwise goes for one of the region’s other reds, Barbera, Barbaresco or Barolo. These are undoubtedly the classic pairings, following the simple rule of what grows together goes together. However, Jacobsen or Edwards don’t agree. “It couldn’t be more wrong. It really requires a white. The tannins clash with the aromatics,” Jacobsen says. The truffle specialist opts for Champagne, white Burgundy or cool-climate Californian Chardonnay – even Beaujolais. As for Edwards, he likes something that plays on the delicacy’s textural quality: “They work so well with buttery, umami-laden cheese sauces that I can't not want really classy Chardonnay. I want bâtonnage, I want really expensive but underplayed oak and I want ripeness with a gimlet-eyed stare of terroir behind. Basically, Burgundy, Mornington or the best of the Santa Rita Hills (I'll accept that other places also make perfect wines for this), plus if I can have a few years in bottle to build that sous bois flavour connection then all the better.” At the time of writing, we’re in the midst of the 2021 truffle season – one that has brought eye-watering prices. The hot, dry summer in Piedmont (unlike the wet conditions experienced in northern Europe) has led to a tiny crop – some say the smallest in history, driving prices up. Bloomberg has declared it “The Great White Truffle Crisis”. The white truffle needs such specific conditions that climate change, and – as Rosso tells me – the warmer autumns in Piedmont, pose a serious threat. While we consider Alba the spiritual home of white truffles, today most come from elsewhere. Both Central Italy and Le Marche, but also Romania, Serbia, Croatia and Hungary are all now hotspots for truffle hunting. Many of these regions are benefiting from the shift in climate, now having the ideal conditions to nurture the rare tuber magnatum. As for black truffles, the summer variety can now be found as far north as Sweden, but drought conditions mean that irrigation is becoming essential for existing orchards. Beyond climate, there are other challenges. In Piedmont, there are fewer forests than there once were, with more profitable vineyards replacing woodland (another reason that hunters are looking elsewhere). Also, the local trifulau are – in general – an ageing group. One truffle hunter, Carlo Marenda, has established a non-profit, Save the Truffle, to try and protect the region’s truffle hunting heritage – both by passing on the tradition to younger people and protecting the forests, nurturing the right environment for truffle growth. “It used to be that these forests were very actively used by farmers, peasants – fallen wood for firewood, leaves for animal bedding etc. So forests didn’t have a lot of undergrowth,” Jacobsen explains. “But then the world changed.” With the forest floor not being cleared, decaying matter acidified the soil – something that truffles hate. Truffles thrive in high pH soils, which is why they’re found on beds of limestone. To ensure the forests provide a welcoming home for the tubers, it’s essential they’re managed correctly. While there are certainly challenges to preserving the truffle’s place in Piedmont, the good news for gastronomes is that these tubers aren’t disappearing – just moving. After three years on the trail, Jacobsen is as enchanted by truffles as when he began. But he’s less keen on the hierarchy that comes with them. There are, he says, plenty more species of truffle beyond those currently on the market – but hunters can’t sell them, so keep them for themselves. He hopes the truffle culture will shift to grassroots foraging, rather than “waiters in tuxedos grating your precious morsel over your pasta”. However it reaches your table, it’s clear that the truffle holds a special allure – and the transience of its elusive scent, fading with the seasons, is what keeps us on the hunt. Chasing truffles

Olivier Humbrecht was in London earlier this year giving a masterclass on single-vineyard Pinot Gris from Alsace. His motivation and his love for dry Pinot Gris evolves around the varietal being the greatest transmitter of terroir, much more so than its more famous sibling Riesling whose natural aromatics can conceal its terroir blueprint. Of course that was just the starting point of the masterclass and it quickly evolved into a much more in-depth conversation on the virtues of singular plots and the underpinning concepts of fine wine. We caught up with him to get further insight into his pioneering approach in viticulture which is being adopted by some of the finest wine producers in the world. The changing fortunes of Pinot Gris Humbrecht is a strong believer in the potential of Pinot Gris, a varietal that has ebbed and flowed in popularity through the last century. It is a varietal that due to its rather neutral primary attributes means it is perhaps more than any other grape, at the throes of its maker.  Styles vary greatly from the high-yielding neutral, phenolic, early picked and refreshing Pinot Grigio synonymous with northern Italy. At its worst, the variety produces a wine of almost no character and no sense of place. At its best, the dry, vibrant Pinot Grigio from Alto Adige can be fantastically intense, mineral and refreshing, whilst remaining fairly neutral on the palate. Pinot Grigio Romato styles in Friuli (a skin contact rose style) offer more flavor definition and
richness whilst at the same time being distinctly phenolic with vibrant acidity and a bitter bite keeping the wine refreshing and uniquely Italian in character.  The Pinot Gris of Alsace is typically later picked and completely different to the Italian style in its flavor profile, taking on a distinct honeysuckle, musk, smoky, toasty quality. Even within Alsace, this varietal has many faces. In the 1960s Olivier reminds us that Pinot Gris from Alsace was the most popular and most expensive wine in the region, but also the rarest and typically very sweet, as it is prone to noble rot resulting in intensely rich, opulent wines. In 1990 just 2% of the vineyards in Alsace were planted with Pinot Gris, today it is up to 15%. But Pinot Gris is not an easy grape to get right and whilst the early picked, neutral style of Northern Italy can crop at high levels with little issue, to make Pinot Gris with more aromatic character is much more difficult to get right and therefore becomes a much less reliable crop and accounts for the small amounts grown in Alsace. It is a varietal very prone to rot due to its thin skin. In ideal conditions, this makes it ideal for noble rot but in less than perfect conditions grey rot is more common making the grapes not suitable for fine wine. The rot will often result in aborted fermentation.  The varietal is also very quick to ripen. If not picked in a very small picking window, the alcohols could shoot up too high making a healthy fermentation very difficult and, more often than not, leading to high levels of residual sugar in the wine, whether you want it or not. Olivier outlines that just taking a weekend off during harvest could amount to a potential 1.5% abv increase when returning to the vines on Monday morning. In under a week, the potential alcohol could have gone up by 3% abv.  Picking the wines too early also has its problems. All the flavor and aromas in the varietal develop at the final stages of ripening, picking early will produce wines with little complexity and character. This tricky little grape is no doubt the reason why so little was planted in the region despite the popularity of the top Pinot Gris sweet wines. The recent increase in plantings in Alsace however has not been brilliantly successful. For Olivier too much Pinot Gris has been planted in inadequate sites and using higher yielding commercial clones. For Olivier, top Pinot Gris from Alsace must come from the traditional petit grains clone that is naturally low-yielding. Olivier likes each vine to produce just 2 clusters producing just 25-30 hectolitres per hectare. These cropping levels are necessary to produce fine wine examples from the grape. Olivier’s interest in Pinot Gris is down to its relatively neutral character making it a great transmitter of terroir, more so than Riesling whose natural aromatic presence can conceal terroir characters. Fairly neutral flavour characters also mean it remains very much a winemaker’s wine, as the vigneron can determine the style of the wine with lees work, oak maturation, and the retention of malolactic fermentation, providing the grapes come in clean, free of rot. Olivier believes élevage on full lees makes a very important difference to the flavor of the wine. The lees nourish the wine through ageing, producing a much more complex
flavour profile. It brings a smokiness and toasty character to the wine as well as a more reductive “mineral” character. Global warming It is rare to hear a vigneron say that global warming has improved the quality of their
wines, but Olivier honestly states that, for the moment, global warming has benefited his wines. What it has done is bring flowering forward, possibly up to three weeks earlier which shunts all the growing season forward, this means the all-important veraison period (sugar concentration in the grapes) is beginning to happen three weeks earlier.  Rather than waiting for grapes to ripen in September as the days are getting shorter and the weather much less reliable, veraison is now happening at the height of the summer enabling the wines to reach optimum ripeness quicker preventing the onset of rot – which in poorer weather becomes a lot more common.  Biodynamic since 1998, Olivier has seen a really positive effect in the vineyard. The grapes are able to ripen faster, reaching physiological ripeness quicker, which enables Olivier to make dry Pinot Gris packed with flavor. This, he believes, is because chemical applications shock the vines, causing them to shut down for a number of days following the application. If you continue to spray chemical applications throughout the growing season, each time this happens the vine shuts down and you lose valuable days of ripening.  Under biodynamic principles, the vines don’t go through these shock / shutting-down
phases. This allows Olivier to pick earlier and he is the first to harvest the Pinot Gris compared to his neighbours. This he believes is largely due to his grapes ripening faster, due to his viticultural techniques.  It means he can get his wines to reach aromatic complexity whilst still being able to bring them in early enough free of rot and therefore enabling a fermentation to dryness. The reason for Olivier's interest in producing dry styles of Pinot Gris is so he can show off the terroir characteristics of each of his sites without being concealed by sweetness. Tasting the different vineyards shows just how different each of the sites is and only further promotes Pinot Gris as the ultimate transmitter of terroir. A pioneer of modern-day viticulture Speaking with top viticulturalists all over the world, you realise a huge amount of their knowledge stems from Olivier Humbrecht, whose understanding of managing vine growth originated from a university lecture he attended in the 1980s, given not by a viticulturist, but a plant physiologist.  From this lecture, Olivier understood that modern-day hedging techniques in the vineyard were really detrimental to fruit production. Olivier explains the domesticated vine goes through two very different stages in its growth period. Stage one is the phase of cellular multiplication i.e. the growth of the vine – flowering, budding, leaf production etc. Stage two is the nourishment phase in which the vine stops growing and instead starts to nourish the pips in the grapes, to promote future cellular growth when the seeds are dispersed.  The problem with modern hedging techniques is that it disturbs stage one when the vine is
on the verge of moving to stage two, therefore encouraging the vine to carry out stage one and two at the same time, meaning the grape isn’t getting full nourishment at the period of veraison as some of the vine’s energy is going into vine growth. The key for Olivier is to get stage two to follow on from stage one rather than the vines trying to do both at the same time. Preventing canopy growth, however, requires a lot more manual work. Olivier states it
requires 20 men to tie up the vines manually compared to one tractor hedging the vines. One possible solution could be to hedge the vines earlier in the growth phase so as not to disrupt the vine later in the season switching from stage 1 to stage 2 but Olivier explains this is not a good approach. Tartaric acid is key to any white wine, and it is the necessary backbone to any wine.  Tartaric acid is produced by the leaves. Olivier emphasizes that many people wrongly
think leaves only create sugar through photosynthesis, but they are necessary for producing a whole array of essential nutrients, hormones and the all-important production of tartaric acid. The secret lies in extended canopy growth. I said to Olivier this sounds exactly what Lalou
Bize Leroy does in Burgundy and he admits that he visited her years ago and told her his ideas on canopy management and she clearly took his advice. Whilst it is incredibly high maintenance and an expensive operation, two of the world’s leading winemakers Humbrecht and Leroy are advocates of the system and that should be enough for any vigneron to at least consider the technique, despite the additional costs it entails.  The single vineyards Rotenburg The Rotenburg vineyard is a cooler north-facing slope facing the Vogues mountains. Made up of red marl on a limestone bedrock with very shallow brick colour soil (containing high iron content). All this amounts to slower ripening, naturally lower vigour and tiny yields. Olivier typically crops at 25 hectolitres per hectare. Olivier states what is great about this vineyard when made in the dry style, the effect of the limestone really comes through on the palate. Tasting through the 2017, ’16 and ’13 the wines share a wonderful aromatic complexity.
Easily the most floral and perfumed of the three vineyards. There is a wonderful chalky minerality to the wine, almost top quality Chablis but with a softer texture and more perfumed. With age, the aromas and flavours only further develop whilst retaining a wonderful intensity. The wine remains very clean despite its age, showing very little tertiary
development just lovely orange rind and honeysuckle notes. The chalky limestone
minerality brings sharp focus and intensity to the finish. Clos Windsbuhl The first vintage for Zind Humbrecht on this site was the 1988 vintage. Another limestone/
clay site overlooking the church of Sainte Hune (famous for the Trimbach’s Clos Sainte Hune cuvee). Facing south, south-east with a steep slope between 15 – 40% this is a high altitude site at 350 metres. A 6.5 hectares site planted mostly to Pinot Gris. Due to the
altitude and soil the grapes ripens very slowly, often on the precipice of reaching ripeness before the wine gets affected by noble rot.  Tasting through the ’17, ’16 and ’13 what is immediate in the comparison is how the wine
develops with age. At just three years of age, the wine remains compact, at seven years of age it is incredibly complex on the palate. The primary notes have retained their zesty vivacity but the flavours become broad from russet apple, manuka honey and sultanas and a wonderful salinity and stony minerality on the finish. The wine becomes more and more focused on the finish. Clearly, the wine is affected by vintage too. The ’16 is a more difficult vintage making the wine a lot less intense than the ’17 and the ’13 but throughout the lineup, the salinity and stony minerality comes through on the palate – a distinct characteristic
of the limestone soil. Rangen de Thann Unlike Rotenburg and Clos Windsbuhl, Rangen de Thann is made up of volcanic soil, very
dark basalt rock, rich in magnesium and potassium and low in calcium so lower acidity, higher pH. The slope is the steepest in Alsace with a 41-degree slope. The vineyard has an incredibly high vine density at 10,000 vines per hectare. It is in fact one of the warmer regions of Alsace therefore you would expect it to be one of the first to ripen, but the cold wind that flows through the valley slows the ripening making it the last vineyard Oliver harvests. This is typically the lowest-yielding site at Zind Humbrecht at 20 – 30 hectolitres per hectare. The volcanic soil offers a completely different blueprint to the wine. Texturally the wine is much more oily and rich. The flavours are more pumice stone, peppery, matcha tea and then this distinct Brazil nut flavor. There are no tropical notes at all in its youth and very much more savoury in style. With age the ’13 vintage shows more tropical notes, the texture becomes unctuous in its oiliness, it feels like there is sweetness despite being a dry wine. These wines lack the vibrancy from the limestone but offer more richness, texture and darker fruit and savoury flavour profile. Explore more Editorial
