Wine journalists are jaded folk – spoilt by too many impressive tastings, lunches and dinners. But when Champagne Louis Roederer invites you to an event celebrating 50 years of Cristal Rosé, few refuse. Cristal Rosé is, as Chef de Cave Jean-Baptiste Lécaillon told us, still “a hidden gem” and the rarest cuvée Roederer produces. It’s not often shown, and even visitors to the estate don’t get to taste the wine.  While Cristal – Champagne’s first prestige cuvée – was created in 1876, its pink sibling was born almost a century later. It was Jean-Claude Rouzaud, current CEO Frédéric Rouzaud’s father, who created the wine, aged 32. He had been managing the company’s vineyards and took over the winemaking in 1974.  “His great vision was to put the vines back in the centre of the creative process,” explains seventh-generation Frédéric Rouzaud. For Roederer, site and farming have long been key to what they do (long operating both as a grower and négociant), but Jean-Claude’s move from vineyard to cellar pushed this further, allowing for – as Lécaillon put it – “a creative and constant dialogue between the vineyard and cellar”.  The same year that he started leading the cellar team, Jean-Claude decided to make a rosé version of Cristal. Almost all rosé Champagne was – and is – made by blending a still red wine in with the base white wines. Jean-Claude, however, wanted to use co-fermentation to keep the wine in the style of Cristal, a decision that Lécaillon says was key, making the wine more ethereal, precise and “Pinot-y”, with a juicier texture.  The wine was built around parcels of Pinot Noir in the Bonottes area of Aÿ, which Lécaillon describes as the “Musigny” of Champagne. In his mind, the Pinot Noir from these plots offers a “special tannic complexity” – tannins that are more saline, integrated and aromatic; the Pinot Noir here is, he says, “effortlessly perfect” and the heart of Cristal Rosé. These three vineyards (Bonotte Pierre Robert, Gargeotte and Côte du Moulin) had been used for Cristal since the 1870s, and more recently became the source for Pinot Noir material for their vine nursery – with 150 different massal selections taken from the plots – long recognised for their quality.  The three original Pinot Noir plots are now being replanted and – while the vines mature – another site in Aÿ, La Villers, a mid-slope parcel at higher altitude, is currently being used in the blend (from the 2018 vintage). It is set to form part of the wine long-term, its cooler position thought to be of particular benefit with climate change. Complementing the 55% Pinot Noir is Chardonnay from two sites – Pierre Vaudon in Avize (bringing more power and richness) and Montmartin in Le Mesnil (lending length, salinity and a chalky minerality).  The first two vintages (1974 and 1975) were more experimental, as Jean-Claude figured the wine and style out, but the third attempt in 1976 produced something special – with sufficient phenolic ripeness to produce a rosé truly worthy of the Cristal name. Even now, 48 years later, that wine is singing – combining savoury rye and brown miso notes with pear tarte tatin and an earthy power. While it had a flurry of three vintages at the start of its life, just 25 vintages of Cristal Rosé have been produced to date. The wine needs a year where not only the quality of fruit is outstanding, but the Pinot Noir and Chardonnay ripen at the same time – allowing for their co-fermentation – something that is relatively rare.  Only made with vines that are minimum 20 years old, yields are low for Champagne (at 35-40hl/ha).  The Pinot Noir is destemmed, crushed and left to macerate. Earlier vintages saw this happen over two to four days and at warmer temperatures, but the winemaking has evolved over the years, with a pivotal shift from the 2008 vintage. From 2008. Lécaillon started chilling the Pinot Noir down to -4̊C overnight, prior to de-stemming and crushing the fruit – something which he believes avoids extracting any green character.   The must is then left to cold-soak for between seven and 10 days, with no punch-downs or pump-overs – a true “infusion” (to avoid any microbial spoilage, they cover it with dry ice for the first four days, then use nitrogen). The must isn’t chilled during this time, and the temperature gradually rises to a maximum 8-9̊C. Moving to a cold-soak was inspired by an accident. In the warm 1989 vintage, Lécaillon’s first year at Roederer, they didn’t have a cooling system in the cellar, and the Pinot Noir was left in a reefer – undergoing an inadvertent cold-soak. The resulting wine was so good that it inspired Lécaillon.  Just as the fermentation starts, the must is racked off and blended with the Chardonnay which has been whole-bunch pressed pneumatically (Lécaillon argues the grape’s reductive nature needs a little skin contact to avoid being overly thiol-driven and Sauvignon-esque). Around 20% of the base wine sees oak. After secondary fermentation (under crown cap, something with Lécaillon argues helps preserve precision and terroir versus cork), the wine spends eight years on its lees, developing immense complexity.  “Since 1974, it has been our laboratory of farming, of winemaking,” says Jean-Baptise Lécaillon of the wine. Cristal Rosé was in fact the House’s first cuvée to be farmed biodynamically, and the first biodynamic prestige cuvée in Champagne, from the 2007 vintage. He explains that he is looking for phenolic ripeness, integrated with the salinity of Champagne, seamlessly combining the tannins and acidity; a wine complemented – but not dominated – by bubbles of salt.  The wine is undeniably remarkable. Tasting through a range of vintages from 1976 to the present day, all in magnum (find full tasting notes below), the vibrancy, purity and moreish, saline, minerality of these wines left me speechless. Their ability to age is effortless, with the 1989, for example, still tasting incredibly youthful. Talking about Cristal Rosé’s evolution, Lécaillon explains that he finds the first decade is all about fruit, but then the wines return to their site and soil, becoming wines of place. Conversation strays into weather Champagne today, with global warming, can still make wines that will age as beautifully.  “Champagne is not just about acid; it’s about freshness,” says Lécaillon. He points to the 1976 and 1989 vintages – both incredibly hot years, with the fruit picked at almost 12% potential alcohol and modest acidity levels – and yet the wines are full of freshness. Back then, producers were on holiday throughout August, and the fruit was picked in September (1st for the 1976 and from 5th for the 1989), but with such conditions today they would have harvested in mid-August. It is perhaps, he suggests, a lesson that the region is overreacting to warm conditions – with too many producers chasing acidity, rather than phenolic ripeness. For the skins are, he argues, the key to this sense of freshness, the dry extract that allows the wine to age.   The House has introduced a Cristal Rosé Vinothèque, or late release. To date, there have only been a handful of vintages – the 1995, 1996, 1999 and 2002. The maturation for this wine isn’t set and varies according to the vintage, normally spending longer on its lees, both sur latte (lying down) and sur pointe (upside down), the idea being to build umami complexity in the wine. The sur pointe ageing is unusual, something Lécaillon favours for its more reductive nature, keeping the wine aromatically fresh (the wine is still riddled four times a year in the same position, to agitate the lees and absorb any oxygen). Generally these releases are offered around 15-17 years after the vintage. The dosage is often lower than the original bottling, with the longer lees ageing lending balance without a higher sugar addition. Tasting the 2002 Vinothèque (a wine that feels infantile), Lécaillon says: “Is it better? I don’t know, but it’s another expression.”  I’ve written before about Lécaillon’s tireless approach to wine-growing – constantly looking to learn and evolve, and the week after our dive into Cristal Rosé he was flying to Japan to visit the Fukuoka farm (founded by Masanobu Fukuoka, the author of The One-Straw Revolution and a pioneer of permaculture or “natural” farming). His fight against the “banalisation” of taste continues, as he looks for ever-more ways to enrich the world of Louis Roederer. If the next 50 years of Cristal Rosé is nearly as good as the first, we’ve all got a lot to look forward to.  Five decades of Cristal Rosé: the tasting  2013 Cristal Rosé: A beautiful, late-ripening growing season that provided the last October harvest to date. A wine Chef de Cave Jean-Baptise Lécaillon describes as having “eternal youth” – something that is hard to disagree with after tasting the wine. This is a baby, the nose enticing with delicate floral aromas and bright citrus, not giving too much away. The palate is long and saline, tightly wound, but bursting with bright fruit on the mouthwatering finish, combining lush redcurrant and lemon. Gorgeous. Dosage 7g/l, tasted from magnum.  2012 Cristal Rosé: Lécaillon notes how 2012 was seen as an “easy” vintage on release, riper and richer with a little more Pinot Noir in the blend, but is now entering its second life, with reductive, chalky notes that bring it back to its soils. The wine is beautifully earthy and drastically different to the 2013, with power and intensity. It’s very savoury, a wine that is all about breadth and structure, with wild strawberry and raspberry notes mingling alongside a sea-spray freshness, driving on to a long, mineral finish. Dosage 8g/l, tasted from magnum.  2008 Cristal Rosé: This was the first fully organic vintage for the entire Roederer estate, and marks the start of a new era for Cristal Rosé with its cool “infusion” technique for the Pinot Noir. Paired with the 1995 vintage, the two wines are windows into two completely different worlds of Cristal. With the copper tone of a sunset, it’s a wine of muscle. It’s almost haughty, with length, power and elegance – showing off its flawless structure, with a zesty citrus drive complementing its austerity. The finish is long and saline. It will be incredible to taste this in 20 years’ time. Dosage 8g/l, tasted from magnum.  1995 Cristal Rosé: This vintage was one of the last to see the Pinot Noir soaked at 20-24̊C. It is, in Lécaillon’s mind, the “same terroir, but a different story” versus more modern iterations of the wine. The wine glows golden in the glass – the colour of the sun just as it breaks the horizon. It’s incredibly open, the aromatics constantly shifting to reveal new layers. There’s a touch of mushroom or truffle, but with layers of rich, almost tropical, fruit behind – think peach, mango, peach tea and the bite of pomegranate, with caramel sweetness, but still a saline twist to the finish. A wine of weight and depth. Dosage 12g/l, tasted from magnum.  1989 Cristal Rosé: This was a very warm vintage, harvested from 5th September, and the wine technically doesn’t have high acidity – yet is a wine of impressive freshness. Grilled hazelnuts edge a nose of candied orange peel and pomegranate, and a coffee note that emerges with air. There’s a liveliness to the palate here, even over three decades on, with a gorgeous freshness and creaminess to the mousse. The fruit on the palate is lush, with generous mouth-watering peach and a taut, mineral backbone. It’s amazing how young this tastes still. Dosage 12g/l, tasted from magnum.  1976 Cristal Rosé: Despite coming from another warm vintage (with a very hot, dry August – and harvested from 1st September), Jean-Baptiste Lécaillon notes the freshness on the 1976 vintage, and how it seems to have never become too evolved. It’s much more savoury than the 1976, with rye bread and brown miso sitting alongside caramelised pears, tarte tatin and a hint of Oloroso Sherry. The palate is a rush of fine bubbles, fresh and with a citrus bite but a savoury framework behind. A remarkable wine. Dosage 10g/l, tasted from magnum.  2002 Cristal Rosé Vinothèque: This was disgorged in 2019, spending 11 years on lees sur latte, and then another five sur pointe, followed by an additional four years’ post-disgorgement ageing prior to release. This wine is so tightly coiled, a wine not yet revealing everything it has to offer – although you can see the incredible structure. It’s so vibrant, with energy and a lushness as it drives toward a seemingly never-ending finish. It’s gorgeous, layered with mandarin, grapefruit pith, chalky minerality and smoked salt, lingering on the soft, saline tail of the mouthwatering finish. Go into any winery in the world, and it’s now unusual not to find a glass wine globe or clay amphora lurking in the corner. Oak has long been the traditional ageing vessel for wine – light, easily transportable, the grain fine enough to allow micro-oxygenation (aiding the polymerisation of tannins, making the wine more supple), and, especially when new, the ability to add toasty, spicy complexity. But with technology and global warming, many winemakers are looking beyond oak – and Jean-Marie Fourrier is one of them.  “We noticed the barrels generating the most problems were new oak,” says Fourrier. He and his team had been monitoring each barrel during élevage, and started noticing a trend. They observed that the volatile acidity was 0.2-0.3% higher in first-fill barrels. To compensate for the higher volatility, Fourrier had to add more sulphur to those barrels, something that he’d like to avoid – feeling that higher sulphur additions can mask the terroir.  But why were the new barrels the most volatile? With climate change, trees – Fourrier argues – are growing more quickly, meaning that their trunks don’t have the same density, and this is responsible for the increased volatility. He’s not alone in paying attention to the density of wood; it’s something that Clos de Sarpe has started monitoring, weighing each barrel and noting how this impacts the wine during élevage. Fourrier also feels that climate change has impacted cork, as he told me in 2021 – noting how cork is harvested every seven to eight years versus the 20 of yesteryear. The corks are less dense and this leads to higher oxygen transfer – it’s one reason that he chooses to wax his wines (instead of metal capsules), to help counter the quality of the cork itself, something that Olivier Lamy also believes is important.  With the extremes of climate change, the size of harvests varies more significantly than ever before – from the lows of 2021 to the highs of 2023. The pHs of wines are higher, making winemaking all the more tricky – a more challenging environment for yeast and higher risks of bacterial spoilage. Producers need to handle their wines more carefully, as well as juggle the vessels required for such extreme yield variations. If barrels are left empty, they become a breeding ground for bacteria, especially brettanomyces – so having the right number of vessels for your wine each year is essential, not to mention retaining a balance of new and old wood, to keep both a consistent style and not over- or under-oak the wines. (Some producers also only keep barrels for a certain number of years, again to avoid bacterial spoilage.)  “How can I age wine, keeping freshness, keeping purity?” says Fourrier, “Is 100% oak the direction? I don’t think so, to be honest, I think it’s a balance.” There were two options for him: either increase the level of sulphur additions, purely for the “ideology of wood” – or to evolve.  For him, using amphorae and stainless steel barrels alleviates some of these pressures – offering lower volatility, almost no bacterial risks and the vessels can be stored empty and more easily cleaned, not to mention they don’t need replacing. While he notes he is not about to release a “Cuvée Amphora”, ageing 20% of his wines in these alternatives allows for lower volatility, lower total sulphites and, in his view, helps give the wines freshness, complexity and a sense of place.   The 2022 vintage is the latest to bring these challenges to the fore; a return to a year born of global warming after the tricky, cool 2021. While for once they escaped the threat of frost, conditions were hot – although, unlike in 2019 or 2020, they received enough water to allow for a more plentiful crop. Gevrey-Chambertin saw a massive storm in June, bringing with it 100mm of rain in just an hour or so, flooding the streets of the village. Although it seemed devastating at the time, it was exactly what the vines needed to survive the dry stretch to the end of August and harvest at the start of September.  Although harvest dates creep earlier and earlier, Fourrier feels that some are picking prematurely (“We don’t do a Crémant,” he jokes). “Terroir needs to be revealed by phenolic maturity,” he explains, saying that his team started in early September. With the warmth of the year, he used around 15-20% whole-bunch to help retain freshness and elegance, and, as we’ve seen elsewhere so far, the alcohols are modest – sitting between 12.8 and 13.5%. The wines combine some of the characteristics of 2009 and 2015, Fourrier feels, yet are fresher, with an approachability that – as we have found – will make them easy to drink in their youth, despite having the structure and weight to age.  But now Fourrier’s mind is occupied by the 2023s, the wines just in the cellar – absorbed by the potential of the next vintage. It's this slow and constant evolution, the change and challenges, year in, year out, that keep him interested. With only one shot every 12 months, this business is, he says, “an internship of 40 years”. And it’s that approach – a modesty in the face of everything despite his reputation, constantly pushing forward, studying everything and never complacent – that makes Fourrier one of the region’s leading names. The 2022 vintage in Burgundy is a year of the modern era – one born of today’s shifting climate. As the first of his wines from the year are released, Sophie Thorpe spoke to Jean-Marie Fourrier about how he’s managing global warming in the cellar – and what he thinks of 2022

The seasons have shifted. Drizzle is once more the order of the day, russet tones spreading across the landscape, the soft tread of fallen leaves underfoot – and a new vintage from Burgundy on the horizon.  This week, we made our first, fleeting trip to the region – dipping a toe in the waters of 2021. We tasted with a handful of growers and négociants, getting an initial feel for the year, ahead of our more comprehensive trip and tasting later in the season.  The cellars were full of the familiar scent of fermentation – raw and intoxicating – as the 2022s settled into barrel. Producers were unable to contain their relief at having finally been able to harvest a full crop – especially given the tiny 2021 yields.  As with Bordeaux 2021, the year’s conditions were far from easy. While neither 2019 nor 2020 brought generous harvests, in 2021, Mother Nature conspired against these vine-growers – demanding more than a pound of flesh.  The winter was wet, replenishing the soils’ water reserves. Spring arrived early, with a warm March encouraging the vines to waken, but as has become almost the norm, April brought severe frosts. For three days the region’s vignerons lit candles and did everything to try and shield their precious crop, with snow even falling on the higher vineyards – especially the Grands/Premiers Crus.  Once beyond that hurdle, growers were faced with another – a wet June and July that led to widespread mildew. As in Bordeaux, it was a particular challenge for the increasing number of growers working organically. August was dry, and harvest dates returned to more conventional timing in mid-September – a contrast to the warmer 2018, ’19 and ’20. But thanks to the frost, there simply wasn’t much fruit to harvest.  With the damp conditions, sorting was key – and demanded more of the already small crop be sacrificed. With the health of the fruit imperfect, extraction was a challenge, with a gentle touch required – and chaptalisation once more the norm. Yields everywhere are drastically low – reduced by between 60 and 70%, across both whites and reds, and every quality tier. The volumes are so small that there simply wasn’t enough fruit to produce some cuvées, and we’ll see more blended Premiers Crus as a result.   We have not tasted nearly enough to make declarations about the vintage – once we’ve tasted more widely we’ll publish a full report on the year. What we can say so far is that we tasted some very good whites – the cooler conditions lending themselves to restrained, mineral, high-acid white Burgundy.  The year marks a distinct return to old-school, high-acid, pale-coloured red Burgundy – with alcohols back down to 12-13%. From what we’ve tasted so far, the Pinot Noirs are lighter with a juicy freshness and “buvabilité” versus the bolder 2019 or 2020s. As in Bordeaux in the vintage, the year asked much of wine-growers and quality seems to vary, so we’ll be choosing wines carefully. We look forward to tasting and talking more, getting fully under the skin of the vintage.

Everyone remembers their first bottle of Soldera, such is its impact on the senses. Speak to anyone lucky enough to have tasted it and watch their eyes glaze over as they are immediately transported back to the moment, the friends they shared it with and no doubt the food it accompanied. It is one of those rare wines that has a way of imprinting itself on the memory. Such is the magic at work in seemingly every bottle of this special Tuscan red that it’s not just the first bottle, but every bottle that you remember. This year marks the 50th anniversary of the founding of this enigmatic estate set in the hills of Montalcino. In its comparatively short existence, the wine has built a considerable reputation, yet after founder Gianfranco Soldera passed away in 2019, the property finds itself at an interesting crossroads. Right up until his death, Gianfranco Soldera had very much been the face of the estate. His personality and strong opinions made him a memorable character – and a man not beyond controversy. He was a leading voice against the Brunello consortium’s handling of the Brunello-gate scandal in 2008 and fiercely believed that Brunello should be 100% Sangiovese. In 2012, his winery was the victim of sabotage, in which large volumes of wine (from vintages between 2007 and 2012) were lost – simply poured down the drain. After the attack, the Brunello consortium offered to help club together and replace the wine, but Soldera rejected the offer and soon left the consortium (although the exact reasons behind his resignation or expulsion are unclear). After this incident, Soldera simply labelled his wine as Toscana IGT (today IGP), to make a point that his wine was and will always be 100% Sangiovese. Despite his polarising nature, ultimately Soldera let his wines do the talking. He was incredibly ambitious from the start, setting out to produce a wine that would compete with the world’s finest – a feat he achieved remarkably quickly, considering he started the vineyard from scratch – replanting the vineyards in their entirety when he arrived at the estate in 1972.  While Gianfranco was the face of Soldera, he did not work alone. The estate has always been a family affair. Both Gianfranco’s son Mauro and daughter Monica, along with her husband Paolo Franco, have worked at the estate for many years. It is Monica’s husband who has since taken charge of the winemaking at Soldera, after working alongside Gianfranco for 16 years.  As we sit down to taste through seven vintages of Soldera that span 21 years, Monica introduces her husband, on what is his first visit to the UK as Soldera’s winemaker. She makes the point that before joining the family business, Franco was in fact a skilled silversmith – requiring a keen sensibility of the hands, eyes and mind. Skills, she believes, are ideal for working at Soldera, and perfectly attuned to her father’s perfectionist mentality. Gianfranco was by all accounts not an easy man to work with. “It’s a difficult job,” Monica laughs. “We are not him, but we try our best.”  Monica also explains that, despite her father’s headstrong approach, he was always open to advice and frequently invited university students to the estate, experimenting with vines on the property, exploring ways to bring out the best in the grapes and vines. Monica believes that science is the key to making wine more naturally. “The more we study, the more natural our processes become,” she says. Working with students has allowed them to fine-tune what they do, keeping the vines healthy in the shifting climate. The 2017 vintage – the penultimate wine made under Gianfranco’s watch – is due to be released later this year. It was a very difficult vintage in Tuscany, with a ferocious heatwave in the summer of 2017. There were concerns that it might be similar to 2003, when their vines were badly affected by the high temperatures. But to their surprise, the vines showed no signs of water stress, the leaves remained green and rich in colour. Soldera felt this was down to the vines’ deep roots and higher trellising, something they introduced after 2003.  Despite the lack of water in 2017, the team was still able to work with a bigger canopy – meaning more leaves to shade the grapes. The intensity of the summer saw them harvest the grapes a whole month earlier than is typical, starting on 26th August. “To lose one month is extraordinary,” says Monica. Production was also down to 11,000 bottles, versus a normal 15,000. Technically they are allowed to produce as many as 50,000, giving an idea of how much they are prepared to sacrifice to maintain their high standards. Tasting the 2017, there is only a hint of the heat that severely marked the vintage for many of Soldera’s neighbours. The wine still has the trademark perfumed aromatics of old rose and the sinewy tannins that flex beautifully on the palate. It is easily one of the most elegant wines produced in Montalcino in 2017. The 2017, however, was always going to struggle to live up to its predecessor, the 2016– a vintage that is amongst the very best in the region. Monica noted just how easy 2016 was in terms of the growing season; everything was just right, right up until harvest. The sheer amplitude of aromas is really quite extraordinary, with strawberry fruit, old rose perfume, fiery earthy, irony, ferric tones and a wild floral note. The energy on the palate is wonderful and thick, tender, with almost elastic-like tannins that make the mouth water. The wine has such vibrancy and a really long finish. The 2015 as a vintage sits somewhere between 2016 and 2017 in style. While it was very warm, the vines were less affected and produced wines of great concentration. The wine does not have the aromatic amplitude of the 2016 and is nuttier in its aromas rather than perfumed, but seemingly the signature of Soldera – those tender tannins, like silk, bring so much energy and emotion to the wine. The 2014 is perhaps a surprise highlight of the flight. It was a difficult vintage, with lots of rain. For Monica, it proved very tough and required lots of sorting and fruit selection. In the end they got just 400kg of fruit from one hectare, making just 8,400 bottles. The dried rose, perfumed scent is matched by earthier, ferric tones. I get tomato leaf – which is often considered negative in tasting notes – but here it adds a wild, lifted, herbal tone that brings more complexity to the wine, complementing the sweeter rose notes and savoury, dried-stone aromas. The breadth on the palate is where the magic really is. It stretches right across the palate and brings such effortless depth too. The tannins are still tight but just starting to ease up, and there is so much freshness too. It really is in a wonderful place. A 10-year gap and the 2004 is the wine of the flight. Despite the bottle age, the scented Pinot Noir-esque perfume is still there in abundance, matched again by an earthy ferric richness. The tannins have eased up as you would expect, developing more mid-palate richness, making the wine incredibly juicy. The tannins are still elastic and bring a huge lift to the palate. It is a mesmerising wine. It was a great vintage in Tuscany, albeit with moderate temperatures for Montalcino, and it has matured beautifully. Some argue that Soldera excels in more moderate vintages – something that shines through in the 2004 and 2014.  The 1999 is another great vintage in Brunello and the next wine in the line-up. Distinct tertiary notes are now showing on the wine, with blue cheese, roasted walnut, dried cherry, sage and light herbal tones mingling together. There is still so much vibrancy to the wine. The tannins are not quite as silky as the younger vintages, but the acid is still so striking. It definitely feels like a wine of its age and, despite the minimal approach at Soldera, the framework suggests extraction levels were higher back then, in keeping with the trends of the time. It is a lovely wine, but not as ethereal as others. Finally, the 1996: at 26 years of age still holds on to those wonderful, scented aromatics as exuberant as ever. Again, matched with more tertiary notes, blue cheese along with dried cherry fruit, lots of dry extract, the tannins as structured and sinewy as ever, but still very fresh. It’s an unforgettable flight of some of Montalcino’s top vintages, but it’s Soldera’s ethereality that emerges – with that heady mesmerising scent and tender tannins consistent across the wines. Soldera might thrive in cooler vintages, but the quality of this wine rarely drops below outstanding. Even without Gianfranco at the helm, it’s clear that – under the watchful eye of Monica Soldera, Paolo Franco, and the rest of the Soldera family, not to mention their research team – the estate has a very exciting future ahead. Montrachet, Chambertin, Richebourg: these names will send chills down the spine of any Burgundy lover. But many of the Côte d’Or’s most famous domaines are looking beyond these grand names, making wines from vineyards and appellations that might otherwise fly under the radar. With reputations at stake, the likes of Domaine d’Auvenay, Coche-Dury and Bizot put as much effort and care into these “lowly” wines as for their Grands Crus. Quality in these appellations is soaring – with better vine material, cooler sites that are benefitting from the warming climate, not to mention better winemaking and know-how all contributing. Here we offer a guide to just a handful of the treasures to be found in Burgundy if you look a bit further afield. Auxey-Duresses Right in the middle of the Côte de Beaune, Auxey-Duresses is a small, sleepy village situated above Meursault. Prior to AC regulations, the white wines of Auxey-Duresses were sold as Meursault and the Pinots sold as Pommard or Volnay. While probably better known for Pinot Noir production, some of its top wines are Chardonnays made in a specific part of the appellation directly bordering Meursault.  Here, high up on the hill, over the brow of Meursault’s highest vineyards you will find vineyards facing unusually north-west. While these vineyards are too cool to adequately ripen Pinot Noir, they have proven to be a great climate for Chardonnay, particularly in today’s warming climate. In a warm vintage, the whites can give the top Meursault vineyards a run for their money. Domaine Leroy, one of Burgundy’s most eminent estates run by Madam Lalou Bize-Leroy, has holdings in this part of Auxey-Duresses in Les Lavières, while Domaine d’Auvenay also regularly produces an Auxey-Duresses Blanc on this particular northwest-facing slope from the vineyards of La Macabrée and Les Boutonniers. Depending on volumes D’Auvenay can produce three separate Auxey-Duresses Blanc cuvées in one vintage or if volumes are down will blend into one. While these are expensive options, the quality is undoubtedly there and this is a great lesser-known spot in the Côte d’Or to source outstanding Chardonnay, particularly in warmer vintages.  Domaine Roulot, Olivier Leflaive and a Jasper Morris MW favourite Domaine Diconne (which has vines dating back to 1924) also produce excellent Auxey-Duresses Blanc on these slopes adjacent to Meursault. While stricter in style than their neighbours, they remain fantastic value. For reds, Domaine Comte Armand’s Premier Cru Auxey-Duresses is another great buy. Made from two complimentary Premier Cru sites – La Duresses (whose brown clay soil brings density and tannic structure) and Les Breterins (on lighter soil bringing fruitiness) combine to make a fabulous Auxey-Duresses well worth discovering. Monthélie Next door to Auxey-Duresses, sandwiched in between Meursault and Volnay, is another lesser-known appellation which has an impressive line-up of producers on its roster. Comtes Lafon, Coche-Dury, Philippe Pacalet, Domaine Roulot and Leroy all produce Pinot Noir from this little, oft-forgotten appellation.  Monthélie is actually one of Bize-Leroy’s favourite appellations for her Maison Leroy selection. Historically, Monthélie tended to produce Gamay more than Pinot Noir, but that is not the case today. While the village wines tend to be a little lean and err too far towards vegetal flavours, the Premiers Crus within the appellation deserve much more attention. Domaine Coche-Dury produces a Premier Cru Les Barbières, while Comtes Lafon’s Premier Cru is in Les Champs Fulliot.  Both have full south exposure, enabling the wines to ripen fully even at higher Hautes-Côtes-like altitudes. In the warmer vintages, you could be justly rewarded for sourcing wines from this under-appreciated little corner of Burgundy. Monthélie is also home to Domaine Potinet-Ampeau, whose collection of older bottlings can wow the senses, provides a fascinating and educational insight into mature Burgundy. Pernand-Vergelesses Few Chardonnay appellations in the Côte d’Or are as underrated as Pernand-Vergelesses. Proximity to Corton-Charlemagne makes this unsurprising. This winemaking enclave, tucked behind the hill of Corton, has long been a consistent appellation where you find outstanding quality at a fantastic price.  While consistent in quality, it is often inconsistent in quantity due to its position between two rising hills. The lay of the land produces natural airflow that attracts hailstorms and is also susceptible to frost as cold air sits in this natural pocket of vineyards. If the region escapes these climatic perils, the Chardonnays are linear and have a flinty, mineral character. The wines can age well, gaining richness as they mature. A top producer of particular note is Domaine Rapet – of whom Wine Advocate critic William Kelley recently noted, “It’s a mystery these wines are not better known or distributed.” Being the biggest landowner of Corton-Charlemagne, they are one of the region’s most consistent white wine producers. Domaine Chandon de Brailles (based in Savigny-lès-Beaune) is also widely recognised for producing the best Pinot Noir in the appellation.  Their Pernand-Vergelesses Premier Cru Ile de Vergelesses regularly competes with top Pinot Noirs made in the more famous appellations and is often described as one of Burgundy’s bargains given the quality. Other better-known producers such as Dugat-Py and a more recent purchase in 2012 by Domaine Jean-Claude Ramonet (one of the world’s top Chardonnay producers) – testify to the quality found here. Perennial FINE+RARE favourite, Domaine Jean-Marc & Hugues Pavelot, also produce outstanding Chardonnay from Pernand-Vergelesses. Morey-Saint-Denis While Morey-Saint-Denis can hardly be described as under the radar, it continues to be undervalued amongst its neighbours despite its obvious pedigree. Morey-Saint-Denis’s prime location in the Côte d’Or sandwiched between Gevrey-Chambertin and Chambolle-Musigny, for some reason – despite being home to five Grands Crus (Clos de la Roche, Clos de Tart, Bonnes Mares, Clos des Lambrays and Clos St Denis) – never gets the same limelight as either of its neighbours.  It’s possible to blame the autonomous nomenclature of its Grands Crus – with only Clos St Denis having a clear link to the village. It has meant that Morey-Saint-Denis as an appellation is seen as somewhat lesser in quality than its neighbours. Another reason might be that, like Auxey-Duresses, before the AC regulations came into play, the wines of Morey-Saint-Denis were either sold as Gevrey-Chambertin or Chambolle-Musigny.  Outside the Grands Crus, our excellent recent discovery is Domaine René Bouvier. Their  Morey-Saint-Denis En la Rue de Vergy is a simply stunning Pinot Noir no matter where it is from. While only classified as village, this vineyard is surrounded by Morey-Saint-Denis’s most illustrious Grands Crus – Clos des Lambrays, Clos de Tart and Bonnes-Mares – on the border with Chambolle-Musigny. In a sunny vintage, this cooler site has excelled and remains one of the great value-buys of 2019. Chassagne-Montrachet Rouge It is not simply lesser-known appellations that get missed. While its Chardonnays get all the attention today, Chassagne-Montrachet was historically a Pinot Noir appellation (as was Meursault). Today, Pinot Noir only represents about 20% of production within the Chassagne-Montrachet Premiers Crus, but until the 1960s, the appellation was dominated by the red grape. Some of the top Pinot Noir sites here were judged to be as good as Musigny, Clos de la Roche and Clos de Tart. Today Chardonnay is the better variety in the village, but there are still top examples of Pinot Noir to be found – often at a great price for the quality. The red wines from the Clos Saint Jean Premier Cru are often described as a unique expression of Pinot Noir – a wine of fantastic finesse, quite at odds with the appellation’s reputation for robust reds. It is arguably the finest site for red wine in Chassagne-Montrachet. Jean-Claude Ramonet produces a top example and Premier Cru La Boudriotte is also great, if not a little leaner in style. Marsannay Most Burgundy buyers rarely explore further north than Gevrey-Chambertin in search of the next big thing, but all indications point in that direction. Marsannay was only given appellation contrôlée status in 1987, encompassing three districts of Chenôve (on the outskirts of Dijon’s urban sprawl), Marsannay La Côte and Couchey.  Unique to the appellations of Burgundy, Marsannay can produce a rosé wine from Pinot Noir.  The foundation for the village’s reputation, many vineyards within the appellation are dedicated exclusively to rosé production. If a red wine is made in these vineyards, it must be declassified to Bourgogne Rouge). While Sylvain Pataille and René Bouvier make the most serious and age-worthy rosés in the appellation, the whites and reds are arguably the most exciting development in recent times. The village of Marsannay is arguably producing the best Pinot Noir for the money in the whole of Burgundy. Cult producers such as Domaine Bizot with Jean-Yves Bizot’s Marsannay Clos du Roy and his Bourgogne Le Chapitre, situated just south of Dijon, are already on aficionado's radars.  These wines are made in tiny quantities and has only further increased the collectability of these wines made in a distinct style (100% whole-bunch fermentations and zero sulphur additions). If sourcing Bizot wines is too painstaking and out of one’s budget, there are plenty of other exceptional growers in this region. Domaine Audoin is producing outstanding Premier Cru Marsannay that can compete with some of the top Gevrey bottlings and the wines still remain fantastic value. Domaine René Bouvier also makes exceptional wines from Marsannay. Côte Chalonnaise: Givry, Montagny and Rully Outside the Côte d’Or, to the south in the Côte Chalonnaise, Mercurey dominates the limelight compared to neighbouring appellations Rully, Montagny and Givry. When handled correctly, however, Givry, can produce fantastic, powerful Pinot Noir that also offers finesse. Rully and Montagny are also a great source of Chardonnay and remain outstanding value.  Montagny only produces Chardonnay – the top producers being Domaine Stéphane Aladame, Domaine Bruno Lorenzon and Domaine Maxime Cottenceau. Rully produces white and red, but the domaine's Chardonnay represents one of Burgundy’s best-value white wines. Producers worth looking out for include Domaine Jaeger-Defaix and Domaine Vincent Dureuil-Janthial. Domaine Joblot is the leading producer in Givry. Their wines consistently compete with those in the Côte d’Or, a beacon for the appellation’s reputation, yet remain sensibly priced. Of the estate’s 14 hectares, nine are Premier Cru, including some of the village’s finest plots such as Clos de la Servoisine and Cellier aux Moines.  L’Empreinte –  a blend of their four red Premier Cru sites (Clos de la Servoisine, Cellier  aux Moines,  Clos  Marole  and  Les Bois  Chevaux – is the property’s top wine. The white, Cuvée Mademoiselle, is a blend of  their  older-vine  Premier Cru  Chardonnay from  En  Veau  and  Clos de la  Servoisine. Joblot is rightfully praised by the likes of Clive Coates MW,  Robert Parker, Allen Meadows and Jasper Morris MW for being the leading address in Givry and one of the greatest estates in Burgundy. Hautes-Côtes de Nuits Situated over the brow of the main Côte d’Or slope and further to the west are the vineyards classified as the Hautes-Côtes (the higher slopes) of the Côte de Nuits. Typically around 100 metres higher in altitude, only the southwest and southeast slopes are warm enough to ripen grapes, but geologically parts of the region are identical to the Côte d’Or.  With warmer vintages, quality here is greatly improving and you can find some outstanding wines at a great price. Two top examples of this come from Vosne-Romanée’s Domaine Gros Frère & Sœur and Domaine David Duband. Both estates have invested heavily in the region believing in the potential of these cooler sites in a warming climate. Aubert de Villaine’s Domaine de la Romanée-Conti also produces an Hautes-Côtes de Nuits Blanc, from grapes grown on the slopes below the historic Abbaye de Saint Vivant. Off the beaten track in Burgundy

When Jean-Marie Fourrier bought legendary Australian estate Bass Phillip in early 2020, he envisaged being there a lot – even being there for the 2020 harvest. “But ‘a small virus’ can make things very challenging very fast,” he said, raising an eyebrow. With the arrival of Covid-19, Australia promptly shut its borders – and the winemaker has only been able to visit his new domaine via conference call.   Fourrier is one of Burgundy’s superstars. Since taking over his family estate at the age of just 23 in 1994, his wines have rapidly become some of the region’s finest and most desirable. Based in Gevrey-Chambertin, he crafts wonderfully elegant, pure expressions of Pinot Noir – wines that, given the significant demand, are strictly allocated each year.   When news broke last year, however, that he was venturing Down Under, it was unexpected. In his youth, he did a stint at Domaine Drouhin, Oregon. And while many Burgundy producers have set sail for the US (De Montille, Méo-Camuzet, Drouhin and Lafon, to name but a few), there is something culturally improbable about a Frenchman taking to Australia. (Although it’s not the first Franco-Australian project – with Australian Andrew Nielsen’s Burgundy micro-négoce Le Grappin and Jane Eyre two others.)  Even more unusually, perhaps, he hasn’t set up his own project, but taken over an existing one – and one with quite the legacy.  Bass Phillip – in Gippsland, Victoria – is one of Australia’s iconic wineries. Phillip Jones planted the first vines in Leongatha in 1979, an unlikely choice given, at the time, the area was known for its dairy production rather than viticulture. The first wines were released in 1991 – and established the producer’s reputation for outstanding, age-worthy Pinot.   Phillip Jones has been running the show here ever since. Now 74, and with no children to take Bass Phillip on, he started the search for a successor several years ago.  Enter a consortium led by Soo Hoo Khoon Peng (a Singaporean wine importer and former owner of the Wine Advocate) and Kent Ho (a Hong Kong entrepreneur) who approached Fourrier three years ago. For Fourrier, it seemed like fate, having consulted for the winery briefly in 2002.   “Sometimes you can see the stars aligning,” Fourrier tells me. “I wasn’t specifically looking for Bass Phillip, but it came on my desk, after 20 years.” The deal was signed officially in March 2020.  It was, in Fourrier’s words, “a turning point” in his life. Having already added a négociant arm to his Burgundy operation in 2011, he was looking to expand further – but even for a grower of his success, Burgundy land prices are prohibitive.  “If you don’t expand, you see the next generation fighting over a small company,” explains Fourrier. With two children, an inheritance plan is key to preserving what he has worked so hard to build. This combined with the threat of climate change – excessive heat and frost, and associated yield fluctuations – made diversification to other parts of the world the obvious way forward, providing a sustainable way to preserve the family business.   Australia offered the “possibility to make wine twice a year… and the chance to be a student again,” Fourrier says – his eyes lighting up at the potential.   Some of the appeal was the boutique size of the operation, as well as the age of the vines (planted in 1979 and 1986, and all massal, rather than clonal, selections – something Fourrier is insistent on). He also has a man on the ground – with his brother-in-law Adam Francis, who worked several vintages with Fourrier in Burgundy. Francis, along with his family, has relocated from Adelaide to take on the role of General Manager, handling the day-to-day at Bass Phillip.  While the property’s reputation is for Pinot Noir, Jones initially planted Cabernet Sauvignon – with Ch. Ducru-Beaucaillou the original inspiration behind his Gippsland vineyard. After becoming enamoured with the wines of Henri Jayer (whom, coincidentally, was one of Fourrier’s mentors), Jones switched to Pinot Noir, later planting Chardonnay and small plots of other varieties (including Gewürztraminer, Nebbiolo and Gamay).  To this day, Bass Phillip remains unusually isolated given its success – surrounded by dairy farms rather than other vineyards. This cool corner of Victoria is lush and green, cooler and wetter than Burgundy – Fourrier compares it to the climate of Burgundy in the late 1980s and ’90s. “It’s why [the wines] have this purity and character,” Fourrier explains. With water becoming an increasingly precious resource, the site’s 1,000mm of annual rain (compared to 750mm in Burgundy) is a major asset, and the vines have always been dry-farmed.  But with Fourrier at the helm, what lies ahead? “Evolution not revolution” is the philosophy here – and not to imitate Burgundy, Fourrier emphasises, but continue Jones’s work and take Bass Phillip to the next level. In that spirit, much of the original team is staying on – including Senior Winemaker John Durham and Vineyard Manager Mick Kelly.  The winery needs some attention and Fourrier wants to change the trellising of the vines, but the first priority is ensuring that every bottle released performs as expected. “I think Bass sometimes could be a bit inconsistent, a bit bumpy,” Fourrier says. “If I’m not happy to drink a bottle at home with my friends, I’m not happy to sell it. Everything has to be spotless.”  The Burgundian has already started addressing this with the soon-to-be-released 2019s. While he didn’t make the wines, he made the selections for bottling – selling off a third of the volume made and reducing the range significantly. There will now be only four tiers to the range of Pinot Noir and Chardonnay: Since 1979 (the newly named entry-level cuvées), Estate, Premium and – the top bottlings – Reserve.  He is also going to change the closures – to help ensure the wines age as well as they should. Corks will – as of 2020 – be courtesy of the same supplier he uses in Burgundy, and foil will be switched for wax (something he feels balances the natural variation in cork).  Otherwise, he plans to gradually reduce the use of new oak (“I don’t like to see the waste of oak, a natural resource”), focusing on the fruit and terroir of Bass Phillip, and he’s examining the philosophy in the vineyards – which are currently farmed biodynamically.  The Burgundian bought the estate just after the 2020 harvest and, with travel impossible, Jones agreed to stay on to make the vintage. The 2021s will be the first wines over which Fourrier had complete control, from vineyard to winery – albeit from afar (“My first digital harvest,” he says, laughing). He’s in constant conversation with the team, talking every couple of days (more during vintage), and very happy with the 2021s. “For me, I can really see the step up of where we want to go,” he says.  Australia’s borders are set to reopen in November and Fourrier plans – restrictions allowing – to be physically present for the 2022 harvest. With his son now 16, he plans a six-year transition in Burgundy so that he can spend more time at Bass Phillip, but he’s also exploring options in the US (he does, after all, have not one but two children). “For whatever reason, I have a secret dream: to make Chardonnay and Pinot in Burgundy, the US and Australia…” he confides. He has concerns regarding the Californian climate, with recent fires and excessive heat troubling his mind, but is considering higher elevations to combat this threat.  The Burgundian has big ambitions – but, fortunately, the talent to match. The world and these new terroirs are, for Fourrier, just “a way to diversify my passion to places I love”. He’s certain he’ll make mistakes along the way – that’s the nature of running a business – but, as he tells me, “Imperfections make the beauty of wine.”  Find out more about and browse listings from Bass Phillip, Domaine Fourrier or Jean-Marie Fourrier.

When Jean-Marc Roulot wandered through the family estate’s cellars one, seemingly ordinary day, he happened upon something unexpected. The vigneron had walked the hallowed paths innumerable times during his legendary father Guy’s life and during the 15 years since his sudden passing in 1982. But there, in a long-forgotten corner of the cellars, lay 12 dusty bottles of apricot liqueur. Jean-Marc knew all about his father’s production of pear and apple brandy, and his family tradition of producing marc de Bourgogne and fine de Bourgogne. The still, which he used and remains in operation today, dates back to 1866 and used to be on wheels so the family could move from village to village. So well-known was this distillation heritage, in fact, that Jean-Marc’s mother used to joke that the still paid for their vineyards. What came as a surprise to the actor-cum-winemaker was the existence of L’Abricot. “I had never seen him make this liqueur,” the 65-year-old says. “It was absolutely delicious and I wanted to try to find this recipe.” This discovery in 2008 set Jean-Marc on a mission to reproduce the liqueur from instinct, as no recipe existed, and increase the estate’s staple of brandies, eaux de vie and liqueurs. In some instances, the winemaker was able to follow recipes and meet with fruit producers to reinstate his father’s relationships. For others, he had to forge his own path. “I wanted to reconnect with that [tradition],” he adds. Jean-Marc says he’s always had a passion for distillation, having learned the skill from his father, and feels it has influenced his winemaking. When distilling, Jean-Marc focuses on two things: purity and authenticity. When asked, he says it is of paramount importance that the end product tastes like the fruit. It seems obvious, perhaps, but this is not always the case with overly saccharine fruit-based liqueurs. In order to achieve these two things, Jean-Marc has reduced the sugar levels over time – from 180g/l sugar 10 years ago to 160g/l in the latest iterations. “Sugar is of course a flattering element in a liqueur, but it can also mask the fruit,” he says. “By lowering the sugar levels, I feel like I'm putting the fruit forward.” From more classic pear and raspberry to the most recent addition, lemon liqueur, Jean-Marc says the fruit choices have largely been emotive. “I chose to make a pear alcohol since my father already made this 40 years ago with fruits from the Hautes Côtes de Beaune,” he says. “He was doing the same thing in a much smaller amount with the raspberry than I am doing. For these two fruits in brandies, it is therefore a family tradition.” The pears are sourced from the same site in the Hautes Côtes de Beaune that his father used, while the apricots (previously from the orchards of Chave) come courtesy of Laurent Combier (of Domaine Combier) in the Rhône. While he used to be able to source them locally, raspberries are now hard to find – and these, along with his lemons, come from further afield (Bulgaria and Sicily, respectively). After finding the bottles of apricot liqueur and working with the fruit in that capacity, the idea occurred to Jean-Marc to ferment them to make brandy as well. He’s also turned his hand to lemon liqueur and doesn’t rule out further fruit experimentation, perhaps with grapefruit. When asked about these fruits in relation to terroir, Jean-Marc says he doesn’t think they can reflect their terroir “as well” or “as faithfully” as grapes. “Perhaps this is due to the size of the plant, the density of planting, the attention we pay to the work of the vineyard and all the care we take around the grape when it comes back to the winery,” he adds. “There is generally a ‘signature’ effect in grapes that I do not find in a fruit like pear for example.”  He does, however, think the distillation process has taught him a considerable amount. “As we are mainly winegrowers, we seem to think that our knowledge on this subject has influenced the work on the still, but I sincerely believe that the precision that distillation requires has influenced us in the other direction, towards our work as a winegrower.” One senses Jean-Marc’s discovery of those 12 unassuming bottles all those years ago had a much greater impact on him than merely influencing his production of superlative wines, and now, his fruit brandies, eaux de vie and liqueurs.
