Long ago, we wrenched grapevines from their natural habitat. Enthusiastic creepers, their shoots and tendrils are designed to cling onto whatever they can as they grow; winding themselves around trees or other plants in the wild. But we dragged vines out of the forest and forced them into rigid trellises, taming their wayward growth to produce a crop that served our purpose. Now, however, there’s a movement to re-integrate trees and plants into viticulture.  Cheval Blanc is one of the most famous proponents of agroforestry, which is a key part of its manifesto on a modern approach to viticulture. Augustin Fromageot – who now works full time at Anjou’s Domaine Belargus – was one of the team involved in the project, planting over 4,000 trees at the estate in two years. Until then, Fromageot – a trained geologist – had been working in South America, largely in cocoa and coffee, but the vine was calling. The team converted the estate into a laboratory of sorts – experimenting with different ways to integrate trees, within rows, replacing rows, in copses and borders or any other way you can imagine planting them alongside vines, all set to be followed in scientific programmes to track what works and what doesn’t. Now he’s doing a similar thing at Belargus, managing their extensive nature reserve and working to increase biodiversity on the estate – working to manage the landscape, as he sees it.  It’s an oversimplification to suggest that vines have gone directly from wild creepers to industrialised monocultures. Historically, farming was poly-cultural, a smallholding contained everything a family needed – and vines often formed part of that. Pergola trellising, for example, allowed for other crops to be planted beneath, while trees being used as a living trellis was not uncommon – often referenced as married vines, the Roman method of arbusta (favoured by Pliny, for example) – and grown alongside each other, culture en hautain, cultura mista or joualle. It’s this latter method, favoured in southwest France a century or so ago, that Cheval Blanc has in part been trialling, with individual trees replacing vines within a row. It looks beautiful, however brings its own complications, limiting mechanisation. It is, as Fromageot, says, a “poetic” way to integrate trees. You’ll still find vines trained up trees in Bolivia, in the Cinti Valley (as for the Jardín Oculto project), although these are ancient examples – and few would plant vines like this today. It’s an impractical way to farm, at the end of the day, one that only worked on a very small scale, but it’s clear that industrialisation has pushed monocultures too far – and agroforestry is one way in which producers are trying to fix the damage done.  Trees are remarkable in many ways, but they can have a huge impact on a vineyard. Their physical presence can influence the microclimate – protecting a vineyard from frost, heat and wind, as well as acting as a physical barrier between neighbouring properties – preventing any unwanted sprays drifting into your vines. They increase biodiversity – providing a habitat for insects and animals, in particular bats, and they absorb carbon dioxide. They reduce soil erosion (with topsoil erosion a major threat to agriculture worldwide) and increase organic matter, which in turn increases soil’s water-holding capacity – a major plus in dry regions. For Fromageot, trees help to create a resilience in the vineyard, reinforcing the vines’ natural defences, and therefore reducing the number of treatments required.   It’s easy to look at such a list and understand the principles at play. Clearly there are benefits for the environment – but what does it mean for the wine in your glass? Well, a lot, potentially. As few as five trees will influence the microclimate in a 100-metre radius; they can reduce the temperature in a parcel by as much as 2-3°C, preserving acidity, lowering alcohol and retaining precision in the aromatics. And, shielding a vineyard from extreme frost or heat, as well as providing better water reserves in the soils, allows for a more consistent yield, all of which is beneficial with climate change – with both more extreme weather conditions and global warming.  Of course, it’s not quite as simple as it sounds. “It teaches us an immense humility,” Fromageot tells me, as I start asking him about the world of agroforestry, and more specifically vitiforestry. He’s more than aware that agroforestry has become a buzzword in wine – it's suddenly very trendy. But there’s a lot of work involved in planting and managing trees. For starters, deciding where and how to plant trees is key. Their ability to influence microclimate can be both good and bad – with the potential to create frost pockets, to increase humidity, reduce airflow and therefore disease pressure. “You need to read the landscape,” Fromageot explains.  You also have to decide what sort of tree to plant, as well as the rootstock, ensuring it will complement viticulture. The first thing Fromageot does when taking on a project is look at all the local nurseries to understand the native varieties. Fruit trees are common, but as he notes, you need to ensure it has a different harvest time to grapes to avoid any conflict – he looks to apples, pears and prunes, in particular, highlighting how challenging peaches and apricots can be. Otherwise, the likes of maple, ash, mulberry, black poplar, hornbeam and linden can all work – essentially trees that share the same type of mycorrhizae (the microorganisms that attach to roots) as vines. You want to avoid anything that might taint your wine, or anything that will inhibit growth – such as walnut trees, which produce a toxic compound, juglone.  Trees have significantly different requirements to vines, needing different equipment and expertise to thrive, with – for example – extensive fertilisation to establish trees, which need richer soils. Trees will – wherever they are planted – occupy space that could otherwise be used for vines, yielding additional crop. And it’s a slow process, with it taking around a decade for trees to start influencing viticulture in a meaningful way, says Fromageot. All of this costs time and money – making agroforestry a luxury that not all producers can afford, although Fromageot feels that trees can be integrated in a different way for producers working at scale.  Alain Canet – an agronomist and specialist in agroforestry – argues that re-introducing trees is crucial for agriculture. “For some soils it is already too late,” he writes. “But for most, we have time to act... In agroecological terms, the transition to trees is the transition to life.”  There are many scientific reasons to favour vitiforestry, but for Fromageot there is a more compelling reason: the landscape fixes people to a geography, to a place, and that – he argues – is essential for making fine wine. Beauty in the landscape you live and work in helps us “find sense in life”, he tells me. Romantic? Maybe. But with the science to back it up, it’s hard not to be persuaded that trees line the way to a more sustainable future – in wine, yes, but in wider agriculture too.

“It’s been an absolute pig of a year,” says Mark Gaskain. It’s September 2024 and we’re reaching the end of what has been a trying growing season across most of Europe – with seemingly never-ending rain. Fortunately, Gaskain knows that such challenges are just part of the job. He’s a farmer, born and bred, now at the helm of his family business, and responsible for growing 70 million apples a year. But in the last decade, he’s added a new strand to the business – after selling a swathe of land to none other than Champagne Taittinger in 2015. That land is now the home of Domaine Evremond – one of the most exciting English wine projects to date.  The story began almost a decade ago. Patrick McGrath – founder and CEO of Hatch Mansfield, which represents Champagne Taittinger in the UK – had been looking at adding an English sparkling wine to the company’s portfolio. It was the early 2010s, and he spied an opportunity with the burgeoning category – but Pierre-Emmanuel Taittinger suggested that, rather than taking on an existing estate, McGrath should create his own, working with Taittinger. Taittinger had embarked on a similar venture in California, creating Domaine Carneros with their US agent, Kobrand, under Pierre-Emmanuel’s uncle, Claude. Together, they decided to take the plunge.  They charged leading English wine specialist Stephen Skelton with helping them find the perfect site – determined to have chalk soils, south/southwest-facing slopes (for maximum sun exposure) at altitudes below 100 metres (with temperatures reducing by 1°C per 100m, anything above this would simply be too cold in England’s marginal climate). Kent – with easy access across to Champagne – was decided on, but it took them 18 months to find the right site. At the same time, the Gaskains were looking at selling some of their land (a foray into soft fruit had proven challenging, and were looking to get back to their core business of apples). The timing was fortuitous and the orchards at Stone Stile Farm – around the village of Chilham, southwest of Canterbury – were perfect. As Alexandre Ponnavoy (Chef de Cave for both Taittinger and Evremond) told me, if a site can grow good fruit – it’s a good indicator for its viticultural potential.  In 2015, the deal was signed and the project launched with great fanfare at Westminster Abbey. Domaine Evremond takes its name from Charles de Saint-Evremond (1614-1703), a Frenchman, essayist and early ambassador for the wines of Champagne – bringing them to the court of Charles II – who is buried in Poets’ Corner. Although Didier Pierson – a grower in Champagne – had made English wine under the Meon Hill label, Taittinger was one of the first major Champagne Houses to invest in England (Pommery had bought vineyards in Hampshire in 2014). Unsurprisingly, press coverage was extensive: the Champenois were coming to make sparkling wine on our home turf – the French naysayers set to eat their hats as the world started facing up to fine English fizz.  Evremond’s first vines went in the ground in 2017, with more added in 2020 (the team set up at the local Premier Inn to tackle the work mid-pandemic) and in 2024. The land here has a layer of alluvial clay over its chalk subsoil which is part of the Paris basin, shared with much of northern France (including Champagne). Around Canterbury, however, there’s more flint in the soil – something that Ponnavoy feels shines through in the wine, giving it a mineral, reductive character. There’s also a definite maritime influence – moderating temperatures, but also bringing ocean breezes from Whitstable, which is just six miles away. For Ponnavoy, it’s the combination of the site’s chalky soils, maritime softness and sea winds – a “contrasting climatology” – that defines the Evremond wines.   Gaskain is deeply involved in the project – his in-depth knowledge of the land an invaluable resource, knowing where potential frost pockets lie, for example, or where the soil might be overly rich for vines. He and his team manage the site day-to-day, guided by Christelle Rinvelle (Taittinger’s Vineyard Director). Currently, they have 62 hectares of vines, split between 45% Chardonnay, 45% Pinot Noir and 10% Meunier. They planted Chardonnay on areas with the thinnest topsoil, allowing its roots almost direct access to the chalky bedrock, while the Pinot Noir and Meunier sit on the more clay/gravel-rich plots.  The vines are widely spaced (5,000 vines per hectare – half the vine density Taittinger uses in Champagne) and trained higher than across the Channel, allowing for better airflow (helping manage disease pressure) and a larger canopy (to aid ripening). While herbicides have never been used on the site and there’s a concerted effort to be sustainable, Gaskain is clear on the limitations of viticulture in Kent: “Organics is madness in this climate,” he tells me – as, perhaps, 2024 proved. While the team has vine-specific sprayers, Gaskain can also draw on his team’s orchard equipment too – a boon when conditions are challenging – and spray the entire site in one (rather long) day.  They harvested tiny quantities of fruit in 2018 and 2019, with the first commercial-sized vintage coming from 2020 (conveniently the grape harvest falls neatly between that of Galas and Braeburns). Early wines were made at nearby Simpsons, and from 2020, they set up in an old concrete barn on the site – with the entire operation run on a generator. In June 2022, they broke ground on a new winery (“We were over budget four weeks after starting,” says McGrath, with a weary smile). The same company that worked on the Channel Tunnel dug out 83,000 tons of chalk (around 2,000 lorry loads) to make way for the three-storey building that stretches 20 metres below ground. Designed by Reims-based architect Giovanni Pace, the idea is for the winery to blend into the landscape – rather than stand on it. It has the capacity to cellar 1.5 million bottles – all without expending any additional energy on cooling, thanks to its natural subterranean chill.   Works were finished in time for the 2024 harvest – a relief undoubtedly for the team. There is something charmingly British, slightly ramshackle and underdog about the operation – despite the very serious money behind it (£17 million invested so far, reportedly). “Everybody’s had to muck in,” says McGrath. He might be Hatch’s CEO and one of the Evremond founders, but he’s also the first to pull on his wellies to help with harvest – and has spent more weekends in the vineyard than anyone else. Vitalie Taittinger has taken over from her father as President of Taittinger, and McGrath’s daughter India is running the commercial side of Evremond – meaning the operation really is a family business, even if it comes with some luxury, Champenois-esque swagger.  With the Taittinger association, of course, expectations are incredibly high – something McGrath is painfully aware of. Talking to Ponnavoy – who is in charge of the winemaking at both Taittinger and Evremond – there’s been something very exciting about creating a project from scratch, even if it has come with some challenges too. He argued to keep the small 2018 harvest for the property only, allowing them to follow the wines in tank over several years, and get to know the site. It was a huge cost, and delayed the first release, but something he felt was crucial.  “It was really important not to do a copy of another sparkling wine, not to produce a… ‘style’,” he says. Their goal, instead, was: “To identify the terroir, to identify the soil, to identify the climate, and reproduce all that in the bottle. To find the Evremond identity.” Inevitably, there’s a temptation to draw comparisons between Taittinger and Evremond, but the team is clear that they are totally separate projects with very different DNA.  Working with English fruit, Ponnavoy felt it was key to manage the potentially biting acidity (and the wine sees full malolactic as a result), but – for him – the greatest challenge was to avoid a bitterness that he finds common in some English wines. Managing the phenolics to avoid this was, for him, therefore essential, while he also focused particularly on the bubble texture – working to get a very fine mousse, something that he believes sets the wine apart from the competition.  In time, Evremond hopes to make 400,000 bottles a year, although there are only 120,000 of its first release. There are plans to add a vintage and rosé cuvée once the vines have matured and they’ve gotten to know the site, but for now they’re only producing the non-vintage Classic Cuvée. Now, a decade after they bought the land, Edition 1 of the Classic Cuvée is set to be released. For a début, it’s an incredible result – perhaps not surprising given the pedigree of the operation. Incredibly fine, taut and layered with oyster-shell, iodine and flint, it’s a wine full of the promise of what Evremond can do.  Domaine Evremond’s Classic Cuvée Edition 1 will be released on Thursday 3rd April: contact your Account Manager to register interest or sign up to be notified here

It will likely come as no surprise that our team entered en primeur week this year with a certain degree of trepidation. Ever since the 2023 growing season ended, the general press surrounding the vintage has largely focussed on the negative; absorbed with the struggles faced by the vignerons rather than the highlights. Bordeaux-bashing is a facile yet favourite pastime for some, and this has led to some collectors and even merchants pre-emptively dismissing the vintage out of hand – before the wines have even been tasted. The Bordeaux marketing machine, it must be said, should take its share of culpability for this attitude. Too often the hype surrounding solar vintages, with phrases such as “best ever” practically shouted from the rooftops, leaves both the press and collectors thinking that anything less than a string of superlatives means the new vintage is a dud. There is no room for middle ground or a happy medium. Enter 2023. We started our week in Saint-Estèphe – historically a tough place to make truly great wine in any but the most relaxed growing season. Starting with Calon Ségur, making our way through the range, culminating with the Grand Vin, it gradually dawned on us that these wines aren’t just good, aren’t just classic; they’re something else entirely. Our next visit, at Montrose, cemented this. It is certainly one of the vintage’s highlights and confirmed beyond any doubt that it was absolutely possible to make exceptional wine in 2023. Our full vintage report, due next week, will cover the ins and outs in more detail, but suffice to say that through our tastings across the Left Bank we found plenty to get excited about. A vintage in which Cabernet Sauvignon took the fore (at many châteaux it represents the highest ever proportion of the final blend), fans of Pauillac, Margaux, Saint-Julien et alia will find a great deal to like in the classical freshness of dark-berry fruit, spice, graphite and cedar aromas. In the best wines, this is balanced by a more modern palate of suave tannins, depth of flavour and elegant but plush-textured bodies, donated by the (largely unreported) warmth of the growing season. As for the Right Bank – having lived and worked in Saint-Emilion in my 20s, entering the town always feels a little like homecoming for me, but this year it was tinged with foreboding. Merlot had struggled on the Left Bank, and we were concerned as to what we would find on the other side of the river, where it is the dominant grape. I was therefore relieved and frankly delighted to discover that our fears were largely baseless. Throughout our tastings across properties in Pomerol and a few in Saint-Emilion (several of our team remain in Bordeaux and will visit more châteaux here on Monday), we actually found a higher level of homogeneity than on the Left Bank. Some strikingly beautiful wines have been made. Characterised by delicate floral and mineral aromatics, sensual tannins and pure, precise flavours, terroir really shone through in 2023. Many of the absolute highlights of the vintage can be found here – I left Cheval Blanc wondering which kidney I could sell in order to get my hands on some (a moot question as after 15-plus years in the industry, nobody would pay money for my kidneys). Lafleur was so special I don’t want to sully it with hyperbole. Anyone who tells you there were no great wines made in 2023 didn’t put in the effort to travel to the region and taste properly – it’s as simple as that. As to the market, there is no getting away from the fact that conditions are tough. Through our extensive conversations with the châteaux, we are relieved to confirm that they are well aware of this, and it is now all but confirmed that action will be taken in the form of significant price reductions. As was the case with the 2019 vintage, this is an exciting prospect for Bordeaux lovers. William Kelley neatly summarises this in his report, released just two days ago: “Word in Bordeaux was that the 2023s would be released at significantly lower prices than the region’s last three vintages. If that is so, consumers will have the opportunity to acquire exceptional wines for an attractive price.” With releases due to start as early as tomorrow (with Ch. Batailley), and with the First Growths and other top châteaux promising to lead the way and set the tone, there is little time for us to unwind the many mis-informed vintage pre-conceptions. I will therefore end by saying this – as is the case with all vintages, there will be triumphs, and missed opportunity for others. Some châteaux will listen to the market and release at reasonable prices, others will allow ego to dominate their decisions and make costly mistakes. All eyes are now on Bordeaux for what is undoubtedly a pivotal en primeur campaign. Bordeaux 2023 – first thoughts on the vintage

Bordeaux 2023: redefining “classic”

En primeur is the system of buying unfinished, young wine, essentially as “futures”. The wines are sold while still maturing in barrel, and shipped once bottled to wine-lovers around the world. Bordeaux pioneered the system, and it remains important in the region, although en primeur has now spread and wines from Burgundy, the Rhône, Italy, the US, Australia and beyond are now all sold in this way. But how did it start? 
While consumers have only been purchasing wine en primeur since the 1980s, wine has been sold “unfinished” to merchants for centuries. Traditionally wine was not bottled or sold by the châteaux; once the wine went into barrel it would be transferred to négociants who would age the wine in their warehouses in the Chartrons district of Bordeaux, and be responsible for their sale and distribution – an unseemly business that didn’t sit well with the noble château-owners. The wine would then either be bottled in Bordeaux or shipped on in barrel to markets like the UK, and bottled for sale to consumers there. 
While Bordeaux might seem glossy and polished today, with its grand châteaux, manicured lawns and immaculate wineries, the region’s wine industry has not always been so prosperous. In the mid-19th century, mildew arrived and devastated much of Europe’s vineyards, followed by the arrival of phylloxera, killing vines and forcing producers to, eventually, replant. When winegrowers had recovered from Mother Nature’s attacks, the First and Second World Wars arrived, bringing further economic challenges. Producers needed ways to finance their operation, while merchants were always on the lookout for a way to secure stock and the best price possible. 
As producers struggled, they resorted to selling grapes while still on the vine, “sur souche”, agreeing a price based on the previous vintage and gambling on the final quality of the crop. Sur souche sales continued into the 1960s – eventually waning after producers were burnt by the low-yielding, excellent and woefully undervalued 1961s. When times were particularly hard, châteaux – even the most fabled addresses – committed to selling their crop for up to 10 years at a fixed price to a merchant, tying themselves into an “abonnement”, guaranteeing a base level of income, but losing out on potential profits if or when prices rose. 
Up to this point, early sales of wine (or grapes) had only been to négociants in Bordeaux, but the 1973 oil crisis prompted a shift. The subsequent crash left producers, négociants and every layer of the wine trade in dire need of funds. Having struggled to sell the 1972 vintage, châteaux didn’t have the money to invest in the production of the challenging ’73 and ’74 vintages. The 1975 growing season arrived with more favourable conditions and the wines showed promise; samples were shipped to London for buyers to sample and sell.  
En primeur really took off, however, with Bordeaux’s 1982 vintage. Robert Parker had started writing his newsletter in 1978, introducing the world to his 100-point rating system for wine. He came out early with a firm endorsement of the 1982s, and urging consumers to buy them; when others were less convinced. Many, especially in the US, took the opportunity to buy up the wines en primeur – and were duly rewarded, with the vintage now considered legendary. 
The early sale of the wines eased cash-flow problems for producers and négociants, while merchants and consumers benefited from being able to secure stock of wines at a favourable price. As en primeur sales grew, properties became much more profitable businesses, able to funnel investment back into their vineyards and wineries. At the same time, ownership of estates was shifting. In 1981, inheritance taxes doubled, making it harder for families to keep châteaux and companies – from insurance to luxury goods and everything in between started buying up properties. While some corporations focused on quantity rather than quality, many arrived with the necessary finances to push quality forward. The 1990s saw many estates introduce second wines, allowing them to further elevate quality of their Grand Vin, and Parker’s influence continued to grow. All of these elements combined to see Bordeaux as a region and its wines evolving at pace – giving even more reason to secure a new vintage up front. 
For consumers, en primeur provided a way to secure the most sought-after wines at the best prices. In top vintages, the wines offered significant returns too – and speculation ensued. The wine market expanded, with new interest from Japanese and Chinese buyers. The market exploded when Hong Kong abolished tax on wine in 2008. The frenzy built and prices rose – with the top-rated 2009 and 2010 vintages hitting new, inflated highs. En primeur no longer offered the safe return it had. The bubble burst. 
Châteaux, merchants and collectors were all stung, and there is now greater awareness of potential inflation in the market. This consciousness and understanding has settled the market and made en primeur relevant once more, although fortunately without the speculation of previous vintages. 
In 2012, Ch. Latour announced it was abandoning the en primeur system – deciding instead to offer wines only when they are ready to drink, with 2011 the last vintage to be offered as futures. It was a significant blow for en primeur to see a First Growth abandon the system, but while there was a fear this step could open the floodgates, no one else has yet followed the First Growth. 
Today, en primeur remains significant for Bordeaux. In April of each year, the world’s wine trade descends on Bordeaux to taste the latest vintage (harvested the previous year). Organised by the Union des Grands Crus de Bordeaux, the “Primeurs” week is an impressive publicity machine, focusing attention on the region – and while the spotlight might be on the very top properties, there’s a clear halo effect for the entire region. 
There has been a move for estates to hold back a little more stock, some of which may be offered ex-château at a later date, but most Classed Growths still sell between 70 and 90% of their entire production en primeur.  
The benefits for Bordeaux and its châteaux are clear, but what is in it for those wanting to buy the wine? Many of the reasons to buy en primeur are unchanged. There are no guarantees that you’ll make a financial return with en primeur, but inevitably wines do become rarer with time; as wines enter their drinking window, they become more desirable (and often increase in value), and over time they become scarcer, as bottles are uncorked and the finite supply of a specific vintage dwindles. As such, en primeur can offer a useful way to secure stock of wines, particularly those from small, sought-after properties which can be near-impossible to obtain after release. 
Buying en primeur also offers flawless provenance. The wine will move from the estate to wherever you store your wine, and then once more when it is withdrawn for consumption, ensuring optimal maturation conditions, and retaining maximum value should you decide to sell rather than drink. An additional luxury of buying en primeur is being able to buy any format; as the wine isn’t yet bottled, you can purchase half-bottles, magnums, jeroboams, imperials or any other size you desire easily. 
While critic scores certainly still influence the sale of wines, no single voice has the power that Robert Parker had in his heyday. Today, there are more critics than ever before – with individual writers breaking away from larger publications like the Wine Advocate to create their own platform, each with their own tastes, offering different perspectives on the vintage – arguably giving consumers more information than ever before. 
It’s little surprise that other regions have adopted the system, with Burgundy in particular embracing en primeur. Opportunities undoubtedly remain – as a vintage like 2019, sold in the midst of 2020 and the Covid-19 pandemic shows. Faced with an uncertain market, producers dropped their prices and consumers flooded to buy Bordeaux’s wines. The vintage turned out to be spectacular, with buyers justly rewarded for investing in the wines. When a vintage is good, and the pricing right, there really is nothing like the palpable buzz and excitement that the Primeurs season brings to the world of wine.

Each year, key fine wine regions offer their wines en primeur, or as “wine futures”, but it hasn’t always worked this way. Sophie Thorpe dives into the origins and history of the system – and what it means for wine-lovers today

The grey horse stretches its neck out towards me, curling its lip towards my outreached palm, before nuzzling my pocket, in search perhaps of a potential snack. Its head is the size of my torso, its hooves the size of my head, with the entire beautiful beast weighing circa one ton, I’m told. You can sense the power of its immense muscled mass. Nearby, Adelaide Bonnefond, a petite 20-something is calling to the rest of her troupe of friendly giants. Balthazar – the aforementioned grey – is “a real lazybones”, Baudoin can be a bit fast and over-eager, while Olive is a horse of remarkable patience. “Each one has its own character,” Bonnefond says.  We’re in a field a stone’s throw from Ch. Pontet-Canet, where the property’s 10 horses spend their weekends and holidays. This Pauillac Fifth Growth is one of a handful of estates around the region, and indeed the world, that has returned to using horses in the vineyard – in lieu of modern machinery. Unusually, they have brought this operation in house – with their own stables and a five-strong team dedicated to grooming, handling and working the horses, led by Bonnefond.  “I have no idea,” says Mathieu Bessonet – the property’s Technical Director – when I ask how much it adds to their bills. “It’s not important for us… it’s a philosophy.” Herbicides were banned long ago at the estate, and they’ve been farming organically since 2004, certified organic and biodynamic from 2010 (the first Classed Growth to achieve the latter), with horses first introduced in 2008. They’re just one form of livestock you’ll find on the property. When I arrive, a drift of pigs is penned on the front lawn, tasked with munching on the invasive weed, common couch or quackgrass – but there are cattle and donkeys too. Collectively, they consume 60 tons of hay, three tons of barley and 600 kilos of lucerne (organic, of course) – much of which will end up back between the vines.  “A lot of money goes into taking good care of this place – what is in fact our tool for production,” says Bessonet. “The property is over 300 years old, so we’re just passing through. If I spend 20 years here, it’s a long time – but it’s only 3% of the history of Pontet-Canet. We have to take care of this place to be able to pass it on.” And working with horses is just one way in which they aim to do this, reducing soil compaction, allowing water, air and microbes to move through the soil. They can be more precise with their work and – most importantly – break fewer vines. A stunning number of vines are knocked out of place by tractors, something that is considered a natural consequence of modern farming – but not one that this estate is willing to accept.  “Wine, it’s made by the roots of the vines,” says Bessonet. As vines age, their roots creep further down into the soil and Pontet-Canet has some of the oldest vineyards in the Médoc, averaging 55 years in age. And it is the age of their vines, Bessonet feels, that “allows us to express the terroir”, as well as tempering climatic extremes (a growing concern with climate change). While it wasn’t a key reason for the shift back in 2008, using horses also allows them to reduce their carbon footprint – both by using fewer fossil fuels and increasing the carbon-holding capacity of their vineyards, something that is at the forefront of producers’ minds today.  The switch from tractor to horse has changed the way they farm more than can be measured in analytical results, however. “They are not little machines; working the vines with horses, we really become one with the vines,” says Bonnefond. The way you interact with an animal versus a machine is totally different, and she feels that as a result they are much more reactive, more aware of their work and able to stop at any moment. And, as Bessonet notes, even those that have worked at the property for 10 or 15 years can’t help but smile when the horses pass by. As any good manager knows, a happy team will pay endless dividends.  Back in 2008, they started with just two horses, but that number has grown to 10 today. They have a combination of breeds – Percheron and Comtois largely today, although they’ve had Bretons in the past. Percherons are larger, and they’ve been moving more towards Comtois, favouring the slightly smaller and even more gentle breed that hails from the Jura. All are draft horses, historically used in war and agriculture – weighing around double that of the daintier breeds you might see eventing or show-jumping.  Bessonet’s grandmother was, he tells me, almost insulted when he told her they were using horses – seeing it as a step backwards; but, as he and Bonnefond explain, the work is totally different to that of generations past. They might not be powered by electricity, but modern technology and know-how is being used to refine the way they work and the implements they use. Over the years, they’ve developed lots of tools themselves, and worked with a local business to craft others – a slow process that can only be tackled by those with a truly long-term vision.  They buy horses when they’re around three or four years old, so they’ve been broken in and have started their training but can be finished and finessed in-house (“They know the commands, but they’re still young so don’t necessarily listen,” explains Bessonet. “They’re teenagers!”). They’re unsurprisingly picky about the breeders they work with, and ensuring that the training received in their formative years is up to scratch. By the time the process is finished, the moment the plough touches the trunk of a vine, a horse will know to stop instantly, not even needing a human command, avoiding any significant damage. They have a mini faux vineyard with a handful of short rows lined with posts (but no vines) on the estate, a sort of school where they can train younger horses and use at the start of the season, spending half a day so the animals can get back to the pace of work.  Monday to Friday, the horses are at work, stabled next to the winery (with stalls crafted from old barrels). Each horse will work for half a day (sometimes longer if the tools they’re pulling are sufficiently light), before being walked back to the stables to allow for active recovery – evacuating lactic acid in their legs, something that is essential to maintain their health. With the time to groom, harness and unharness, wash down, muck out and feed the horses, each will work around three hours or so a day. Bonnefond’s team will take one horse out in the morning, before going back out with a different one in the afternoon. Alongside their work, the horses are lunged (moved in a circle around a handler, on a long lead rein) – working both on commands and their flexibility. “To change their minds too, seeing something other than the vines” explains Bonnefond.  There are around 10 passes per row a year, four or five to work the soils and around five others – spraying to protect pruning wounds (to prevent grapevine trunk diseases), making holes for planting new vines, spraying horsetail to control mildew pressure, as well as the 500 and 501 preparations (biodynamic sprays). Today, around half of the property’s 81 hectares is worked by horse – and the team is always working to do more, but Bessonet is unsure if 100% is a realistic goal. Copper sulphate – the main spray used in organic and biodynamic viticulture – is spread by tractor, not being something they’d want to expose the horses to (nor put gas masks on them, as was done during the Second World War).   The work is, inevitably, seasonal – and they’re turned out to pasture at weekends and during quiet periods, with lunging to keep them sharp. As soon as véraison takes place (the grapes changing in colour from green to red), “It’s holiday time for the horses,” says Bonnefond, laughing. At that point the grapes become too fragile and could be knocked by the horses, breaking the skins and damaging the fruit.   All being well, the horses work until they’re 18 or 20 years in age, and then Pontet-Canet finds them a home to live out their old age. Retirement can, in fact, be the hardest stage for these work-horses, explains Bonnefond. “They’re used to seeing everyone every day,” she says. One horse, Turbo, kept waiting at the gates, ready to go to work, for well over a month after he’d left the estate, struggling to adapt to his new, restful way of life.  Bonnefond had never worked in agriculture before arriving at Pontet-Canet, having been at an equestrian centre, and her team has similarly varied backgrounds (one used to train trotters and one worked with circus horses, for example). They’ve each got their favourites in Pontet-Canet’s herd, she confesses (hers is a handsome bay who is especially energetic), but they all work with each of the horses, to keep it interesting for the animals, and so that no horse gets too used to any particular handler.  It's certainly not light work – for Bonnefond and her team at least. Days are long and the work is physically demanding, but seeing Bonnefond in the field with the horses, her dainty frame at odds with the gigantic draft horses surrounding her, it’s clear that she loves it. Having a team like this in-house is something few estates can afford, but it’s reflective – as Bessonet says – of the philosophy at Pontet-Canet. Their special band of gravel terrace in the Médoc, shared with the likes of Mouton Rothschild, Lafite Rothschild and Cos d’Estournel – properties that represent the pinnacle of Cabernet Sauvignon around the world, deserves to be protected and preserved in every way possible.  Explore all current listings of Pontet-Canet or read more about Bordeaux

Taking the reins at Ch. Pontet-Canet

Ch. Rayas is truly special. The estate’s bottles – with their classic, simple red-and-black design and distinctive triangular neck label – command instant respect amongst afficionados.  Pure Grenache grown on the estate’s sandy soils, this remarkable Châteauneuf-du-Pape transcends its appellation. The wines are perfumed, pretty and elegant, with extraordinary finesse – reminding more of red Burgundy than the bolder wines that the Rhône is often associated with.   The Reynaud family has owned the estate since 1880, and their determined avoidance of any publicity has only increased the property’s allure. Indeed, it’s perhaps this, combined with an off-hands approach in the winery, that means they are one of the few producers to broach the fine wine-natural divide – lauded equally by more traditional fine wine drinkers and the natural wine brigade. Held back and only released once mature, in tiny allocations to markets around the world, the wines are incredibly hard to get hold of.  Earlier this year, we arranged a special dinner tasting through 22 wines from the estate – three of its rare white Châteauneuf-du-Pape and 19 vintages of the flagship red, stretching back to 1990. The vertical offered unique insight into the estate, its character shining through in each wine on show.  Indeed, it was the freshness of the wines that amazed everyone in attendance – including longtime fan and Wine Advocate Deputy Editor William Kelley – stamped on every wine.  Only 400 cases a year are made of the Châteauneuf-du-Pape Blanc, from two hectares of Clairette and Grenache Blanc, fermented and aged in old oak. White Rhône is a wine for true geeks – and this is an exceptional example – a wine about texture and minerality, almost approaching Grand Cru Chablis in its pure stoniness. Suited perfectly to pairing with all sorts of food, it was clear – even with just three vintages of this unicorn – how well it ages, the 1999 still an outstandingly fresh and fine wine.  Of course, the reds were the main event. Much to everyone’s surprise, it was the so-called “off-vintages”, years that might be deemed “lesser”, that were the most impressive – it was in these bottlings that the singularity of Rayas shone through, over-riding the character of the appellation or year.   The 2008 (given “only” 93 points by Parker back in 2012, upgraded from its original 90 in 2010) was the wine of the night for most people. By contrast, the top-rated 2009 from a blockbuster vintage was impressive, yet the vintage ever so slightly masked the Rayas style – making the wine feel more like another (very good) Châteauneuf-du-Pape.  Overall, the wines showed an effortless timelessness – drinking beautifully now, yet clearly showing the potential to evolve for another 10-15 years or more, depending on the vintage. The more mature wines might show evolution on the nose – with tertiary sous-bois notes – but on the palate, there remained a remarkable energy and vibrancy, with immense clarity of fruit. On several vintages a citrus, almost orange, note shone through, with a mineral thread and juicy acidity. Despite the undoubtedly high alcohol levels, the wines were all amazingly delicate – with no heat from the punchy ABV. And the tannins were effortlessly integrated, remarkably soft despite the structure designed for the long-haul.  Tasting through this line-up was an absolute privilege; for these rightly revered, rare wines are incredible. With no new oak, they are all about the purity and quality of fruit. They show exceptional longevity, an ethereality and easy grace that mesmerises. Ch. Rayas: singular Châteauneuf-du-Pape

For good or for bad, the 2021 was a vigneron’s vintage, a year that required every bit of nous to circumnavigate the many issues that plagued the growing season. With an early budbreak and one of the latest harvests on record, it was a long and exhausting vintage for everyone involved. This was by no means a vintage that made itself – and its success was determined by the actions of man not nature. Whereas normally there tends to be quite a bit of variation between the sub-regions of Bordeaux throughout the growing season, in 2021 things were decisively challenging everywhere. All were initially threatened by frost, followed by mildew pressure, excessive rainfall in June, cool summer temperatures and a general lack of sunshine throughout the spring and summer months – only to be rescued in the final sunny weeks leading up to harvest. Some unlucky enough (mainly around Sauternes) also suffered hail damage prior to harvest. Despite the homogenously bad weather, the varying soils and varieties throughout the region all reacted quite heterogeneously, meaning some suffered more than others. Such were the manhours required in the vineyard in 2021, production and quality were going to be badly affected. Bear in mind this was all still at a time when Covid-19 was still a pressure point for employment, as noted by a number of wineries we visited. The mild and very wet winter brought an early and uneven budbreak, as early as 10th March in Pessac-Léognan and 15th March in Saint-Emilion – which was a full two weeks ahead of normal. This was followed by unseasonably warm weather, Ch. Figeac in Saint Emilion registered 25˚C, resulting in the vines’ quick acceleration of growth. With the vines already so advanced, the threat of spring frosts was all too apparent. Right on cue, temperatures plunged at night.  The 6th, 7th and 8th April saw black frosts cause significant damage across the region. Those worst affected in the classified sites were in Sauternes and Pessac-Léognan – with some châteaux in Sauternes witnessing their entire crop wiped out. The threat of frost was a prolonged agony for many, lasting right up until the 5th May, with temperatures recorded as low as -5˚C. For the Moueix estates in Pomerol, the combination of wind turbines and smudge candles could raise the temperature in the vineyard up by 2˚C – enough to protect the grapes. Other properties without such resources weren’t so lucky. Ch. Margaux's white wine vineyard is famously susceptible to frost. After installing a sprinkler system throughout the whole 8.5 hectares, the system malfunctioned, not working on 1.5 hectares where they lost everything (fortunately the remaining seven escaped harm). The frost damage was far from democratic, with estates within the same appellation seeing widely different levels of damage. As always, the châteaux on the Left Bank closest to the Gironde such as Ch. Léoville Las Cases and Latour came away largely untouched by the frost. Further north in Saint-Éstephe, châteaux such as Calon-Ségur and Montrose were also unaffected – not just due to their close proximity to the river. The cooler clay-rich soils of the appellation mean budburst is always delayed, and with the vines not as advanced, damage was limited. The risk of frost threatened Saint-Emilion for 10 days straight and led to a huge amount of work in the vineyards protecting the vines. The vineyards on the lower plains were worst affected, Croix Canon for instance, while Ch. Canon and neighbouring Ch. Berliquet up on the limestone plateau were spared, due to the vineyards’ fortunate south/south-west exposition – the brow of the hill protecting the vines from the freezing northeasterly winds. Vines basking in the sun at Ch. Latour If there was one moment of calm throughout the 2021 growing season, it came at flowering. Clement, dry weather engendered successful flowering, though rains arrived at fruit-set, leading to coulure for the Merlot. A huge deluge fell in June – as much as three times the month’s average rainfall. The damp, cloudy conditions saw the widespread outbreak of mildew that remained throughout June, July and into August. Bordeaux’s proximity to the Atlantic and the naturally high levels of humidity this brings have always made it susceptible to mildew, but for many vignerons we spoke to, this was the worst outbreak they had ever seen. The poor climatic conditions saw coulure and millerandage (the development of fewer and differently sized berries) badly affecting the Merlot on the Left Bank. This is why you’ll see such high proportions of Cabernet Sauvignon in the blends this year – with Cabernet being much less susceptible to both conditions. Despite the blanket attack of mildew, its effects varied from property to property. Ch. Margaux believed the mildew outbreak was the worst they had ever seen, yet for them, it never reached the grapes, only the canopy – allowing them to protect the fruit from damage. Perhaps their largely Cabernet Sauvignon plots made it easier to protect; Merlot certainly wasn’t so lucky. Further north in Saint-Julien, Ch. Ducru-Beaucaillou chose to leave the grass cover throughout the growing season to soak up the humidity and reduce the rain splash which spreads the mildew to the vines. Many sprays later and the yields were still significantly impacted; their Grand Vin is 98% Cabernet Sauvignon (the highest proportion ever) and production is the lowest on record, cropping at 20hl/ha. Ch. Pontet-Canet in Pauillac was devastated by mildew in 2018, losing two thirds of their crop. Despite the bigger outbreak in 2021, production was down only 15% – clearly having learnt how to better cope with the issue. The estate’s Justine Tesseron emphasised that you had to react fast to protect the grapes – you had to get out into the vineyards immediately after each rain episode to stop the spread. It was the year their newly built “tisanerie” came to the rescue, making them much more efficient in preparing their biodynamic sprays and reducing the overall impact. Many estates including Ch. Cos d’Estournel and Calon-Ségur carried out early de-leafing to reduce the impact of the disease. It was a huge risk. If the climate switched to more intense sunshine, the crop would have suffered significant sunburn. But the intensity of the sun, fortunately for them, was never that strong. With such high levels of rainfall in the summer months, the vignerons faced their next issue – a slow and uneven véraison. That moment where the energy of the vine switches from producing its canopy to ripening the grape is set off by a period of hydric stress – something which was not forthcoming in 2021. An event that typically takes place over two weeks was spread over four. The high rainfall also meant bigger berries and dilution was a concern, particularly as they edged towards harvest, worried the skins could burst and rot would set in. Fortunately, things finally started to dry up in August and, while temperatures remained mild, the grapes pushed through véraison. The September weather finally brought some hope for the vintage and, according to many vignerons, was their saviour. Sunny days and cool nights were ideal for grapes to concentrate, retaining freshness, while producing the beguiling aromatics that are so distinct in the 2021 wines. There was a little more rain in mid-September, most notably in the Médoc, which brought concern over rot, but any significant damage was held off by a dry and sunny October. Smudge pots or "bougies" between the vines, on hand to offer protection against frost The northern appellation of Saint-Estèphe was noticeably drier than appellations to its south, with hydric stress starting in July and “perfect weather” followed in August according to Ch. Montrose’s Lorraine Watrin. She compared the growing season to 2014, which was particularly successful in the appellation. By the end of September, throughout the regions, most of the Merlot was picked. Of course, the Sauvignon Blanc and Sémillon grapes, capable of growing in much cooler, wetter conditions, were much less affected by all of Mother Nature’s shenanigans. For the estates that avoided the frost, the whites reached good volumes and the fresh temperatures of the growing season proved ideal for the varieties. The whites were largely picked in the first two weeks of September and the top examples proved exceptional. For the reds, Mother Nature had one more card to play. Weather forecasts for the first weekend in October predicted heavy storms and more rainfall. With the large berries close to ripeness, a heavy storm could decimate the later-ripening Cabernets and would prove catastrophic for many on both the Left and Right Bank who rely on large proportions of Cabernet in their wines. With little choice, most ran the risk, and held out picking until the storms passed. Thankfully Mother Nature’s trump card was never played. Amazingly, the forecasters got it wrong, and the storms never came. Finally, the Cabernet was picked under sunny skies. Many châteaux such as Calon-Ségur held out as long as possible and were harvesting right up until 13th October – their latest harvest since 2012. What is extraordinary about the 2021 vintage is the complete inverse effects of the previous three years. Three vintages of relative drought, plagued with concerns over rising sugar/ alcohol levels, vines blocked from maturation due to hydric stress, and a genuine concern that the wines would lack full phenolic maturity, due to the compacted ripening season. Every one of these concerns was turned on its head in 2021, producing wines that are the opposite of the 2018, 2019 and 2020s. This unique season has put technology advances in Bordeaux to the test – from weather stations, UV boosting to state-of-the-art machinery – and at its best, they’ve defied the odds. A couple of decades ago, a growing season like 2021 would have produced very little wine at all, but today the Bordelais have proven that man can – at least for now – manage almost everything Mother Nature throws at them. What defines a fine wine? For many, it is a bottle’s ability to improve with age. A wine’s longevity is even seen, by some, as the ultimate measure of its quality. It’s true that aged wine can be some of the most memorable – capturing an essence of time that’s impossible to recreate. The ageing process can be central to a wine’s (or, for that matter, whisky’s) progression to another, unparalleled level of complexity. Yet how a wine ages remains something of a mystery to both winemakers and collectors. There is still a great deal of conjecture about how a wine will develop, why it does so, and whether it is even worth the wait. Unlike whisky, wine is much less stable on its journey into maturity. As Christian Moueix puts it, “Wine is a complex matrix of thousands of compounds suspended in a delicate equilibrium.” This equilibrium is fragile, age a potential threat and a wine’s trajectory therefore incredibly difficult to predict. There was a time when wine drinkers dismissed the New World. Today, fortunately, that’s not the case – and it’s rightfully acknowledged for producing fine wine. However, some snobbery remains. Drinkers tend – beyond a handful of the very top names – to drink New World wines much younger than their Old World counterparts. Ask any oenophile about the oldest bottle they’ve drunk, and we’d put money on it being from Europe – Bordeaux, Burgundy, the Mosel, Alsace or Douro. Of course, one element is undoubtedly availability. The traditions of drinking Bordeaux (even from modest châteaux), for example, at full maturity – 20 or 30 years down the line – is not uncommon, and these wines continue to be regularly traded among collectors. New World wines at full maturity are much more of a rarity. Many of the younger regions in the New World still haven’t had the chance to build up such an extensive back catalogue, yet the wines have everything they need to comfortably age as long as their counterparts. Burgundy maestro Jean-Marie Fourrier, who now also manages Mornington Peninsula winery Bass Phillip in Australia, is an advocate for New World wines’ ageability, with Bass Phillip’s Pinot Noirs a case in point. But he believes the reputation for a shorter drinking window is partly due to practical, economic necessity. “When you start making wine at a young winery, you need a quick turn over, a quick return on investment,” he says. Therefore, producers craft wines that can be drunk younger. It is only once a winery, or a region, is established that winemakers can afford to have a longer-term approach and deliberately make wines to age or hold back stock. In this respect, the established classical regions of Europe have hundreds of years of history to fall back on. Napa has long since proved its mettle producing wines that can age. But just what it is that allows a wine to improve with age has been a hot topic of conversation in the region for decades. Tor Kenward – of Tor Wines – recollects a conversation between himself, Robert Mondavi and another legendary Napa winemaker, André Tchelistcheff over 40 years ago. Sitting around a table, they were trying to determine the key factor that makes great wine age. Was it the winemaking? The quality or concentration of the grapes? Or was it all about harvesting at the right time? Tchelistcheff – who trained in Europe and, by this time, had been making wine in Napa for over four decades – contemplated the suggestions. High acid levels (low pH), high concentration of tannins and oxygen management were all tabled and, while he accepted all were important, for him, a great wine for ageing needed “flesh”. By this, recalls Kenward, he meant the grapes needed a certain type of ripeness – not over, not under, but perfect physiological ripeness. Forty years on and Kenward still believes Tchelistcheff was right, yet it is an aspect often forgotten in the discussion of a wine’s ability to age. Finding this perfect window of physiological ripeness can be a challenge in warmer regions, and a warming climate, and therefore remains an obstacle for much of the New World. These regions tend to be warmer than historically marginal wine-growing regions of Europe, and therefore grapes can ripen quickly, but with this fast ripening comes a risk of reaching sugar ripeness before the skins have had the necessary time to reach maturity. Christian Moueix is one of the world’s most experienced winemakers, having managed both Pétrus, Trotanoy and other top Pomerol estates, as well as Napa’s Dominus. He agrees with Tchelistcheff that picking the grapes at optimum ripeness is a hugely important factor when producing wines that can age. “If harvested too early, grapes have a smaller quantity of extractible phenolic compounds and […] may not have formed the longer chains and bonds that make them stable.” On the other hand, when overripe, “These phenolic compounds are degraded through oxidation.” For Moueix, the temperate climates in Europe are ideal for “developing and maintaining a high ratio of phenolic compounds”, whereas in many New World regions, there is a propensity for excessive heat, over-ripeness and therefore oxidative winemaking which he feels is, “likely to contribute to wines that age prematurely”. In warmer climates, Moueix believes, “extreme heat, enzymatic and physiochemical reactions degrade anthocyanins within the berry, lowering the concentration of total phenolic compounds and subsequently, the wine’s capacity to resist oxidation, leading to premature aging”. For Moueix, then, a temperate climate (whether in the New or Old World) is key to producing wines that can age. It is, he believes, the reason why Dominus ages so well. This corner of the southern Napa Valley is relatively mild, thanks to the San Pablo Bay’s cooling influence. This slows sugar accumulation and gives the berries time for the tannins to ripen. They also don’t use irrigation, putting the vines under more stress, producing small berries with high phenolic concentration. Like Moueix and Tchelistcheff, Fourrier believes picking dates and high concentration of tannins is important – but he ties this to vine age, rather than the microclimate. “As vines get older, the size of the berries gets smaller,” explains Fourrier. It is this that gives a high skin-to-juice ratio and natural concentration. For Fourrier, this natural concentration is what gives ageing potential – rather than any actions in the winery. All are in agreement that the ageing ability of red wines comes down to the quality of the berries, rich in anthocyanins (ideally then from older vines) and picked at the right time in order to extract them at their optimal level of ripeness. But these factors affect Old World producers as much as those in the New World. Paul Roberts – Master Sommelier and COO of Colgin in Napa – makes a compelling point that New World regions in the right climate regularly produce higher concentrations of tannins than the Old World’s cooler climates. In fact, they have to pay close attention to extract less tannin during the winemaking, not more, to maintain the balance in the wine for it to age. Colgin’s mountainside IX Estate vineyard on Pritchard Hill produces berries that are, on average, 30% smaller than those grown in Pauillac. Often, Roberts notes, Napa Cabernets have higher skin-to-juice ratios than the Bordeaux First Growths – and therefore much more “anti-oxidant” tannins than their Bordeaux counterparts. According to Moueix’s belief that it is the concentration of tannins and phenolics found in the skins that protects wine from oxidation and degradation, this should mean that top Napa wines have the potential to outlive Bordeaux wines at the top level. Andy Smith, winemaker at the Russian River’s DuMOL estate, makes some of the region’s top Pinot Noir and, like Colgin, has no shortage of tannins in his grapes. Compared to Burgundy, his Pinot Noir has smaller berries, “with uncommonly thick skins that create huge natural power if you choose to extract fully”. For Smith, “this leads to a potential for powerful, deep wines with high structure for aging, and high natural acidity”. Like Colgin, it is an overabundance of tannins that is more of a concern at DuMOL. “The key is balancing the extraction,” says Smith, “to take the positive and leave behind the excessive elements from the skins.” For leading Chilean winemaker Francisco Baettig (Errazuriz, Seña and Chadwick) it is an excess of tannin, and an excess of extraction in some more ambitious wines, in the New World that has tainted its reputation for producing wines with long ageing ability. “There was an obsession for creating monster wines, with lots of extraction, trying to extract as much tannin as possible,” Baettig notes, looking back 10-15 years. Many producers in Bordeaux were doing the same at the time, but the different climates – the same elements highlighted by Roberts and Moueix for leading to higher concentrations of tannin – influence the tannin and extraction. “In Chile with higher intensity and higher levels of ripeness, the extraction happens much quicker,” he explains. This resulted in over-extraction – “wines that were rough, too tannic and did not age well”. For New World producers, better tannin management is clearly key to producing wines that can age. Producers like Tor, Colgin, DuMOL and Baettig all believe gentle extraction of tannin and reducing the wines’ contact with oxygen is fundamental for ageing. In cooler, less sunny European climates, it could be argued that in the past, due to the less easily extracted tannins, producers could get a way with being a lot less precise in their tannin management. With this in mind, Baettig notes the Old World might need to learn from the New World, how best to adapt their winemaking to the effects of climate change – and, in many ways, they already are. Vignerons are already looking back at sunny vintages such as 2005 and 2010 (with high levels of extractable tannins) and questioned some producers’ apparent over-extraction of tannins, adapting accordingly in years like 2019 and ’20. The transformation of grapes into wine is magical; the secondary transformation that can take place with maturity is possibly even more extraordinary. However, a wine with so much promise can disappoint if left too long – a frail, bitter example of its former self. It is no surprise that many drinkers choose to avoid such risks and savour wines in their more muscular youth. There is a cultural change too. DuMOL’s Smith notes that the average US consumer is not particularly interested in ageing their Pinot Noir and questions whether ageing wine is an outdated notion. In a society that favours immediate gratification, modern consumers are impatient and few have cellars in their homes. And the savoury flavours that come with maturity aren’t to everyone’s tastes. “There’s a big difference between positive evolution, plateau-ing and the gradual downward slope of oxidation,” he says. “All wine ultimately wants to become vinegar!” Because of this, some winemakers are deliberately pulling back from making wines that peak at 20 years, instead looking to produce wines that will appeal in youth and peak closer to 10 years, since that’s what their customers want. Even the most tannic red wines from the more traditional regions are these days much more approachable in their youth, something that just wasn’t possible just a few years ago (as noted by Lisa Perrotti-Brown MW). Making fine wine is an art – and especially so when it comes to building a wine for the future. Choosing the perfect moment to pick in the given climate, as well as the right style and level of extraction in the winery will determine a wine’s ageability – but only if the underlying quality of fruit is sufficiently high. With better winemaking equipment, we no longer need to wait for tannins to soften to enjoy even the best Bordeaux or Napa. Does that mean you can’t age it for a half-century? Or that it won’t improve over that period? Absolutely not.
