The glitterati of the food world gathered in Antwerp last night to celebrate the World’s 50 Best Restaurants. It’s perhaps no surprise that Copenhagen’s Noma came out on top yet again (with its original location having won four times before, 2010-2012 and 2014). René Redzepi’s iconic New Nordic concept, championing the finest foraged ingredients and the art of fermentation, is rightfully at the top of many gastronomic wish lists.  This year’s list includes eight new entries – including Lido 84 (Gardone Riviera, Italy) which came in at no 15. Other new entries were: Diverxo (no 20 – Madrid, Spain), Burnt Ends (no 34 – Singapore), SingleThread (no 37 – Healdsburg, USA), Florilège (no 39 – Tokyo, Japan), Atomix (no 43 – New York, USA), Nobelhart & Schmutzig (no 45 – Berlin, Germany) and Wolfgat (no 50 – Paternoster, South Africa).  Hong Kong’s The Chairman climbed a massive 31 places to no 10, while two chefs earnt special recognition. Victor Arguinzoniz of Asador Etxebarri (Atxondo, Spain) was named Chefs’ Choice and Will Goldfarb (Room4Dessert – Bali, Indonesia) took home the title of the World’s Best Pastry Chef. Steirereck (Vienna, Austria) won the Art of Hospitality Award and Boragó (Santiago, Chile) was recognised for its sustainability. Spain and the US were confirmed as gourmet hotspots – each having six restaurants in the top 50.   Previous winners of the top spot include El Bulli (2002, 2006-2009), The French Laundry (2003-2004), The Fat Duck (2005), El Celler de Can Roca (2013, 2015), Osteria Francescana (2016, 2018), Eleven Madison Park (2017) and Mirazur (2019).  The list is decided by 1,000 industry experts who vote for the establishments they feel are the best. Voters are given certain freedom, with no strict criteria to consider – and previous winners of the coveted number-one spot are no longer allowed to vote. The 1,000 voters are food writers, critics, chefs, restaurateurs – in short the globe’s most experienced diners. The group is evenly split between male and female, with a panel of 40 members in 26 different regions. Each year, 25% of any panel has to change. After a year off, the 2021 edition of the World’s 50 Best Restaurants has been announced. Here’s a run-down of the year’s biggest winners – and the establishments that should be on any post-pandemic dining hit list

Ch. Beauséjour Duffau-Lagarrosse clearly has some fantastic terroir. One of only a handful of top-rated Premier Grand Cru Classé B estates, it is beautifully positioned on the southwest-facing slopes of Saint-Emilion’s famous limestone plateau. The property gained notoriety with the release of its 1990 – a wine Robert Parker professed as being “the wine of the vintage” en primeur – in his view beating other legendary wines from the year, such as Margaux, Pétrus and Latour. After maturation in bottle, he went further and declared that it may be “one of the greatest wines made this century”. A legend was born. This historic estate has been in the Duffau-Lagarrosse family since 1847, but Joséphine’s recent take-over was far from straightforward. Prior to the sale, it was owned by 30 members of her family. With the majority wanting to sell the property. Determined for it to remain part of the Duffau-Lagarrosse legacy, the only option was to attempt to buy it herself – no small feat for the then 30-year-old. But this prime-positioned Saint-Emilion estate had plenty of bidders queuing to snap it up, undeterred by the €75 million price tag – a price far beyond Duffau-Lagarrosse’s means. Initially, it was a bidding war between neighbouring Ch. Angélus’s Stéphanie de Boüard and Clos Fourtet’s Matthieu Cuvelier. Then, however, the Courtin-Clarins family stepped in – and offered to partner with Joséphine Duffau-Lagarrosse. Joséphine met with Prisca Courtin-Clarins, Clarins CEO and the third generation to run her family’s cosmetic empire (which remains 100% family-owned). According to Duffau-Lagarrosse, they instantly hit it off and the synergy between them was obvious: two young, talented, ambitious French women. Duffau-Lagarrosse had all the technical know-how to make great wine, as well as a life-long experience of the estate.  Courtin-Clarins, meanwhile, had all the commercial experience and financial backing to help manage and develop the business side of the property. Joséphine invited Prisca to see the château and she loved it. Within a month of meeting, they had put in their own bid. With the family connection, their bid was favoured and the two of them became co-directors on 12th April 2021. Walking around the amazing labyrinth of limestone caves under the property (covering 650 square-metres), where Duffau-Lagarrosse now ages the wine, you can see how proud she is of her family estate and how excited she is for the future – now under her control. She admits that it all happened a bit quickly. After deciding to follow in her family’s oenological footsteps, she had deliberately stayed away from Bordeaux for as long as she could, knowing that her family ties would eventually pull her back. Born and raised in Pomerol after graduating, it wasn’t long before she was travelling around the world, learning to make wine in regions other than Bordeaux. Duffau-Lagarrosse has an impressive resumé, working under some of the world’s best winemakers. She worked with Ch. Margaux’s Phillipe Bascaules when he was at Inglenook in Napa Valley, before heading to Hawkes Bay in New Zealand to work on Bordeaux blends in a contrasting climate. Following her stint there, she went to Mexico to work on a project with famous Bordelais consultant Stéphane Derenoncourt, before returning to France and working in Burgundy with Maxime Cheurlin at Domaine Georges Noëllat – someone who had inherited an historic family estate at a similarly young age. Of all the vintages to take on such a legacy, however, 2021 was far from the easiest – a year that asked everything of its makers. “It was not easy,” she admits, a smile sneaking onto her face, “but I really enjoyed it.” As we tasted the 2021, we asked whether she’d had to chaptalise – a common practice in the year’s cool conditions. For a millennial born in the era of climate change, it was totally new to her, but she felt it was needed to round out the mid-palate. “So I called Burgundy,” she jests, a twinkle in her eye. Despite its challenges, Duffau-Lagarrosse is very pleased with her 2021 – the first full vintage under her lead – and as she should be. She certainly respects what previous winemaker, Nicolas Thienpont, had done with the estate over the last 12 years – consistently producing one of the top wines of the vintage. Without swerving away from his style, Duffau-Lagarrosse is still keen to put her own bent on the wine. Reducing the amount of new oak is perhaps the most obvious first step – although that is also understandable considering the vintage conditions in 2021. She is also keen to make sure extraction levels are very carefully monitored and this was particularly important in 2021. “We had to question everything,” says Duffau-Lagarrosse, but the challenges proved to be a fast-track for understanding the terroir she had inherited. And she wasn’t alone – hiring two of Bordeaux’s leading consultants, Axel Marchand (professor of oenology at Bordeaux University) and Julien Viaud (the co-owner of Michel Rolland’s consultancy, which according to Duffau-Lagarrosse, has a contrasting and complementary approach to Rolland’s philosophy of high extraction and high proportions of new oak). The new team is certainly one of the most exciting and positive developments in Saint-Emilion – especially given the recent tumult in the appellation. There is certainly a lovely balance to the Ch. Beauséjour Duffau-Lagarrosse in 2021, and the wine has captured the beautiful, scented perfume of vintage’s top examples. It’s a wine that shows the promise of this vigneronne and address – one that is set to compete with the very best in the appellation. The legend is safe in the hands of its rightful owner. Just over 25 years ago, French fashion house CHANEL entered into the world of fine wine, purchasing the largely underperforming Margaux Second Growth estate Château Rauzan-Ségla. Two years later they acquired the Saint-Emilion Premier Grand Cru Classé, Château Canon. They have since turned these properties into two of the most in-demand fine wines in Bordeaux today. In 2019 CHANEL embraced their latest endeavour, acquiring Domaine de l’Ile, a prestigious wine estate on the French riviera on the exclusive island of Porquerolles, the largest of the “golden” islands just off the Côte d'Azur. Sharing the same philosophy as their sister wineries, they have invested in a stellar winemaking team at the Domaine, enlisting the help of Pierre Etcheberry and celebrated winemaker Nicolas Audebert (of Châteaux Rauzan-Ségla and Canon). Nicolas Audebert is in fact a local to the region, born and raised in the nearby port city and naval base of Toulon. We caught up with him to discuss returning to his roots in Provence and to find out what makes this idyllic island so well-suited to fine wine production. “I was born in Toulon. My father was a naval officer, so we used to travel a lot, living in different countries, but we would always return to Provence. Porquerolles is a very special place to me as we would spend time sailing there with friends and family.  Probably my strongest memory of when we were kids is sailing with my family and spending nights “au mouillage” on the Notre Dame beach. My brother and I would wake up early in the morning with a mission:  buying some bread in the village. We would spend the whole morning walking on the back trails, discovering the island and its incredible nature, guided by the eucalyptus perfume to finally reach the Place d’Armes, where the bakery is. By the time we were back on the boat, it was lunchtime.  As a child, Porquerolles was the epitome of nature and freedom.   My travels and the great outdoors are part of my DNA, that’s why I decided to study Agronomy and then Oenology in Montpellier. Winemaking took me to Champagne, South America, Bordeaux... Today, coming back to Porquerolles is like coming back to my roots - and making wine there is the icing on the cake.”  The history of Domaine de l’Ile The island of Porquerolles is a place of idyllic beauty with a fascinating history. First inhabited in 1820, the island was largely destroyed by a devastating fire at the end of the 19th Century, before being auctioned off in 1910. The island was acquired in its entirety by François Joseph Fournier, who as Nicolas explains, “was a man of many lives”; the son of a poor Belgian boatman, he became fabulously rich thanks to his discovery of the largest seam of gold ever found in Mexico. Fournier was the sole bidder in the auction of the island, which was a wedding gift to his wife, Sylvia. They actually established vines on the island almost immediately, planting vineyards on different strategic plains of Porquerolles. Under their visionary and watchful eye, the island reclaimed its agricultural character. It sprung back to life; an oasis in the middle of the Mediterranean. The vines populated its gentle slopes and fuelled the chatter in the village. The vineyards were in fact some of the first in the region to be classified as Côtes de Provence, due to the quality of the wine produced. In 1957, the island was divided up between the four Fournier daughters; each one received a plain. Progressively, three of them sold their inheritance to the French government, but Lélia Le Ber (neé Fournier), fought to keep her land and replanted vines on the Brégançonnet plain.  She passed on the estate to her son, Sébastien Le Ber, who managed the family business before entrusting the site to CHANEL, opening a new chapter in the story of Domaine de l’Ile.  From the Classed Growths of Margaux and Saint-Emilion to Provence Asked why CHANEL decided to invest in a new winery, and in particular in Domaine de l’Ile, Nicolas explains that it was "love at first sight" with this island vineyard in the heart of Provence, its special terroir, the Le Ber’s philosophy of Porquerolles and their unique history. “As we took over Domaine de l’Ile in early 2019, Pierre Etcheberry joined the estate’s team as Vineyard Manager. Pierre has an Agricultural Engineering degree and spent three years at Château La Fleur in Bordeaux as Assistant Technical Director.  At Domaine de l’Ile he is now in charge of the winemaking, vine growing and day-to-day management. Pierre stays in touch closely with the teams in Bordeaux, and they visit regularly whenever their support is needed.”   In the vineyard The individual parcels of Domaine de l’Ile were delimited and planted in 1957. While Porquerolles shares similarities with Provençal rosé in terms of the soils and climate, it remains unique because of the insularity specificities, explains Nicolas. “Being an island, Porquerolles has a unique ecosystem: vines grow on orogenic schist bedrock and clay soils, vines are surrounded by wild and protected fragrant flora, under a warm Mediterranean climate and are exposed to fresh saline winds.  The unique environment of the vineyard has a real influence on Porquerolles wines. Surrounded by the sea, growing on an exceptional soil under seasonal high temperatures and exposed to salty winds, the Porquerolles vines produce wines of character with a fresh tension and saline notes. Pine trees, eucalyptus and wild flowers frame our parcels, this very rich naturally odorous environment finds its illustration in our wines, in delicate flavours.” “The blend of grapes in the Domaine de l’Ile rosé is made up of Grenache, Mouvèdre, Cinsault, Syrah and Tibouren.” For Nicolas, these traditional Mediterranean grape varieties express all the uniqueness and insularity of the Domaine de l’Ile wines. “On dry and stony soils, enduring the wind, gorged with sun, the Grenache brings generosity to the blend, a reminder of the sweetness of local life. The Mourvèdre likes to watch the sea. It affirms all its character here and adds its grains of spice. A window opens on the pine forest. The white flesh fruits of Cinsault combine with the freshness and crispness of Syrah. As for the Tibouren, authentic Provençal, it is at home here, deploying its nobility on these shale soils.”  Life on Porquerolles The idyllic picture postcards of the island don’t lie; Porquerolles is exceptionally beautiful. Such landscapes are due to its protection, conservation and very real isolation. During summer, thousands of visitors discover the good life of Porquerolles, exploring the local restaurants, community and the beautiful coastline by walking, biking or sailing. But once the high tourist season ends, nature takes back its rights. Spring is sweet but autumn and winter can be difficult. To live on Porquerolles is a real philosophy of life, a desire of being out of “the continent”, a place where time flows slowly.  Finally, we asked Nicolas’ thoughts on rosé wine more generally and where and when best to enjoy it. “Rosé is the traditional wine of Provence, a region that has nothing left to prove. It designates wines of incredible diversity that can be found on the most prestigious restaurant wine lists all around the world.  From the ones to be enjoyed between friends over a simple supper, to some brilliant and complex expressions of terroir paired with more elaborate menus. For me, when spring begins to bloom, and temperatures rise, opening a bottle of a rosé wine offers you a promise, a foretaste of the coming summer. And in autumn, or even in winter, it will put a smile on your face, as an opportunity to remember the joy and pleasure of the long-gone summertime. The most famous vineyard in Argentina is named after Dr Adrianna Catena, who is the youngest daughter of pioneering vigneron Nicolás Catena Zapata. As well as her viticultural endeavours at Catena Zapata and her partnership with Alejandro Vigil as co-founder of the cult Argentine winery El Enemigo, she is a practicing historian.  Her area of interest is the 15th and 16th century Americas – a time when wine (and the vine) were first introduced to the continent following the Spanish conquest. The pivotal role of wine in Catholic ritual, and the dangers associated with drinking fresh water, she believes, would shape the development of wine production in the Americas. For Catena, the intimate relationship between wine and water continues to play a central role in shaping Mendoza’s social landscape.  The history of water and wine in South America is a fascinating topic for Catena. Although her PhD thesis focused on the trade in indigo dye from the Americas to Europe, her attachment to wine – as well as the very real concerns of water scarcity in Mendoza – are subjects important to her as a historian and as a vigneron. Through the Catena Institute of Wine (CIW), the Catena Zapata winery has pioneered research in viticulture across a broad rand of topics. It includes ground-breaking work on terroir, ageability, and soil biodiversity, as well as in depth studies on extreme elevation vine growing in a context of changing climatic conditions – but some of their most pressing work centres around water preservation.  “Water preservation is one of our most important areas of research today,” says Catena. “Organic farming is easier in the very dry climate of Mendoza, than in Bordeaux, where higher rainfall and relative humidity mean vineyards will be more susceptible to fungal diseases – for us, when it comes to a sustainable future and regenerative farming, water preservation is key.” Catena Zapata’s head viticulturalist Luis Reginato is nicknamed “the water guy” at Catena – such is his obsession.  “He’s always trialing new, experimental ways to save water.” But she notes, the region has a long successful history of water management for Reginato to tap into. “The irrigation systems developed by the native Huarpe people before the arrival of Europeans were key to successful agriculture in the region, and these systems are still in use today,” says Catena.  For centuries, irrigation channels and aqueducts have diverted water from the Andes mountains to terrace lower Andes farmlands, bringing fresh drinking water to the cities. The Incas, Catena says, whose power extended briefly to this region, were quite unique among early modern empires in the quality of their nutrition and a notable absence of famine – made possible by terraced agriculture on the Andean slopes and complex irrigation systems.  While advanced water networks had been essential to pre-Hispanic and later colonial agriculture, Europeans treated drinking water with caution. “Up until the last century, it was a common belief that water, especially in exotic or tropical regions, could be bad for your health,” says Catena. “Contaminated water could (and can still) kill you and was considered extremely dangerous.” Wine in many parts of Europe (and the Americas, following the Spanish conquest) along with ales and beer, was often considered a safer option. Where they felt there was no access to clean water, wine became an essential part of the diet.  Wine was a key European import in the early days of the Spanish conquest, notes Catena. And for the Spaniards, it was not without its health benefits. “During this period, medicine was humoral, people believed everything you ingested would affect your mood, health, and disposition,” she explains. “In one claim from the time, ‘vino‘ (wine) came from the word ’vena‘ (vein) – it was considered nourishing, and closely resembles blood and was associated with this. Some believed it fortified the veins.”  But, as Catena explains, wine was more than a health benefit for the conquistador. “Wine was also an essential symbol of Christianity and Christianity was a moving force in the Spanish conquest.” The conquest of Mexico would roughly coincide with the start of Luther’s Reformation.  The Spanish, for their part, wanted to secure a triumph for Catholicism, and in the inhabitants of the new world, saw millions of souls to fill their ranks against the Protestants. “It was the conquistador’s mission,” she says. “Behind the conquest was a big effort to convert the native population.” Catena explains how wine – as with wheat – was a highly symbolic food for Christianity, representing the blood of Christ.  “If you are trying to convert an entire native population to Catholicism, rituals will be fundamental,” she says. Wine had always held a central role in religious ritual and was key to the religious side of the Conquest. Conquistadors, she explains, had to build a church on their land after being awarded territory by the Crown for their service – and they were also made responsible for converting the indigenous population. “In this quest, as one historian put it, to advance the religious and territorial conquest – the two basic foods the Spanish needed were wheat and wine.” Initially, all wine was imported from Europe, but vines were swiftly introduced and acclimated. By the 1570s vineyards had been planted all over South America, albeit under strict regulations. Priests, for example, were allowed to plant vineyards – but there was a lot of legislation over who could and couldn’t grow grapes. By the 1570s vineyards had been planted all over the Americas.  For health, religious and cultural reasons, everyone drank wine in 16th and 17th century South America – it was part of the diet, explains Catena. But as the influence of humoral medicine waned following the Enlightenment – and better sanitation practices were discovered – the perceived symbolic benefits of wine declined. As the population grew exponentially in the 19th century, so did wine production in Argentina. Italian and Spanish immigrants arrived on the continent, leaving behind their famine-stricken homelands. “Wine consumption reached extraordinary levels,” says Catena, “particularly with the development of the railways.” This new technology enabled the speedy, efficient transportation of wine from producing regions to the Argentine capital of Buenos Aires. Nicola Catena was one such immigrant, who arrived in Mendoza in 1898 at the age of 17, planting his first vineyard in 1902. A native of Le Marche, from a family of vinegrowers, it was not so surprising that Catena went into wine production.  While Mendoza is much like a desert with very little rainfall (between 200 and 400 mm per year), the irrigation channels developed by the indigenous Huarpe people (a nation periodically under Inca rule), were used to divert snow melt from the Andes, enabling farmers to flood farmland when required, making viticulture possible. By the time Nicola’s son Domingo Catena took over, the family had become renowned winemakers in Mendoza. In more modern times, wine and water’s relationship has changed considerably. Wine in many instances has become a luxury and no longer an essential part of the diet – although Catena says that culturally wine remains a common sight at every meal in Argentina.  Under the guardianship of Nicolás Catena and now his daughter Laura, Catena Zapata has become among a growing number of quality-led producers in Mendoza whose wines compete with the finest in the world. Their top wines – Mundus Bacillus Terrae and Nicolás Catena – led the charge in putting Mendoza on the fine wine map. Water too is no longer viewed with as much caution, but nor is it taken for granted. It barely rains at all in Mendoza – with the region effectively a high-altitude desert. Without snowmelt from the mountains, agriculture here would be impossible, but glacial reserves in Argentina are decreasing. With climate change, water in these parts will no longer be simply available at the turn of a tap. “The preservation of water has become an important concern of winemaking in Mendoza. This is one of the most urgent questions for our region today,” says Catena. Ongoing research at Catena includes many water-saving experiments. “More than a decade ago we transitioned all our vineyards from the traditional, but wasteful system of flood irrigation, to drip irrigation. Since then, we’ve created reservoirs to capture rainwater, and set up water stations to measure and restrict irrigation to the bare minimum in our family vineyards.” For Catena, “these small changes can have a large and lasting impact.” The goal at Catena is to manage a regenerative and sustainable agricultural cycle. Catena notes how the Incas were able to transform their environment without causing irreparable damage to it. “We can inhabit this earth without being parasitical,” she says. As members of a larger viticultural community, Catena hopes to share the lessons it has learned from its research, to enable this region that has been shaped by water and wine to continue making high-quality wine centuries from now. Optimistically she says, “We believe we are at a tipping point, and the mindset is gathering momentum here more than ever before.” Since wine was introduced to the continent in the 16th century, there have been huge cultural changes. But the irrigation systems that allowed those first vines to grow remain in use, feeding the countless vineyards, often centuries old. Without water, there will be no wine. With Argentinian wine so popular around the world today, a lot rides on Catena Zapata’s research. The hope is that they can lead the charge, shaping a bright future for this region. I will also remember Bordeaux, my spiritual family in Libourne, and the gravelly earth and creamy tones of Pomerol soils with a 1982 La Fleur-Pétrus or the pillar of beauty, 2009 Trotanoy – bottles offered to me by Christian Moueix to celebrate the end of year. It is fun to pour a wine and talk to loved ones of the people and places in the bottle.” Gaia Gaja (Gaja) – 1961 Barbaresco, Gaja “This Christmas more than ever the family will gather in full, at my parents' house to celebrate Christmas together. I can’t wait. It will be a long day of celebration, cooking and enjoying each other’s company. Several wines will accompany us throughout the day and surely will be inspiring to the memories. In particular, I am excited to share a magnum of Barbaresco 1961 because this year we are celebrating the 60th anniversary of my father’s great career and this wine was his first step – the first vintage made by him when he was just 21!” Thomas Duroux (Ch. Palmer) – 2009 Malvasia delle Lipari Passito, Caravaglio, Sicily “In July 2011, I went for the first time to Salina, one of the seven Aeolian Islands. I had a little knowledge of the wines produced there but I did not know Antonino Caravaglio. We spent a lot of time together and I had a chance to taste several Malvasia from his estate. I took the hydro-foil ferry back to Sicily along with six bottles of his 2009 Malvasia delle Lipari. This sweet wine, made with dried berries from Malvasia grape variety develop extraordinary aromas with age, such as rosemary bush and dried apricot. This is really something that does not exist anywhere else. I plan to open the first bottle this Christmas and this wine will be my second daughter Gabrielle’s, born in 2009, first sip of wine!” Chris Riesbeck (Westland Distillery) – Garryana Edition 6 “For the holidays, I love to go with big Sherried malts during the colder months – our latest Garryana Edition 6 is just absolutely wonderful. It combines what I love in Sherry (dried fruits) with classic Garry Oak notes of ginger, clove, barbecue smoke. We used quite a bit of ex-Calvados and fruit brandy casks as well, so it’s this fantastic bouquet of candied fruit and smoke (not peat). Aside from that, I have a running obsession with large format (three-litre for the win!) during the holidays. It’s such a fun treat to share those sorts of things with loved ones. This bottle is so special for me for many reasons, for sure it is one of the greatest wines I ever tried, but behind this, there is a family (the Manetti family) and a man, Giovanni Manetti, who at the beginning of my journey in the world of wine was a great sponsor for me, granting me his friendship and his continuous support. Fontodi has been, and still is today the greatest example of how a family-run estate can stay local, while thinking global. I love the 2013 vintage in all of Tuscany and also Piedmont. The wines mature very slow and this is the sign for me of a great vintage. For red wine we will have some of our favourites, a 2011 Romanée-Saint-Vivant from Romanée-Conti and a 1989 Haut-Brion. Noblet and Delmas were for us the best cellarmasters ever on this planet. They both inspire me again and again when I drink their wines. For the sweet end, it will be Yquem again... I drink Yquem maybe three or four times a year. But at Christmas, this world-class sweet wine is always a must!
