We talk to Europe’s leading glassmakers from the 250-year-old Austrian family-run firm Riedel to the young dynamo behind Grassl, which launched in 2018. We also speak
to Jancis Robinson MW on her recent collaboration with British designer and master craftsman Richard Brendon, who explains that traditional glass types have long been in desperate need of modernisation. Legend has it that Marie Antoinette’s breasts provided the outline for the creation of the
coupe, the shallow-bowled champagne glass that graced the lips of Hollywood’s starlets during the Golden Age, and enjoyed regular appearances in episodes of Mad Men. When it comes to wine glasses, aesthetics has historically taken precedence but functionality has risen to the top of the priority list.  Wine has long suffered an injustice at its final destination whether it’s champagne, sherry or claret. Designer Richard Brendon recalls his first meeting with Master of Wine, Jancis Robinson. “She said she’d never understood why white wine was put in a smaller glass than red wine and described this as discrimination. Champagne producers hate flutes because they don’t allow for any of the aromatics to get out of the wine, likewise Sherry and Port producers don’t like the small glasses that their wine traditionally gets put in.” There are a growing number of glass companies aiming to redress the balance. And, in the
same way as every winemaker in Burgundy has his or her own particular way of producing the perfect Pinot Noir, every glassmaker has a view to crafting the most suitable vessel in which to pour it.  Austrian-based Riedel has gone down the route of a glass particular to a variety from Chardonnay to Zinfandel while Brendon has followed Robinson’s one-size-fits-all advice.  “Jancis was entirely confident that we could create one glass that worked perfectly for every style of wine,” says Brendon” but we also needed two decanters to ensure we have a collection that works for every wine.”  With 40 years of experience tasting wine, Robinson set out the specific parameters for her ideal glass. “The widest part of the glass should be exactly 125ml or one-sixth of a bottle. This would mean when a standard pour is served, the wine will have maximum surface area, allowing for all of the aroma to get out of the wine,” he says.  “Jancis wanted a nice tall bowl to allow for the wine to be swirled in the glass to get more of the aromas out of the wine, and that the opening of the glass should be as small as possible to trap the aromas of the wine, but still big enough for even the largest of noses! The thickness of the rim was of utmost importance, she wanted it to be gossamer-thin so that you hardly notice the glass when taking a sip. “ Gossamer-thin is an apt descriptor for Zalto’s glassware, particularly the elegant, fine stems
that induce a certain nervousness in the holder. It’s a far cry from the heavy cut-crystal glasses that adorned the dining tables of previous generations. Daniel Primack of Zalto’s UK importer WineRackd admits such delicacy can be a concern initially but “with perfect balance in the hand and such fine construction, you may worry that you’re going to break them just by drinking from them but fear not,” he says.  “They are mouth-blown and cooled very slowly making them incomparably tough for something so fine. Zalto’s own recipe of the three main ingredients for creating crystal, silica, soda (sodium carbonate) or potash (potassium carbonate) and lime (calcium oxide) also contribute to the clarity and durability. They are blown differently to other Austrian glasses, with the bowl and stem formed as one piece, then the foot attached. A more usual arrangement is for the stem to be glued to the bowl. Remember the attachment point is a weak point” Staying in Austria, Riedel is perhaps the country’s most famous glassmaker in the wine world, producing an impressive 60 million glasses annually at its three factories. The 250-year-old company now uses machines to make 95% of its glasses. The company’s UK managing director Stephen McGraw says “we can produce machine-made glasses which are almost indistinguishable from handmade glasses.  However handmade glasses are still very important to us, as we preserve a skill which is still recognisable to the techniques used in Roman times. In terms of machine-made versus handmade? The glasses will all perform equally well, from a sensory point of view.” He adds that its unusually shaped decanters are a different matter: master glassmakers, who tend to have around 15 years of experience to be at the top of their game, can only make these intricate objects.  A much more recent addition to the glass scene is Swiss brand Grassl, which launched in
2018.  Founder and wine collector Alexander Mackh, who is just 26 years old, explains its conception. “I launched Grassl Glass because I didn’t enjoy the proportions of the glassware on the market. Finer, deeper, less-extracted, less-oaked wine [styles] require different glassware, so I decided to create my own.”  Prototypes in hand, Mackh tested the glasses on some of Burgundy's top winemakers as well as heading to the finest names in Bordeaux including Châteaux Ausone and Palmer. Tweaks were made accordingly and now the Slovakian-blown artisanal glasses can be found as far afield as South Korea and Australia.  
What is the magic number?  While Brendon and Robinson have created just one wine glass, Grassl’s magic number is four. The designs include Liberté, which is ideal for medium to low acidity white wines, which are oak aged and 1855, a glass for reds high in tannin, richness and alcohol. If push comes to shove, Mackh says “If you wanted just one glass that does the job, it would be the Liberté as an objective tool for tasting." Riedel is known for its varietal-specific glasses and there are myriad options but there has to
be genuine rationale behind a new style. “A glass designed for a specific wine must show that wine better than any other, non-specific glass would,” says McGraw before explaining the ongoing process that shapes its bowls. “We design and test our glasses together with winemakers. Through a series of tasting workshops, we fine-tune and hone the shapes of our glasses until the winemaker tells us that the glass is showing his wine correctly. Further, after a glass is designed and in production, we do continuous testing and tasting workshops to ensure that the glass is as relevant still as the day it was first designed.” However, there’s no need to be rigid in what you pour in the grape-specific glasses. Riedel has a glass, for example, that suits rosé Champagne, Nebbiolo and New World Pinot
Noir. You certainly won’t go to wine hell if you also use it for a glass of Chardonnay. Primack agrees: “The names are simply a guide to identifying the bowl. They were named this way as 15 years ago, it was the convention to use a wine name. Today, Zalto stress it is not a prescription for the contents. For example, many people appreciate certain styles of White Burgundy in the Bordeaux bowl. This has been proven time and time again”.  Function has now won over form in the wine glass arena but that’s not at the expense of beauty. My family has been bottling their wines for two generations so we always had access to them and could see the evolution of the estate over the years. Today, Bachelet is considered one of the best domaines in Gevrey-Chambertin, especially for their Premier Cru and exceptional village wine. "They own vines in only one Grand Cru – Charmes-Chambertin, but in my opinion their Charmes is the best. The vines are over 90 years old and situated directly across from Chambertin. The wine is always beautifully calibrated and refined. I drank the 2005 with my family over Christmas; it was perfectly balanced, powerful, concentrated and the tannins beautifully silky. If you can hold off I would say it will reach its full potential in another five years or so, but it’s providing great drinking pleasure now too.” Antoine Ninot, Buyer

It’s probably the best Grüner Veltliner I’ve ever had. The nose was full of white flowers, tropical fruit and apricot. The apricot really made me miss Austria! The best time to visit the Wachau is the flowering of apricot trees in spring – Austria’s sakura.  "On the palate, the fruit continues, matched with spicy notes, minerality and honey. It is rich, and the oak barrels no doubt give it that creamy texture. With three years of age, it was in a perfect spot, but it will be nice to taste this bottle in a few years, the wine has so much potential. In terms of structure, it actually reminds me of Corton-Charlemagne. I had it with creamed chanterelles, utterly delicious!” Magda Riepler, Brand Designer 
2010 Brunello di Montalcino, Caparzo, Tuscany, Italy “After all the stunning 2016 Brunello releases that have been coming out in recent months, it spurred me to explore another great vintage from the region. I was keen to see how the 2010s, now with a bit of bottle age, are developing. My first of the 2010s was Caparzo’s Brunello which still remains remarkably vibrant at 10 years of age, but the tannins are now melding beautifully on the mid-palate and are fully integrated with the fruit.  "The nose needed coaxing to start and, while not exuberant, the measured, perfumed nose is deep and complex and notably clean – roasted cherries, sweet fresh tobacco, pot-pourri, incense, dried lavender, it’s all there! The palate is still taut but pure, with damson fruit dominating, complemented by orange bitters and dark chocolate notes. This is really enjoying its mid-life, still not at full potential but I love the clarity, it’s not drying at all on the finish. It remains pretty compact, but will no doubt unfurl over the next five years.” Gavin Smith, Fine Wine Editor 2004 Aloxe-Corton, Premier Cru, Les Vercots, Domaine Tollot-Beaut “There is something very satisfying catching a wine at its peak. Pop and pour and there is instantly a fragrant nose of cherries, and savoury leather. It’s a classic, elegant Aloxe-Corton from an underrated vintage, holding up well and drinking beautifully now. The glitterati of the food world gathered in Antwerp last night to celebrate the World’s 50 Best Restaurants. It’s perhaps no surprise that Copenhagen’s Noma came out on top yet again (with its original location having won four times before, 2010-2012 and 2014). René Redzepi’s iconic New Nordic concept, championing the finest foraged ingredients and the art of fermentation, is rightfully at the top of many gastronomic wish lists.  This year’s list includes eight new entries – including Lido 84 (Gardone Riviera, Italy) which came in at no 15. Other new entries were: Diverxo (no 20 – Madrid, Spain), Burnt Ends (no 34 – Singapore), SingleThread (no 37 – Healdsburg, USA), Florilège (no 39 – Tokyo, Japan), Atomix (no 43 – New York, USA), Nobelhart & Schmutzig (no 45 – Berlin, Germany) and Wolfgat (no 50 – Paternoster, South Africa).  Hong Kong’s The Chairman climbed a massive 31 places to no 10, while two chefs earnt special recognition. Victor Arguinzoniz of Asador Etxebarri (Atxondo, Spain) was named Chefs’ Choice and Will Goldfarb (Room4Dessert – Bali, Indonesia) took home the title of the World’s Best Pastry Chef. Steirereck (Vienna, Austria) won the Art of Hospitality Award and Boragó (Santiago, Chile) was recognised for its sustainability. Spain and the US were confirmed as gourmet hotspots – each having six restaurants in the top 50.   Previous winners of the top spot include El Bulli (2002, 2006-2009), The French Laundry (2003-2004), The Fat Duck (2005), El Celler de Can Roca (2013, 2015), Osteria Francescana (2016, 2018), Eleven Madison Park (2017) and Mirazur (2019).  The list is decided by 1,000 industry experts who vote for the establishments they feel are the best. Voters are given certain freedom, with no strict criteria to consider – and previous winners of the coveted number-one spot are no longer allowed to vote. The 1,000 voters are food writers, critics, chefs, restaurateurs – in short the globe’s most experienced diners. The group is evenly split between male and female, with a panel of 40 members in 26 different regions. Each year, 25% of any panel has to change. After a year off, the 2021 edition of the World’s 50 Best Restaurants has been announced. Here’s a run-down of the year’s biggest winners – and the establishments that should be on any post-pandemic dining hit list

As the drone camera takes us up over the trees, you can see how dense the forest is around Promontory’s vineyards in the western hills of Oakville district in Napa. Apart from the small vineyard plots dotted along the canyon, the landscape is rugged and untamed. In total, just 10% of the Promontory estate is planted to vines, representing 34 hectares of the property.  The whole area is protected so this site will remain small and genuinely cut-off – but that is exactly how proprietor Will Harlan wants it. “Promontory is truly a world apart from the Napa Valley that most people experience,” he says. For a long time, this canyon was hidden in plain sight. Many locals born and raised in Napa were completely unaware of its existence. Looking up from Napa, all you see are the mountain ridges above, yet beyond theses ridges lies this hidden valley, its undulating hills ideal for vineyards. It was in fact Will Harlan’s father H. William, or Bill, Harlan (founder of Napa’s most prestigious cult Cabernet, Harlan Estate) that literally stumbled across the canyon while hiking back in the 1980s. Although his interest in the land spans over 30 years, the opportunity to buy the property only arose in 2008. At first, the family thought the vineyards might be used for Bond or Harlan – but the character of the fruit was so fundamentally different, Will explains, that they decided to make Promontory its own project. Fast forward to the current day, and the 2016 vintage – the eighth ever – is about to be released. With the second generation of Harlans (Will) and winemaker Cory Empting (also from Harlan Estate) at the helm, Promontory has fast become one of Napa’s most consistent and captivating, not to mention collectable, Cabernets. While only a 20-minute drive from the Harlan winery, Promontory feels remote – with a totally different microclimate. The vineyards are mainly on the valley’s cooler east-facing slopes (with an average gradient of 38%), but they have some decent elevation too, sitting at between 150 and 340 metres above sea-level. The fog that settles in the valley brings much-needed moisture to the vines, as well as moderating the temperature and allowing the team to produce cooler-toned and fragrant Cabernet Sauvignon. 
The first vines were planted in the mid-1980s and early 1990s, with a mixture of varieties, but the team started replanting in 2011, focusing entirely on Cabernet – the grape that they feel best expresses the place. The fruit from the young vines is being used for a separate wine (The Mascot) that isn’t part of Promontory. The older vines are dry-farmed, and the plan is for everything to be long term – with just a little irrigation being used to establish the young vines and “educate them not to be irrigated”, Will explains. 
Beyond the seclusion, these hillside vineyards have two distinct fault lines running through them, roughly demarcating the boundaries between volcanic, sedimentary and metamorphic soils. This diverse geology is another facet that distinguishes the Promontory vineyards from the rest of Napa and is what Harlan believes provides a distinct mineral backbone and tension to the wine. As we walk (virtually) through the winery, we arrive in the barrel room, faced with a gigantic piece of volcanic rock. It is a beautiful sight in itself – lifted out of the vineyard and displayed at the winery, underpinning the specificity of the terroir of this secluded canyon. The place is so different that Harlan feels they needed “to unlearn and relearn” an approach that suited the property. The barrel room holds another important element in creating these special wines – their Stockinger barrels. Austrian coopers Stockinger have become one of the most reputable for fine wine in recent years and Promontory was the first in the US to use them. They realised the wine’s tight but very fine tannins needed more time as it evolved slowly. As such, they started looking for larger barrels and in 2012 purchased a range from Stockinger – from 1,800  to 4,400 -litres.  The Stockinger barrels are praised for their ability to limit the influence of oak flavour, while carrying out all the subtle micro-oxygenation that enables the building of long tannin chains. These tannin chains produce a fabulous textural complexity in the wine, while at the same time the fine-grained oak preserves the natural aromatics and fruit purity. Harlan and Empting give the wines five and a half years between harvest and release – with two and a half to three of those in barrel, allowing the wines to “unfold” in these more neutral and “respectful” barrels.  The results are breath-taking. Tasting the soon to be released 2015, which was aged for two and half years in cask, the textural finesse and precision of the tannins in some ways make the wine feel almost weightless in structure, while at the same time being detailed and complex. It's astonishing that this property and its potential lay undiscovered for so many years. One thing’s for sure now, though: the secret’s out. This bottle is first and foremost a Grand Cru of Pinot Noir, and we love the Grands Crus of Pinot Noir in both Champagne and Burgundy. Following a bottle of our own Grand Cru – Hommage au Pinot Noir and an MV10 Champagne, of which both would have benefited from a few years of aging, I will serve the Romanée-Conti. I like to drink these wines quite early in the meal, their fragrance, their voluptuousness, and their precision make me happy to continue the meal. This bottle is also a memory of the person who gave it to me on one of my trips to Japan. I will call my friend on this occasion. Because wine is that – beyond a taste, it's a story, a bond of friendship, a touch of humanity that we so badly need for these end of year celebrations.” Sébastien le Golvet (winemaker at Champagne Henri Giraud) – 2011 Único, Vega Sicilia, Ribera del Duero “Christmas with the family at the Girauds is a string of bottles, each more extraordinary than the last. Thanks to my wife Anne (one of Claude Giraud's daughters) I had the chance to discover some great wines. These wines inspire me every day when I am in the vineyards or in the cellar. They make me want to surpass myself and always go further in precision and excellence. Vega Sicilia is one of those first great Spanish wines which made a deep impression on me. I like them old, after 20 years, 30 or more because this is really where Vega Sicilia fully expresses itself. And then I recently drank in Mexico a bottle of 2011 Vega Sicilia and I was amazed. It is so young and already so beautiful! I told myself that I couldn't keep this secret to myself, I wanted to share it with my family. So, coming back from this trip, I immediately put some in my cellar. And the first bottle will be for Christmas.” Tod Mostero (Dominus) – 2005 Riesling Auslese, Graacher Himmelreich, Joh. Jos. Prüm, Mosel “It is finally feeling cold enough here for the subtle fruit and mineral shades of a Joh. Jos. Prüm Graacher Himmelreich Auslese 2005, which may pair well with a grape and quail dish I love at Christmas time. I like to travel in my mind and tell stories with my family at the holidays. This bottle was offered to me by Michael Grimm (our distributor in Germany) and his family shortly after I returned to California in 2007. He and his family have become close over the years. I will also remember Bordeaux, my spiritual family in Libourne, and the gravelly earth and creamy tones of Pomerol soils with a 1982 La Fleur-Pétrus or the pillar of beauty, 2009 Trotanoy – bottles offered to me by Christian Moueix to celebrate the end of year. It is fun to pour a wine and talk to loved ones of the people and places in the bottle.” Gaia Gaja (Gaja) – 1961 Barbaresco, Gaja “This Christmas more than ever the family will gather in full, at my parents' house to celebrate Christmas together. I can’t wait. It will be a long day of celebration, cooking and enjoying each other’s company. Several wines will accompany us throughout the day and surely will be inspiring to the memories. In particular, I am excited to share a magnum of Barbaresco 1961 because this year we are celebrating the 60th anniversary of my father’s great career and this wine was his first step – the first vintage made by him when he was just 21!” Thomas Duroux (Ch. Palmer) – 2009 Malvasia delle Lipari Passito, Caravaglio, Sicily “In July 2011, I went for the first time to Salina, one of the seven Aeolian Islands. I had a little knowledge of the wines produced there but I did not know Antonino Caravaglio. We spent a lot of time together and I had a chance to taste several Malvasia from his estate. I took the hydro-foil ferry back to Sicily along with six bottles of his 2009 Malvasia delle Lipari. This sweet wine, made with dried berries from Malvasia grape variety develop extraordinary aromas with age, such as rosemary bush and dried apricot. This is really something that does not exist anywhere else. I plan to open the first bottle this Christmas and this wine will be my second daughter Gabrielle’s, born in 2009, first sip of wine!” Chris Riesbeck (Westland Distillery) – Garryana Edition 6 “For the holidays, I love to go with big Sherried malts during the colder months – our latest Garryana Edition 6 is just absolutely wonderful. It combines what I love in Sherry (dried fruits) with classic Garry Oak notes of ginger, clove, barbecue smoke. We used quite a bit of ex-Calvados and fruit brandy casks as well, so it’s this fantastic bouquet of candied fruit and smoke (not peat). What producers are drinking this Christmas

Mosel and the Kingdom of Prussia At the Congress of Vienna in 1815 the Mosel region was assigned to the Kingdom of Prussia. Following this, the region went through a period of great change. Initially, the elimination of the domestic German customs borders brought high competitive pressure on Mosel from other big wine-growing areas (e.g. Pfalz, Baden, Württemberg) and prices decreased dramatically. In addition to this, bad weather conditions and the outbreak of new pests in the region, saw regular crop failures, leading to economic hardship for many winegrowers in the region.  Despite the initial deterioration of the region, the Prussian government saw Mosel as a wine region worth saving, deciding to invest heavily into the wine industry. During the 1850s the construction of the railway line along the river was completed providing faster and easier access to the German Reich´s main traffic routes and therefore hugely improving the logistics of moving wine around the country and beyond.  Additionally, government domaines were built for research purposes, further developing modern technologies that were being applied in the vineyard and wineries. The focus was set on the wine quality: winemakers should grow the Riesling grape variety, they should harvest late and be highly selective when picking the grapes to produce better quality, and the wines should be "natural“ (without any additives, without being chaptalized, etc.). In the 1880s several vintages were of outstanding quality, and the interest in Mosel Riesling grew around Europe.  By the 1890s Mosel was enjoying a golden era in which its reputation for fine wine production saw a boom in sales throughout the 1890s. Furthermore, the consumer´s understanding of taste changed from heavy red wines to light, refreshing whites, rich in aroma and acidity.  The boom led to tourism, many people from all over Europe came to the valley, including famous artists such as William Turner and poets such as Johann Wolfgang von Goethe. Mosel Riesling was drunk by nearly all secular and ecclesiastical rulers of Europe – Berlin, St. Petersburg, London, etc. Kaiser Wilhelm II also visited the area several times. The wines were on the lists of all top restaurants around the world. Mosel was the world’s fine wine mecca.  
The wine styles of Mosel’s golden era 
By the beginning of 20th century, nearly all of the wines coming from the Mosel area were dry or maximum off-dry because there was no technical possibility to interrupt fermentation unnaturally. All of the Rieslings were fermented by natural yeasts only. They were kept in large "Fuder“-barrels – kept on their lees (sur lie – the dead yeast cells) for several months, sometimes even for more than a year, adding textural, aromatic and flavour complexity. The style of our dry and off-dry wines could be compared to the wines from 100 years ago. All of our wines ferment naturally, in the spirit of authenticity, vineyard character, complexity and longevity. No fining agents, enzymes or other additives are ever used. Most of the wines remain on their yeasts ("sur lie“) for months, gaining in mellowness and body.   During that time, winemakers did not have the technical possibility to stop fermentation earlier with a higher proportion of residual sugar. The machine needed for this procedure, containing a special filter which stabilises the wines by pulling yeasts and other solids out, only came into commercial use in the 1960s. An invention that would turn the style of the region’s wines on its head and damage its reputation as one of the world's leading fine wine regions.  In 1868 the Prussian tax authorities published the first official wine terroir classification in the world. This classification was used to set tax rates – the higher the quality of the single vineyard was rated, the higher the tax rates for the winegrowers (the darker red coloured the plots on the map – see map).  In addition, this map was an unprecedented tool for promoting wine by the Prussian government and proved a fantastically successful approach in identifying the nuances of each vineyard and was to be imitated by several other wine regions in Germany and beyond.  

Despite being 150 years ago, we think that this classification was very accurate in terms of identifying quality. The completely south-facing steep slopes are still the best to grow vines in our valley. Due to enlargements during 20th century some important vineyard sites are missing, in terms of our winery, it would be Wehlener Klosterberg vineyard which has proven to belong to the red or even dark red coloured surfaces on the map.  Due to climate change, we think that several vineyard sites which are located in side valleys or on a higher altitude have actually improved over the last decades. Nowadays they would also belong to the higher or highest-rated plots. But overall their assessment was petty accurate. The World War years
 The World Wars were obviously going to have a devastating effect on the region situated on the border of France and Luxembourg and this brought an end to the golden era. Whilst Riesling was the most planted and popular variety, Pinot Noir was also grown very successfully in the region until it was banned by the Nazis in 1933. The Nazis forbade the growing of French varieties and asked vignerons to focus on the prestigious "German“ Riesling in the Mosel wine-growing area which used to be the showpiece for them, being famous all over the world. The ban quite shockingly lasted until the end of the 1980s, therefore the tradition of red winemaking was nearly completely lost in the region. I was one of the “pioneers“ in the area to cultivate Pinot Noir again by planting the first vines in 1987 on the south-facing steep slope called Graacher Himmelreich. 
Mosel: the post-war period 
After WW II there was a huge request for fruity and light white wines and with the economic hardship that followed, a refocus towards quantity rather than quality. The Mosel Rieslings were swept up in this, predestined to produce high quantity, light, sweet wines. Winemakers
all along the river enlarged their vineyard surface, not only in the steep slopes but above all in the flat lands on the other side of the river.  Growing there was much easier and less time and work intense, and therefore also a lot cheaper. Mosel wines became famous as “sweet and cheap“ all over the world – markets were flooded. This concept based on quantity led to an enormous enlargement of vineyard area in the Mosel region from 7500 hectares to 12,300 hectares in the early 1990s. The glycol scandal (when antifreeze was discovered in bulk Austrian wine shipped to large German wineries in bulk and bottled under the German winery labels) only further enhanced the bad reputation of wines from our area.  
Mosel today: a 21st-century golden era Whilst nearly everything has changed over the last two decades the whole wine-growing area still suffers from the “Black Towers“ and “Blue Nuns“ sweet and cheap German wines that despite a drop in popularity still are made in vast quantities and exported all over the world. It is our aim to help restore the wines of our valley to their former glory, therefore we focus uncompromisingly on quality in every step of our daily work.  Luckily the understanding has changed – nearly all winemakers especially the young generation rely on the traditional ways of quality winemaking again and combine it with modern technology, new insights of research, as well as their passion for the famous steep slopes of our region. Wine lovers all over the world are recognising these changes as positive and we think we are back on the right track to regain the popularity and reputation garnered to the region during the golden era of the 1880s and 1890s.
