Tasting notes
Flinty nose of subtle oatmeal, star fruit and minerals. Limpid but also substantial, with an almost full body and a very flavorful, lengthy finish. Lots going on here. A selection of two parcels in San Pablo. Drink from 2027.”

Called Las Cuchillas because its acidity cuts like a knife, or cuchilla in Spanish, this is one of a quartet of top Chardonnays from Sebastían Zuccardi and Laura Principiano. Showing impressive, understated concentration that wouldn’t look out of place in a Corton- Charlemagne, this has stony intensity, flavours of pear, waxed lemons and crème fraîche, lovely texture and a refreshing mineral core.
The 2024 Chardonnay Finca Las Cuchillas hails from San Pablo and was aged for 10 months in concrete. Sourced from two of the area’s most calcareous soils, it opens with restrained aromas of white fruit, complemented by field herbs and delicate pastry notes. Creamy, chalky and energetic on the palate, this combines generous concentration with a subtle lightness. The 2024 is a complex and supremely expressive white that balances intensity and precision—the hallmark of Gualtallary.
