The 2025 Pavillon Blanc, which incidentally has existed since the 19th century, when they opted to separate the complanté white varieties, was picked between August 18 and 22 at 16 hl/ha. It underwent less bâtonnage this year. It has an attractive bouquet with lifted orchard fruit, lanolin, white peach, quite discrete this year. The palate is well balanced, with a lovely tropical-tinged opening, from the warm summer, which is countered by the keen line of acidity. Gorgeous mouthfeel, lingering on the finish with hints of guava and lychee. Honestly, I don't think I would nail this as a pure Sauvignon Blanc blind, but absolutely delicious.

All Sauvignon Blanc raised in 20% new barriques, the 2025 Château Margaux Pavillon Blanc checks in at 14% alcohol with a pH of 3.14. It has a riper-than-usual nose of citrus, honeyed lemon, white flowers, and chalky minerality, and on the palate, it's rich, pure, and concentrated, with remarkable depth and focus. As always, this is a brilliant, singular, absolutely riveting expression of Sauvignon Blanc.
A complete sauvignon blanc with sliced pear, apple and lemon aromas and flavors with a full body and a polished texture that is caressing and beautiful. It is crunchy and a bit richer than many Pavillon Blancs.
The 2025 Pavillon Blanc is a total stunner. Tangerine peel, white peach, passion fruit and white pepper are some of the many notes that soar from the glass. The team opted for less bâtonnage than most years, as the fruit was already quite rich. Yields were just 16 hectoliters per hectare. The 2025 is an unusually exotic Pavillon Blanc, a wine with a very strong personality. I find it compelling, but I can also imagine some readers may find it a bit too rich.
