The 2021 Saint-Aubin En L’Ebaupin shows quite a bit of reduction on the nose, quite leesy with hints of white mushroom and marine scents. The palate is well balanced with a killer line of acidity: taut and linear with an almost austere yet compelling finish. There is plenty of salinity on the aftertaste. Give this excellent Saint-Aubin a couple of years in bottle.

Wafting from the glass with aromas of sweet orchard fruit, peach and wheat toast, framed by light reduction, the 2021 Saint-Aubin l'Ebaupin is medium to full-bodied, satiny and incisive, with racy acids and a long, saline finish. It will delight readers who miss the more chiseled white Burgundies of yesteryear.
Vines planted in 2015. Tank sample. Pale lemon. Concentrated citrus and yellow apple. Cool, fresh saline palate. Lively, fresh acidity. Great drive and concentration. (MH)
