The purple-colored 2005 Bin 407 Cabernet Sauvignon was aged in French and American oak, 20% new. The nose reveals cedar, scorched earth, spice box, cassis, and black currant leading to a slightly compact wine lacking generosity on the mid-palate and finish. Ruby-red. Cherry-cola, vanilla, musky herbs, tobacco and cigar box on the nose. This is pretty complex. Pliant dark fruit flavors are deeply concentrated but fresh, with gentle acidity adding lift. The cola quality returns on the long, sappy finish. A textbook example of South Australian cabernet that offers varietal accuracy and well-judged ripeness.
