The 2016 Cabernet Sauvignon from Correlation Wine Company is rich, boisterous and quite giving. Inky dark red fruit, spice, leather, chocolate, and menthol give the 2016 an exuberant, racy feel that is impossible to miss. Supple and plush with no hard edges, the 2016 will be easy to drink and enjoy upon release.

Composed of 90% Cabernet Sauvignon, 7% Merlot and 3% Petit Verdot, the 2016 Cabernet Sauvignon bursts from the glass with bold notions of crushed blueberries, boysenberries and blackcurrant cordial plus a fragrant undercurrent of powdered cinnamon, pain grille, candied violets and melted chocolate with a waft of peppermint. Full-bodied, the palate is decadently fruited with a generous coating of black and blue fruit preserves and loads of spicy sparks, supported by beautifully ripe, plush tannins, finishing long and perfumed.
The 2016 Cabernet Sauvignon is quite dense and powerful, yet it also retains a good bit of freshness as well. In 2016, winemaker Martha McClellan opted to use a bit more Petit Verdot than in the previous vintage, which gives the wine added grip and tension to play off the dense, dark fruit. Blackberry jam, grilled herbs, menthol, licorice and sage all flesh out in this supple, inviting Cabernet Sauvignon.
