The highlight of Savart’s portfolio, the 2020 Écueil Le Mont des Chrétiens, hails from a 35-year-old southwest-facing site with vines thriving in sandy soils. Aged in 500-liter barrels, half new and the remainder used for one prior wine, it was disgorged in November 2024 with a dosage of 3.5 grams per liter. The wine opens with a deep bouquet of sesame, white flowers, beeswax and sandalwood, framed by a youthful reduction. On the palate, it is medium- to full-bodied, deep and lively, with a distinctly Burgundian character, displaying remarkable tension and vibrancy despite the warm vintage. It concludes with a long, piercingly saline finish. This is a more successful bottling than the 2019, which Savart opted to vinify in Wineglobe.

The 2020 Brut Nature Le Mont des Chrétiens is a deep, powerful wine. Lemon confit, white pepper, mint, sage and marzipan are all beautifully amplified. This potent, resonant Champagne packs quite the punch. As with many 2020s, there's a slightly vegetal character, but the wine has enough weight and overall fruit intensity to balance that out to some degree. Aging on cork likely helps with texture. Overall, this is nicely done. Dosage is 1.5 grams per liter. Disgorged: February 2024.
