Reticent nose opened with aeration to reveal stone fruits, crushed rock, silex, marzipan and a faintly carnal aspect. Sweet, penetrating and intense, with youthfully backward flavors of peach, spices and dusty stone. Very rich, ripe and powerful Chablis with a resounding and very sexy finish that combines minerality with sweet, spicy fruit.

Bright pale yellow. Candied citrus peel, wet stone, honey and an enticing spicy lift on the nose. Dense on entry, then thick and fat in the middle but quite unevolved. As massive as this young grand cru is, it's more refined than the Vaudesir. Very suave and seamless wine, but today there's no way in! Mounts slowly and lingers long on the aftertaste. But this very deep wine (the "eighth grand cru" of Chablis, from a 2.34-hectare parcel mostly in Vaudesir but partly in Les Preuses) is tricky to judge today. All of these 2005s have alcohol levels under 13.5%, says Bichot.

Owned by Albert Bichot. Lime. Intense citrus. Primary fruit allied to some minerality (petrol/fossil, suggested the winemaker) and smokiness. Almost a sourness on the back palate, but this adds to rather than detracts from the whole. (JH)
