The 2005 Gevrey-Chambertin Les Perrieres Vieilles Vignes (from 55-year-old vines below Mazis, and tasted on the eve of its bottling) displays aromas of smoked meat and salted nuts clearly influenced by its recent sulfuring, but sweet boysenberry, tart elderberry and rose petals are right behind. In the mouth, this exhibits a salty, chalky, stony mineral character and high-tension acidity that remind me of high elevation north-of-Gevrey terroir, and a refreshing, sorbet-like expression of black fruits. Subtle sweetness and a fine edge of acidity, juiciness and minerality inform an elegant, refined, yet ultimately indefinable finish. Medium red-ruby color. Musky black raspberry, peony and bitter chocolate on the nose, with a pungent whiff of blood orange. A bit sharp today owing to its juicy acidity and firm minerality; at present this tightly wound wine is all spine and less pliant and sweet than most of Perrot-Minot's village offerings. Taut, elegant and imploded; I may be underrating this.
