Tasting notes
Aged in 70% new French oak and imbued with a rather sinewy structure, Chimney Rock's 2019 Cabernet Sauvignon South Hill boasts aromas of cedar, baking spices, black cherries and cassis. On the palate, it comes across darker and riper, medium to full-bodied, yet it remains taut and wiry. Maybe this will improve with time in the cellar?

Spiced red and black currants, tobacco, violets, and minty herb notes define the 2019 Cabernet Sauvignon South Hill Vineyard, a nicely textured, medium to full-bodied, balanced 2019 that's drinking nicely today, yet has the structure to evolve for 15 years or more. 537 cases.
The 2019 Cabernet Sauvignon South Hill is marked by a distinctly earthy, savory personality. It has all the energy of these wines, but feels a bit compact on the mid-palate. The South Hill is an attractive wine, but it doesn't have the sheer charm of the other wines in the range. I expected more here.
