Tasting notes
Deep garnet colored, the 2009 Cabernet Sauvignon The Core opens slowly to reveal a solid core of blackcurrant cordial, plum preserves and boysenberries plus hints of raspberry coulis, chocolate mint, roasted nuts and tree bark with a waft of menthol. Full-bodied, the palate has fantastic expression and poise, with a firm line of ripe, fine-grained tannins and bold freshness lifting the slowly maturing black fruits to a long, layered finish.

Plums, black berries, tar, spices and licorice saturate the palate as the 2009 Cabernet Sauvignon The Core shows off its full-bodied, opulent personality. The Core isn't meaningfully better, more complex or more interesting than the straight Cabernet, just different in style. It is a bigger, richer wine with more fruit but less in the way of aromatic nuance.
