The 2014 Chablis 1er Cru Butteaux, which is matured in the same fashion as the Beauregard, has an elegant bouquet with chalk, yellow flowers, dry granite and a touch of smoke--quite backward and demanding more coaxing than the Beauregard. The palate is well balanced with crisp acidity, a "transparent" Chablis, stony and penetrating, very natural and refined with a healthy dash of white pepper that lingers on the finish. This is very fine, although it might be the cru where I was just expecting a little more complexity.

Pale straw-yellow. Subtle yellow flowers and strong stony minerality on the nose. The most salty and minerally of these premier crus but with a subtle touch of sweetness to the yellow peach and spice flavors. This very young Chablis offers lovely inner-mouth lift and finishes with a light touch.
