Tasting notes
Perliss's 2019 Cabernet Sauvignon The Ravens is richly concentrated, chocolaty and dense, verging on heaviness. There are some hints of super-ripe fruit but also plenty of oak. Aged mostly in barrel (80%, half of which is new), it's just a bit over the top for this taster.

The 2019 Cabernet Sauvignon The Ravens is a powerhouse. Dark and explosive in the glass, the 2019 possesses tremendous intensity from start to finish. Black cherry, plum, spice, gravel and incense lend nuance to this heady, explosive Cabernet. This is an especially dense, potent wine with good balance and plenty of potential. The Ravens was done entirely in barrel, whereas the Pearl was done mostly in amphora.
Also a dark, dense wine, the 2019 Cabernet Sauvignon The Ravens sports an inky purple color as well as a slightly more open, sexy style when compared to the 2018. Lots of red and black fruits, leather, toasted spice, and graphite notes define the nose, and it's medium to full-bodied, with ripe tannins and a great, seamless texture. It's going to shine for 15-20 years as well.
The 2019 Cabernet Sauvignon The Ravens Vineyard is dense, powerful and explosive. Blackberry jam, lavender, cloves and licorice all build as this sumptuous, potent Calistoga Cabernet Sauvignon struts its stuff. The 2019 possesses tons of depth to match its exotic personality.
