A beautifully framed sparkling wine with sliced cooked pears and croissants and hints of salted butter. Almost steely. Medium-bodied with lively acidity and tight phenolics that give form and structure. Dry finish with bread dough at the end. One of the best sparkling wines in California. Pure chardonnay. Aged almost seven years on the lees. Drink or hold.

Whole-cluster pressed into stainless steel, where the wine ferments with selected yeast. Spends five-and-a-half to six years on the lees before disgorging. 8 g/l dosage. Smells of crushed shells, white flowers and lemon pith. A voluminous mousse delivers flavours of citrus pith, wet chalkboard and white flowers that have a wonderful crystalline quality. Salty lemon-pith and wet-chalkboard notes linger in the finish with a hint of toasted brioche. Delicious. (AY)
