The 2018 Chablis "Bel Air et Clardy" was filtered, Olivier de Moor explained, because analysis showed there were still active yeasts in the wine, and they wished to avoid any re-fermentation in bottle. This is more backward on the nose, displaying scents of broom, jasmine and crushed pebbles; a subtle linseed note emerges with time. The palate is very well balanced with a fine bead of acidity and notes of orange peel and mandarin. Taut and linear toward the finish, with freshness to spare. Superb.
