Opaque garnet-purple colored, the 2007 Cabernet Sauvignon The Core simply sings of crème de cassis, blackberry pie and blueberry compote with wafts of Indian spices, incense, menthol and dark chocolate plus wafts of black olives and coffee beans. Medium to full-bodied, the palate is built like a brick house with a firm line of grainy tannins and oodles of freshness supporting the vibrant fruits, finishing with a compelling herbal lift.

Saturated bright, deep ruby. Pristine aromas of black cherry, blueberry, mint and minerals, lifted by a violet topnote. Dense, rich and deep but youthfully backward, with no easy sweetness to the powerful, slightly medicinal flavors of black fruits, menthol and minerals. Much more closed today than the basic cabernet but at least as fine-grained. Finishes with firm-edged tannins that will require at least several years of cellaring.
