The 2015 Chablis le Vendangeurs Masque comes from purchased fruit, biodynamic of course, from the titular winemaker—someone the de Moors have been working with for 15 years. This is the third release of this label. It has a tightly wound, quite resinous and waxy bouquet that demands more coaxing from the glass compared to the Bourgogne Chitry. The palate is well balanced with a fine line of acidity, flecks of orange zest and dried apricot, a pleasant waxiness to the texture and just the right amount of salinity to beckon you back for another sip. Everything here is quite understated and subtle—one of the most intellectual Bourgogne Blancs that you will find.
