The 2021 Cabernet Sauvignon Walla Walla Valley is fabulous stuff, and it certainly makes the most of the vintage. Based on 100% Cabernet Sauvignon from the Pepper Bridge, Seven Hills, and Summit View vineyards, its deep purple hue is followed by a beautiful array of ripe currants, blueberries, leafy herbs, tobacco, and a Pauillac-like lead pencil character. Medium to full-bodied on the palate, it brings lots of tannins, a seamless, layered mouthfeel, and a great finish. It's going to take 2-4 years in the cellar for this to round into form, and it should evolve gracefully over the following two decades. It's a stunning wine.

The 2021 Walla Walla Valley Cabernet Sauvignon, sourced from the vineyards of Pepperbridge, Seven Hills and Summitview, displays a magenta core. Initially, the nose presents a kiss of volatility, with alcohol emanating from the glass. Upon rigorous swirling, the aromas open up to layers of black cherry liqueur, crème de cassis and chocolate-covered cherries. With its generous and broad-shouldered character, this Cabernet is open and accessible, showcasing a full-bodied, firmly tannic profile with expressions of bitter dark chocolate on the palate. The wine offers a hedonistic experience that may benefit from an extra chill and decanting. Perhaps it will improve with additional time in the cellar, allowing the tannic grip to settle, but hopefully not before the fruit condition declines. I see this being better the first 10-12 years of its life.
