The 2012 Chardonnay (Sparkling) Alder Springs Vineyard is striking. Texturally inviting and alluring, the 2012 boasts superb nuance and pure class. Dried pear, lemon confit, chalk, dried flowers and chamomile are all beautifully delineated in the glass. But what stands out most is what is always so hard to achieve with sparkling wine: an elegant mousse. The Alder Springs has that, and so much more. The long, creamy finish makes it impossible to resist a second taste, and then a third. Dosage is 2 grams/liter.
