A medium pink color, the NV Champagne Grand Cru Bouzy Les Terres Roses XX Extra Brut is based on the 2020 vintage and spent 10 months on the lees in fût, followed by 30 months in the crayères. The blend is 64% Chardonnay and 36% Pinot Noir, with 5% of that Bouzy rouge. The nose is fruity and inviting, and the wine speaks to the ease and delightful fruit of the 2020 vintage, with its fruity and floral character, medium body, and refined Pinot Noir mousse. The mousse has a delicate peppery spice that enhances the prettiness and floral quality of the fruit, with cherry blossoms and delicate pastry notes. Drink 2025-2035. I love where this is now, and although it should have no problem drinking well for another ten years, why wait?

Paillard's NV Bouzy Grand Cru Les Terres Roses XIX, a rosé Champagne composed of 64% Chardonnay and 36% Pinot Noir, includes 6% red wine (from 2018) sourced from the lieu-dit Les Mignottes in Bouzy. Based on the 2019 vintage, it was disgorged in May 2023 without dosage (though it retains 1.5 grams of residual sugar). The wine wafts from the glass with a beautiful bouquet of wild strawberry, red apple, cowberry and brioche. On the palate, it's full-bodied, pillowy and textural, with a crisp core of red fruit, succulent but racy acidity and gently phenolic grip, concluding with a precise, lingering finish.
Composed of 65% Chardonnay and the rest Pinot Noir, the NV Champagne Grand Cru Bouzy Les Terres Roses (5% red wine) pours a bright pale pink hue and reveals aromatics of ripe strawberry, fresh bread dough, and candied roses. Juicy and inviting, with a fluffy mousse, it’s full-bodied and has a clean, supple, fruity texture. It’s fresh and savory on the palate, with salty lift and a note of orange zest that leaves a mouthwatering finish. Drink 2024-2040. One gram per liter dosage.

It is fragrant with juicy red fruit and floral perfume, including ripe strawberry, apricot, and marzipan. It is dry though fruit-forward, with ripe raspberry filling the palate, nectarine, and wet stone, a rounded mousse, and a clean finish. This is another verry charming and elegant wine from Pierre Paillard to drink over the next 10 or more years. Disgorged November 2021.
