The 2021 Cuvée Les Demoiselles is composed of 80% Mourvèdre and 20% Syrah. It opens with flinty, meaty tones that give way to scents of blackcurrants, blueberries, licorice, garrigue and floral tinges. The full-bodied palate is elegantly styled with graphite-laced blue fruit, a frame of dusty tannins, focused acidity and a long, ethereal finish. It's developing a bit more slowly than the other 2021s from L'Aventure and will reward several years in the cellar.

Bloody black and blue fruits, iron, ground black pepper, and assorted meaty notes all emerge from the 2021 Les Demoiselles, a blend of 80% Mourvèdre and 20% Syrah. Aged 14 months in 28% new French oak, it has remarkable purity, full-bodied richness, and a tight, inward style that's going to benefit from 2-4 years of bottle age. It's a gorgeous wine that really shows gamey, wild side of the variety.

I loved the 2021 Les Demoiselles. This rich, blue-fruited, peppery, meaty red has full-bodied richness, a pure, layered, elegant mouthfeel, and a great finish. As with the 2020, it's a brilliant wine that should have 10-15 years of prime drinking. I was able to look at the 2020s and 2021s from L’Aventure, both solid vintages. In fact, they might have made some of the best wines in Paso in 2020, and the wines are impressive across the board.

The 2021 Les Demoiselles, dominated by Mourvèdre, is pure seduction, mixing cherry sauce and crushed raspberries with nuances of rosemary and cedary spice. Undeniable elegance is on display, energetic yet silky smooth, with depths of tart red berry fruits elevated by a core of zesty acidity. Rosy inner florals swirl across a staining of baking spice and licorice as pillowy tannins add subtle form through the exceptionally long finale.
