From a site across from Cade's estate vineyard, Bevan's 2021 Cabernet Sauvignon Sentinel Ridge is a complex, concentrated effort. Scents of mocha and roasted meat are joined by hints of pine or rosemary and backed by copious amounts of black cherries. Full-bodied and richly tannic but ripe, with a dense, velvety texture and lingering finish, this should be put aside for at least a few years, but it will age well for two decades or so.

The 2021 Cabernet Sauvignon Sentinel Ridge is an outrageously beautiful wine and one of the highlights in this range. Dark red cherry, plum, gravel, spice, chocolate and incense build in the glass, framed by plush, silky tannins that wrap it all together. The marriage of opulent fruit and supporting structure makes for a compelling Cabernet that delivers the goods.
From a site on Howell Mountain, the 2021 Cabernet Sauvignon Sentinel Ridge sports a dense purple hue to go with terrific aromatics of ripe black cherries, blueberries, scorched earth, and leafy herbs. A full-bodied, concentrated, tannic mountain Cabernet, it has terrific concentration, lots of building yet fine-grained tannins, a good sense of freshness, and outstanding length. It picks up a more wild, floral, foresty style with air and will benefit from 4-5 years in the cellar. I wouldn't be surprised to see it still drinking well on its 30th birthday.
The 2021 Cabernet Sauvignon Sentinel Ridge is a dense, voluminous wine. There's plenty of Howell Mountain power, but also a ton of fruit. This is an especially opulent, full-throttle wine, but it all works. Blackberry jam, chocolate, cloves, licorice and incense build into the huge finish.
