This Blanc de Blancs Vieilles Vignes is the polar opposite of the Cuvée Louis Salmon 2007 Blanc de Blancs from Billecart-Salmon tasted recently . It's fully mature and rather rich and round. Pretty satisfying for current drinking, especially if you don't like your champagne too austere. Rather gastronomic, it could withstand pairing with dishes as rich as veal with a creamy morel sauce. Rather luxurious in a slightly old-fashioned and very French way. Pre nouvelle cuisine! (JR)
