Moderately saturated medium red. Aromas of redcurrant, plum and cherry complicated by cedary cigar box and warm mulch nuances; shows some balsamic development but still short of oxidative. A silky, moderately sweet wine with red fruit and soil flavors framed by adequate acidity. The skinniest and least sweet wine of this Chimney Rock. Again, there's more acidity than tannins to hold the fruit and give shape to the wine. A reasonably well balanced midweight with moderate flavor interest. Shows slightly drying tannins with air, as well as a touch of sourness.

The garnet-colored 2001 Cabernet Sauvignon exhibits copious aromas of roasted herbs, coffee beans, damp earth, plums and black currants, and an evolved, elegant style. The most mature and advanced of this impressive quartet, it should be enjoyed over the next 7-8 years. Tel. (800) 257-2641; Fax (707) 257-2036
