Tasting notes
(14.2% alcohol): Good full red-ruby. Sexy, inviting aromas of plum, tobacco, truffle and mocha. At once sweet and savory in the mouth, with plum, redcurrant and spice flavors complicated by classic Stags Leap earth, underbrush and herb elements. Firm tannins are supported by the wine's mid-palate material. This is a touch tough on the back end but is still evolving.

Chimney Rock’s 2004 Cabernet Sauvignon reveals an evolved, fully mature bouquet of loamy soil, black currants, graphite and underbrush. The flavors are slightly fresher and more vibrant than the mature aromatics found in this medium to full-bodied, well-made, attractive, fleshy wine. With lots of glycerin, fruit and sweet tannin, it can be drunk now and over the next 7-10 years. Tel. (847) 604-8900
