(blended with 2% petit verdot) Deep ruby. Brooding but pure aromas of cassis, blackberry, minerals, licorice and bitter chocolate. Tightly wound and very primary; in fact, this is even more backward today than the regular 2007 cabernet. Finishes with chewy tannins that will require at least several years of aging.

Proprietor Kevin Carriker has retained Mark Harold as his wine consultant, and together they have fashioned a limited production 2007 Cabernet Sauvignon Special K that is slightly more backward than the regular cuvee. It represents a slightly different blend whereas the regular Cabernet includes 5% Cabernet Franc and 3% Malbec. The opaque purple-colored Cabernet Sauvignon Special K exhibits notes of graphite, blackberries, blueberries, and flowers. With substantial tannin, density, and richness as well as an attractive underlying suppleness, it should shed some of its tannin over the next year or so, and drink well for 10-15 years thereafter.
