Tasting notes
BFD is a reference to the fact that this is a blend of To Kalon vineyard blocks B (old-vine clone 337), F (young-vine clone 337) and D (clone 6). Fermented on skins for 2–3 weeks in small tanks. Matured 20 months in French oak barrel. Unfined. Unfiltered. Deep purple. Really oaky – sweet vanilla and heavy toastiness with deep black fruit. Oak perfume with a bit of violet hiding underneath. High and tight acidity and grippy tannin. Very long finish. (SCJ)

The 2021 Cabernet Sauvignon Beckstoffer To Kalon BFD comes from the B, F, and D blocks (although there might be another hidden meaning in the name) and it's a darker, more structured, mineral-driven beauty. Black fruits, black olives, chocolate, and crushed stone all flow to a full-bodied, concentrated Cabernet Sauvignon that needs air to show at its best. It's a beautiful, serious wine that should be hidden in the cellar for 5-7 years, and it's going to keep for 2-3 decades if well stored.
The 2021 Cabernet Sauvignon Beckstoffer To Kalon BFD is one of the most savory, aromatically intense wines I have tasted from this famous ranch. Dried herbs, leather, cedar and tobacco give the BFD a distinctly old-school profile. Deep and layered, with sublime balance, the 2021 has so much to recommend it. This is an especially mid-weight, refined wine from To Kalon. Today, the fruit is a bit in the background.
Named for the blocks it originates from, Tor's 2021 Cabernet Sauvignon Beckstoffer To Kalon Vineyard BFD ratchets up the intensity over the regular To Kalon bottling, delivering oodles of black cherries and loamy earth. There's incredible texture here, with the wine being full-bodied, supple and rich, with a long finish that's creamy and lush, with an enticing hint of licorice as well.
