A subsidiary label from Odette, Adaptation has produced an easy-drinking 2021 Cabernet Sauvignon, featuring scents of cedar bark and charry oak framing notes of cassis and redcurrants. It's medium to full-bodied, supple, ripe and creamy-textured, finishing with softly dusty tannins and bright red berries. A blend of 77% Cabernet Sauvignon, 22% Merlot and 1% Malbec, it matured 18 months in 50% new French oak (with the balance being in second-use barrels). It's a solid value in the context of Napa Valley Cabernet.
The 2021 Cabernet Sauvignon Adaptation is a blend of seven different vineyards across the valley, from mountain sites and valley floor sites. Savory and floral notes lead into a core of dark red/purplish fruit. This bold, savory Cabernet Sauvignon packs a pretty serious punch with its mid-weight frame. Best of all, this is a terrific wine for the money.
