A fascinating and alluring nose adds to high-toned sweet corn and herbs (in fresh and distilled form) a distinct, mouthwatering evocation of sweet-saline, mineral-laden raw scallop. A full, oily-rich palate is palpably lees-enriched and faintly marked by lanolin and resin from barrel, but chiefly informed by luscious sweet corn and a salivary-gland-milking reprise of scallop. Sizzle of corn shoot, ginger and lime zest invigorate on a gripping finish strikingly transparent to stony underpinnings. Let’s hope none of this is lost getting into bottle early in 2019!
