The rage of organic wines includes a NV Fino Piedra Luenga, a young unfortified Fino produced with Pedro Ximénez aged in old American oak casks for two years. It's pale, young, fresh and easy to drink, combining notes of white fruit and flowers with some nutty and toasty aromas and flavors. It's velvety and has a faint bitterness in the finish. Like the rest of the range, it comes in half-liter bottles. I tasted a bottle from 2024.

Certified organic (CAAE, Ecocert). Unfortified Pedro Ximénez fino. Spontaneous fermentation and aged in a two-year solera system of 500-litre American oak barrels. From a family-owned estate. Smells of dried nettle tea leaves, dried dandelion leaf and dried pineapple. And liquorice. So much liquorice on the salty, sea-spray-etched palate. It tastes like brine-pickled gordal olives, capers, fleshy olive oil – practically glistening with rock salt and golden-green oil! Furrowed with intensity and yet under that fierce maritime-Mediterranean grip there is almost richly vinous fruit and vinous viscosity. A wine that tastes as if it's been scooped from the goblet of a rock-pool goddess. I'm slightly embarrassed to say it, but it was addictively good with freshly made, salted popcorn. Super-cool that it's available by box – that's how I'd buy it!  VGV (TC)

Organic Pedro Ximénez. Fino style without fortification. Bakery notes, pungent, tasty. As a Fino, it shows some maturity. The acetaldehyde is very marked. Quite fine, elegant, pleasant and very dry. It is a delicate and complete Fino. It may not be the most complex, but it is easy and drinkable. (FC)
