The bright straw-colored NV Champagne Grand Cru Bouzy Les Parcelles XXI Extra Brut is based on the 2021 vintage. I love the clarity here – the wine is pure and inviting with very nice balance. It shows more elegance in its fruit, and it’s vinous without weight, with refreshing, focused acidity. The palate is more focused and medium-bodied, with red raspberries, fresh grapefruit, delicate toast, fresh almond, and a touch of savory earth. The texture is silky and the palate fabulous and focused, with a pinpoint mousse and an elegance to its length and balance. A gorgeous edition of this wine, any lovers of this estate will not want to sleep on it. Tasted a second time in New York, the oak was more pronounced but still well integrated. It’s deep and long on the palate, with intensity and richness, its black cherry fruit and toast shining brightly. (It’s outstanding with cheese.) Made from 80% Pinot Noir and the rest Chardonnay, this wine was barrel fermented and aged on the lees for 30 months, with 3 grams per liter dosage. Disgorged in April 2025. Drink 2025-2040.

Paillard’s NV Bouzy Grand Cru Les Parcelles XX hails from the 2020 vintage and, in keeping with the tradition, incorporates 20% reserve wines. It embodies the signature blend of 80% Pinot Noir and 20% Chardonnay, sourced exclusively from the sun-drenched, south-facing slopes of Bouzy. The bouquet is expressive, unfolding with aromas of pear, ripe citrus and warm spices, mingling with nuances of toasted bread and orange zest. On the palate, it is medium- to full-bodied, showcasing a livelier, more luminous fruit profile than its predecessor, driven by racy acidity and finishing with a pronounced saline finish. True to the estate’s approach, maturation take place in 350-liter oak barrels, with the final cuvée composed from a mosaic of approximately 25 distinct parcels across Bouzy. The dosage is set at two grams per liter.

Made from 80% Pinot and 20% Chardonnay, with the base 2019 and the rest reserve wine from the past couple of years, the NV Champagne Grand Cru Bouzy Les Parcelles is expressive and fruit-forward on opening, with notes of cherry blossom, fresh peach, and honeycomb. With zero grams per liter dosage, there’s no lacking for ripeness and freshness. Long on the palate and quite inviting, it’s going to be wonderful drinking over the coming 8-10 years.

The NV Champagne Grand Cru Les Parcelles Bouzy Extra Brut is 70% Pinot Noir with the remainder Chardonnay, with the base wine coming from the 2017 vintage. It reveals very attractive aromas of toasted brioche, raspberry, lavender, and black cherry, and it is dry and inviting, with pure red fruits that fill the palate, with its florality lasting long after the finish, with a cleansing lift of salinity. This beautiful wine is deceptively easy drinking now. Disgorged July 2021. Drink 2022-2032.
