The must weight here wasn’t much higher than for this year’s Spätlesen, but there was around 25% botrytis. “Usually it wouldn’t be advisable to try for Auslese in this site because you lose acidity too quickly here,” observes Hexamer, but this year’s concentration of botrytis on top of excellent acid retention suited such a wine. Quince, pear and purple plum preserves pull in a syrupy direction on a glycerol-rich palate, leading to a lingering, unexpectedly focused finish that gains welcome counterpoint from incisive fresh ginger, piquant fruit pit, lime zest and smoky black tea.
