Medium to deep garnet-purple colored, the 2007 Cade Estate Cabernet Sauvignon is a little reticent to begin, opening out to wonderfully vibrant black cherry coulis, raspberry pie and crème de cassis notes plus nuances of tobacco, bay leaves, dried lavender and lilacs plus a waft of spice box. Full-bodied, rich and decadently fruited, it has tons of spicy black berry preserves layers and a velvety frame, finishing with epic length. Wow!

(includes 14% merlot): Dark, opaque ruby. Subdued but pure nose hints at cassis, espresso, bitter chocolate and nutty oak, nicely lifted by a floral topnote. Sweet and seamless in the mouth; less obviously fruity than the 2008 model but smooth and long, with the violet character carrying through to the lingering, ripely tannic finish.
The 2007 Cabernet Sauvignon Howell Mountain, a blend of estate and non-estate fruit (from mountain vineyards such Ink Grade, Outpost, True, and Pestoni), is closed at present, but it appears to be loaded with potential. Abundant notes of cassis, black raspberry and blackberry fruit intermixed with notions of chocolate, cocoa, and bay leaf are followed by a structured, tannic, medium to full-bodied wine that needs some time in the bottle. Give this well-built, masculine Cabernet Sauvignon 4-5 years of cellaring, and consume it over the following two decades.
