The 2021 In the Hills is savory to the core, bursting from the glass with a smoky mix of bacon fat and crushed rocks, flowery underbrush and olive-tinged blackberries. This opens with a pretty inner sweetness, as ripe black fruits and inner violet tones contrast with salty minerals over a stream of brisk acidity. It tapers off long and tactile in feel, with crunchy tannins and a lingering sage resonance. There's tremendous depth and complexity here, yet cellaring will be necessary to truly reap the rewards. Wow, this is the total package.

The 2021 Syrah In The Hills is one of the more exotic releases in the lineup. Based on 96% Syrah and 4% Viognier, it has perfumed red, blue, and black fruits interwoven with spring flowers, peach (no doubt from the Viognier), spiced meats, and incense nuances. With medium to full-bodied richness and depth as well as supple tannins and a good spine of acidity, it's already impossible to resist yet should cruise in cold cellars over the coming 15 years. You could easily mistake this for a top Côte Rôtie in a blind lineup.
