Fully destemmed and allowed to warm up a bit before going into a concrete tank for fermentation with ambient yeasts and no additional temperature control. A combination of pumpovers and punchdowns are used with a goal of only moderate extraction. Spends between 30 and 36 months in 500-litre used French oak. Bottled unfined and unfiltered. Aromas of plum and plum skin, dried herbs and flowers. Flavours of dried flowers, blackcurrant, cherry, dried and fresh herbs swirl and shimmer on the palate. Gorgeous acidity and ethereal tannins. Long and persistent in the mouth, like a gymnast at full extension on the balance beam. Deeply impressive. (AY)

The 2016 Cabernet Sauvignon Peter Martin Ray Vineyard will thrill lovers of old-school California Cabernet. Bold, savory and super-expressive, the 2016 is also a fabulous expression of Santa Cruz Mountains Cabernet. Sage, menthol, blackberry, olive tapenade, game and licorice are some of the many notes that run through the 2016. Classic in build and yet quite rich, the 2016 is shaping up to be a jewel of a wine. This is a tremendous showing from Ceritas.

Created in 2005 by John Raytek, Ceritas is one of California’s most exciting producers. The project is focused on making single-site wines from Northern California’s coastal regions, largely Pinot Noir and Chardonnay.
