Many people in Burgundy believe Serafin is producing the finest wines in Gevrey-Chambertin. He continues to lower his yields, and while he never did much filtering, in 1990 he decided to eliminate it. His 1990s are all concentrated, backward, dense wines that will require some patience. The Gevrey-Chambertin actually comes from the premier cru vineyard Les Corbeaux, but he did not register his holdings in time for the name to appear on the label. In 1991 the words Les Corbeaux will be included in the wine's name. The softest wine of his 1990 offerings, this dark-colored wine exhibits a sweet perfume of black fruits and damp earth. In the mouth, it is medium-bodied, with gorgeous fruit extraction, soft tannins, and a moderately long, round finish. Drink it over the next 5-6 years.
