From near the top of Atlas Peak, Au Sommet's 2021 Cabernet Sauvignon is a rather aromatic, restrained rendering of the grape, in keeping with winemaker Heidi Barrett's stylistic tendencies. Cassis and black cherries join in harmoniously on the nose alongside hints of cedar, vanilla and mocha. It's comfortably medium-bodied and streamlined but marked on the palate by a velvety mouthfeel and a lingering finish dusted with fine-grained tannins.

The 2021 Au Sommet is a classy, elegant wine, and also one of the most restrained Cabernets readers will find on Atlas Peak. Blood orange, mint, exotic spice and dried flowers add nuance to a host of dark red fruit flavors. Medium in body and driving, the 2021 is wonderfully vibrant from beginning to end. The long, translucent finish rounds things out in style. Give this a few years to soften.
