Fruit from a single vineyard. South facing so cooler, first selection of fruit. No sulphites are added to the juice (until a little bit just before bottling). Spontaneous fermentation in burgundy barrels, 25% new. Natural malo. Just under a year on gross lees in barrel with occasional stirring. Light filtration. Rich and ghee buttery and packed with bold, exuberant flavours: clementine and hazelnuts and poached pears with liquorice. Bold acidity running circles around the fruit. Really chewy and wholesome and yummy. And very persistent. (TC)
