The solera for this Palo Cortado was created in 1955, with the wine averaging between 40 and 50 years in age. It is made with pure Pedro Ximénez, sourced from higher-altitude vineyards in Sierra de Montilla and Moriles Alto. This is a very elegant wine, with the nose combining soft, yeasty hints with richer oxidative tones. Lighter-bodied than the Oloroso, it glides on the palate, with savoury, bready intensity and an intense saltiness alongside more nutty notes. Finer textured and with an earthy, almost rocky, mineral character, and sourdough chew, this is bone-dry, with a praline-edged long finish. 22% alcohol and less than 5g/l residual sugar. Only 250 bottles were produced of this release, drawn from the solera in 2024.

The 1955 range (which is a fictional number and not a vintage year) has a new bottling from November 2024 of the NV 1955 Palo Cortado Solera Cincuentenario. It's a very old wine bottled at 22% alcohol, 7.9 grams of acidity (tartaric) and 4.16 grams of sugar, but it comes through as bone dry; it's only the concentration through old age. This is quite shy, a little closed and certainly not as expressive as the Amontillado from this same range. There is finesse and complexity, combining power with elegance and notes of old wine with the energy of a younger one. It's subtle rather than powerful. This is the saca 1/2024, with 306 bottles. It should last forever.
