Even better, the 2016 Cabernet Sauvignon is built for the long-haul, revealing a deep purple color as well as full-bodied notes of gravelly earth, bouquet garni, chocolate, and ample dark fruits. Concentrated, beautifully balanced, and with a great mid-palate, it packs plenty of power while staying elegant and seamless. It’s a beautiful wine any way you look at it. Based on 76% Cabernet Sauvignon, 23% Cabernet Franc, and 2% Petit Verdot, made by Andy Erickson, it’s going to benefit from 2-4 years of bottle age and keep for two decades. There are only 545 cases.

The 2016 Cabernet Sauvignon is a bold, powerful wine loaded with super-ripe dark cherry, chocolate, spice and licorice flavors. Last year, I had hoped the 2016 would come together a bit more in bottle, but that has not happened, at least not yet. Today there is an element of grittiness in the tannins that is hard to get past. The 2016 is a blend mostly of Cabernet Sauvignon from the estate and Cabernet Franc from Hudson. I am not sure that combination works.

A blend of 76% Cabernet Sauvignon, 23% Cabernet Franc and 2% Petit Verdot, the deep garnet-purple colored 2016 MMXVI Cabernet Sauvignon gives up gregarious notions of warm red and black currants, black raspberries and warm plums with hints of chocolate mint, pencil shavings and tilled loam plus a waft of lilacs. Full-bodied, firm and grainy, the palate is built like a brick house with super ripe, super firm tannins and bags of bold, expressive, multifaceted fruit, finishing very long and mineral-laced. 545 cases were made.

The 2016 Cabernet Sauvignon is a powerful, beautifully delineated wine that is going to need a few years in bottle to be at its most expressive. Floral, spice and savory notes add nuance to this intriguing Cabernet Sauvignon from Cervantes. Readers should plan on cellaring the 2016 for at least a year or two. My impression is that I caught the 2016 in a slightly awkward stage, especially considering how well the 2015 showed in this tasting.
