The 2008 Gevrey-Chambertin Aux Combottes dazzles for its vibrant red fruit. Sweet floral, spiced notes add complexity as the wine opens up in the glass. This is a totally impeccable, harmonious Burgundy with tons of Gevrey character. Anticipated maturity: 2016-2026. This is a beautiful set of wines from Dujac. The harvest started on September 10 and ended on the 17th. Jeremy Seysses told me he wanted to pick on the early side in order to preserve freshness. In a similar vein, Seysses kept the fermentations short and gentle to avoid over-extracting. I also tasted a handful of 2008s, which are beautiful wines that are true to type and site. In 2008 the estate finished its conversion to fully organic farming originally started in 2001. Dujac fans have a lot to look forward to in these two vintages. Good deep red. Slightly high-toned aroma of kirsch seems a bit youthfully imploded today, even austere. Juicy, tight and savory, with just enough sweetness and structure to give it some early appeal. Quite folded in on itself but obviously boasts very good energy and lift. Still, this shows less flesh and sweetness today than the Gruenchers. The pure finish features building tannins. Two thousand eight is a long-term vintage, similar to 1993, noted Jeremy Seysses; the wines' energy and firm acidity contribute to the impression of strong tannins.
(malo done but not yet sulfited) Bright red-ruby. Slightly reduced aromas of musky red fruits, spices and minerals; I might have picked this as Chambolle. Then broad and silky in the mouth but at the same time juicy and energetic, with enticing perfume to its raspberry, floral and spice flavors. Finishes with firm but essentially gentle tannins.
