Winemaker Dominic Völk is the kind of genius who manages to extract the full potential of all the estate’s sites, but the Pergentsknopp just gets nose and palate ahead with a magnificent fragrance of warm hay, fennel, aniseed and generous yellow fruit, and that’s before you get to the salty essence of minerality that makes the taste buds tremble.
