Full bottle 1,658 g. South Downs in Sussex. 81% Pinot Noir, 13% Chardonnay, 6% Pinot Meunier, 100% estate-grown grapes. A portion of the Pinot Noir is barrel-aged red wine. More than two years sur lattes. Disgorged 23 July 2021. pH 3.16, TA 6.1 g/l, dosage 5.3 g/l. Masses of fresh, ripe raspberry fruit beautifully balanced by meaty density and a tangy yet comforting breadth that reminds me a bit of rhubarb compote on challah toast. There's great substance and interest here – you could even pair this with rare beef or beef carpaccio without a problem. (TC)
