Clones P58, 95. 13- to 56-year-old vines planted on grey silty clay loam. Dry-grown. Vertical shoot positioning. Hand-picked, whole-bunch pressed. 12 hours' settling, no enzymes added. Barrel-fermented in 228-litre barriques with selected yeast. No malolactic conversion. Aged 10 months in barrel. Filtered. TA 6.7 g/l, pH 2.97. Limey citrus and cedar-herbal notes. Rounded and so smooth on the palate, even with such high acidity (look at the pH!). Deep, intense, mouth-watering and incredibly long. A meal in itself, yet utterly drinkable. (JH)

'2021 was a beautiful vintage in Yarra Valley', says Sarah Crowe. 'Possibly my favourite vintage since I've been in the Yarra. All varieties looked great.' Chardonnay is 10% barrel-fermented. A mix of spontaneous fermentation and inoculation, 25% new French oak. They usually prevent malo. Tasted from a 37.5-cl bottle. Wreath of smoke on the nose. Origami acidity. Crunchy nashi pear, then pineapple and grapefruit, pomelo. Slight mealy, roast-potato-skin note. Gentle grip on the end. Pomelo-peel fragrance on the finish. A wine that fills the back, starts from the back, back-fills towards the tip of the tongue. Which makes you think; and it makes your throat sing. (TC)

A full and layered white with sliced apples, lemon rind and honey character. It’s fresh and so flavorful. Terrific length. Drink now or hold.
